  • Stir the apple juice, pineapple juice, and cranberry juice together with the brown sugar in a large pan. Place the cinnamon sticks, cloves, and ground allspice into a large teaball or cheesecloth bag. Place the spice bag into the pan with the juice mixture. Heat the juice mixture over medium-high heat about 10 minutes. Serve hot.

1/2 cup sugar

  • Place the cinnamon sticks, cloves, allspice and lemon peel in a double thickness of cheesecloth; bring up corners of cloth and tie with kitchen string to form a bag., In a large kettle, combine the grape juice, pineapple juice, lemonade concentrate and sugar; add the spice bag. Bring to a boil. Reduce heat; simmer, uncovered, for 1 hour or until punch reaches desired temperature. Discard spice bag. Serve hot with additional cinnamon sticks if desired.

Steps:

This version, spiked with cognac and infused with citrus and nutmeg, is exactly what you want to serve at a party once the temperature drops outside. If you're feeling flamboyant, you can flambé it, to the great amusement of your guests. Just make sure to use a fireproof bowl; silver or another metal is ideal, wood or even tempered glass is not. But even if you don't set it on fire, it's a rich, soothing and powerful libation. Serve it in small cups for the most civilized gathering.

4 to 5 lemons
1 tangerine, tangelo or other thick-skinned, small citrus fruit
3/4 cup Demerara sugar
1 1/4 cups amber or aged rum
1 1/4 cups Jamaican rum (preferably 100-proof)
1 cup cognac
Freshly grated nutmeg, as needed

Steps:

  • Using a vegetable peeler, remove the zest of 2 lemons and the tangerine in strips. Drop into a large heatproof bowl (or use a fireproof bowl if you plan to set the punch on fire) and combine with sugar. Muddle together with a muddler, pestle or the back of a wooden spoon. Let mixture sit for at least 3 hours to infuse (or infuse overnight).
  • Halve the tangerine and squeeze juice into a measuring cup. Halve lemons and squeeze lemon juice into the measuring cup to make 3/4 cup juice in total. (Save any unsqueezed lemon halves for another purpose.)
  • When ready to serve, bring 1 quart water to a boil. Pour rum and cognac into the bowl with the sugar and peels. If you want to flame the punch, do so now; see note below.
  • Add reserved citrus juice and boiling water and stir well. Grate nutmeg over top of punch and ladle into glasses.

1/2 qt brandy ( i like apricot brandy)
1/2 qt light rum
3-6 whole oranges
1 small bag whole cloves

  • 1. Simmer mixture with 3 sticks whole cinnamon to melt--DO NOT COOK. Allow to cool, pour into punch bowl. Separately stick whole cloves around entire surface of 3 to 6 whole oranges. Place oranges into baking pan with 1/2 inch of water, and bake at 350° for 45 minutes. Place oranges into punch bowl Serves 40
  • 2. Serve with pound cake, nut cake, or cheese and crackers.

2l apple juice
2 tsp vanilla extract
6 scoops vanilla ice cream
dark rum (optional)

Steps:

  • Put the cinnamon, ground cloves, nutmeg, apple juice and vanilla extract in a large saucepan. Bring to a gentle simmer.
  • When the apple juice has warmed through, add the vanilla ice cream and whisk vigorously with a balloon whisk until melted and combined with the hot apple juice - the ice cream should make a frothy top on the juice.
  • Pour a splash of dark rum into the bottom of the adults' cups and top up with the hot punch. Garnish with Apple crisps.

4 cups apple cider
1 (12 ounce) can apricot nectar

1/4 inch piece peeled fresh ginger, thinly sliced
3 slices orange peel
3 slices lemon peel
2 -6 tablespoons brown sugar
1 cup rum
4 tablespoons butter

Steps:

  • In large pan combine cranberry juice, cider, nectar, spices, orange and lemon peel.
  • Bring to boil, reduce heat and simmer, uncovered 20-30 minutes.
  • Remove from heat, strain through a fine-mesh strainer lined with cheesecloth.
  • Taste punch and sweeten accordingly. Apple Cider and Cranberry Juice vary greatly in sweetness - you may need no sugar, or you may need a little more than listed.
  • Add rum and butter, stirring until butter melts. Or, if having a non-alcoholic alternative is desirable, hold off on adding the rum to the entire punch and add 1 to 2 tbsp of rum to each mug, then fill to the rim with hot punch.

We make this every Christmas, and it's a favorite with friends and family. Sometimes I vary the juices - you can use cranberry instead of cherry, or cranapple juice instead of apple cider.

2 qt apple cider
1 qt cherry cider or juice
2 juice oranges
4 cinnamon sticks
1 tsp whole cloves

Steps:

  • 1. Mix together the ciders/juices in a large kettle over medium heat.
  • 2. Peel the zest off one orange in large strips. Place zest, cinnamon sticks, and cloves in a double square of cheesecloth, and tie tightly. Place spice bag into the cider mixture.
  • 3. Heat the cider to serving temperature - like hot coffee or tea (do not boil). Barely simmer the punch for about 15 minutes.
  • 4. Juice the orange and add the juice to the cider. Halve and slice the remaining orange and float the slices on top of the hot punch. Serve hot with an orange slice and cinnamon stick if desired.
