1 cup pineapple juice
3 tablespoons pure maple syrup
1 tablespoon fresh lemon juice
1 cinnamon stick
1/2 cup heavy cream
1 cup dark rum

Steps:

  • In a small saucepan, bring the pineapple juice, 2 T maple syrup, lemon juice and the cinnamon stick to a boil. Lower the heat and simmer for 5 minutes; remove from the heat.
  • Meanwhile, in a medium bowl, beat the cream with the remaining 1 T maple syrup until soft peaks form.
  • Divide the pineapple-maple mixture among 4 small teacups or mugs. Discard the cinnamon stick.
  • Add 1/4 cup rum to each cup; top with the maple whipped cream.

4 ounces chilled pineapple juice
Splash of soda water
Nutmeg
Pineapple chunk, for garnish

Steps:

  • Fill a highball glass with ice and add rum, pineapple juice and soda. Grate a little nutmeg on top and garnish with a chunk of pineapple.

4 fresh pineapple spears (about 8 ounces)
1/2 cup packed brown sugar
2 tablespoons dark rum
3/4 teaspoon ground ginger
4 teaspoons butter, cut into small pieces
2 scoops vanilla ice cream or low-fat frozen yogurt
4 gingersnap cookies, crushed

Steps:

  • Preheat oven to 425°. Place pineapple in 1-qt. baking dish. In a small bowl, combine the brown sugar, rum and ginger; spoon over pineapple. Dot with butter. , Bake, uncovered, until pineapple is lightly browned and sauce is bubbly, 8-10 minutes. Place ice cream in 2 dessert dishes; top with pineapple and sauce. Serve immediately with crushed cookies.

I have been making this Rum Toddy for many years. This is good on cold days, a cold or a sore throat. I am not suggesting it is a cure, but it is tasty.

3 ounces dark rum (or to suit taste)
4 tablespoons liquid honey
3 tablespoons fresh lemon juice
1/2 piece lemon rind
1/16 teaspoon freshly grated nutmeg
1 -4 inch cinnamon stick (whole)
6 -8 ounces boiling water

Steps:

  • To a large heavy duty cup or glass, add rum, honey, lemon juice, 1/2 lemon rind, and nutmeg. Stand cinnamon stick in the cup.
  • Pour the boiling water and stir well to blend.
  • Adjust honey to suit your sweetness and adjust lemon juice to suit your taste.
  • Sip slowly and enjoy.
