Number Of Ingredients 6

3 cups cooked long-grain brown rice
2 cups whole milk
3 tablespoons maple syrup
1/4 cup chopped toasted almonds
1/4 cup golden raisins
Pinch of ground nutmeg or cinnamon

Steps:

  • In a medium pot, combine rice, milk, and maple syrup over medium-high. Bring to a boil and cook, stirring occasionally, until thickened slightly, 3 minutes. Divide among four bowls and top with almonds and raisins. Serve with nutmeg or cinnamon.

2 cups water
1 cup long- or short-grain brown rice
2 cups nonfat milk
1/3 cup sugar
1/2 teaspoon grated orange peel
2 teaspoons vanilla extract
1/4 cup dried mango or dried apricots
2 tablespoons sweetened flaked coconut, lightly toasted

Steps:

  • Bring 2 cups water to boil in heavy medium saucepan. Add rice. Reduce heat; cover and simmer until rice is tender and water is absorbed, about 50 minutes. (Rice can be prepared 1 day ahead. Cover and refrigerate.)
  • Mix milk into rice in heavy medium saucepan. Boil until mixture is thick, stirring occasionally, about 5 minutes. Reduce heat to medium. Add sugar and orange peel and cook until flavors blend, stirring frequently, about 5 minutes longer. Remove saucepan from heat. Mix in vanilla extract. Spoon cereal into bowls. Top with dried mango and toasted coconut and serve.

1 cup milk
1 tablespoon margarine
1/4 cup raisins (optional) or 1/4 cup dates (optional)
1 dash salt
1 dash cinnamon

Steps:

  • In a medium sized saucepan, combine the rice, milk, margarine, and salt. Add the raisins too, if you're using them. Stir the mixture mover medium heat until it is heated through, and he margarne is melted. Simmer for a minute or two to thicken. Serve immediately, while it is hot.
  • Cooked wheat or bulgur may replace the rice, if desired.

1/4 cup arrowhead mills organic gluten free rice & shine hot cereal (sold at local health food stores like Whole Foods)
1 1/2 cups one percent milk (any fat percentage is fine)
1 banana
1 teaspoon brown sugar
salt (optional)
milk, for pouring (optional)

Steps:

  • In a saucepan, combine Rice & Shine and milk. Bring to a low boil, uncovered, on medium high heat. Watch carefully because the casein in the milk will make it boil over and burn rapidly. Simmer on low for five minutes with lid ajar. Stir occasionally to prevent sticking.
  • Meanwhile, mash or slice banana in a cereal bowl (slicing gives more texture, but mashing distributes the banana flavor better). Stir brown sugar into banana.
  • Pour hot cereal over banana mixture and stir until combined. Add a sprinkle of salt, and stir in more milk if desired. Note: The directions on the box are different than these directions. I have made it both ways and I like this version better.
