  • To serve, Heat a cup of water per serving (or milk, for a creamier taste.) Stir in 2 to 3 heaping teaspoons of cocoa mixture.

1 1/2 cups chocolate cookie crumbs (about 6 1/2 ounces)
6 tablespoons unsalted butter, melted
3 tablespoons sugar
2 tablespoons Kahlua
1 quart chocolate ice cream
1 pint coffee ice cream
4 tablespoons Kahlua
4 to 6 heath bars, crushed in food processor or with mallet
8 ounces of chopped semisweet chocolate
2 tablespoons, plus 1 teaspoon butter
1/2 cup sugar
1/2 cup heavy cream
1/4 cup hot water
1 teaspoon vanilla
Pinch of salt

Steps:

  • Preheat oven to 350 degrees. Mix all ingredients in medium bowl. Press crust mixture onto bottom of 9-inch spring form pan with 2 3/4 inches high on the sides. Bake crust until firm, about 8 minutes. Transfer pan to rack and cool crust completely.
  • Mix ice cream, kahlua in large bowl. Mix in heath bars, saving several tablespoons for garnish. Pour ice cream into crust, smooth top, freeze until firm, about four hours. Can be prepared 2 days ahead covered.
  • Using small knife cut around side of pan to loosen torte. Remove pan sides, sprinkle saved crushed heath bar on top. Let torte stand 3 to 5 minutes. Cut into wedges and serve with hot fudge sauce.
  • Combine chopped dark chocolate with butter, sugar, heavy cream, and hot water. Melt mixture stirring, at low heat for five minutes. Remove from heat, add vanilla and salt and serve warm.

2 tablespoons instant espresso coffee powder
1 tablespoon sugar (or equivalent sugar substitute)
2 teaspoons irish cream (or coffee liqueur)
125 ml skim milk (extra for froth)

Steps:

  • In a small saucepan, whisk the milk, cocoa, coffee and sugar (or substitute) until combined.
  • Heat on medium, whisking occasionally for about 5 minutes or until it just comes to a simmer.
  • Remove pan from heat and stir in the Irish Cream or Coffee Liqueur.

  • In a large saucepan, heat cream over medium heat until bubbles form around sides of pan (do not boil). Remove from the heat; whisk in the chocolates, nutella, liqueur, espresso powder and salt until smooth. Return to the heat; cook and stir until heated through. 50g pitted prunes
2 tsp instant coffee
50g soft butter
50g icing sugar
1 large egg
50g ground almonds
2 tbsp cocoa
1 tbsp self-raising flour
4 scoops coffee or vanilla ice cream , to serve (optional)
4 tsp coffee liqueur , to serve (optional)

Steps:

  • Measure the milk in a large jug, then blend with the prunes and coffee in a food processor until smooth. Add the butter, sugar, egg, almonds, cocoa, flour and a pinch of salt, then blitz again to make a thick batter.
  • Scrape evenly and cleanly (don't take the mixture up the sides) into 4 x 175ml ramekins (don't use any with metal on them!). Cook in the microwave, spaced round the edge of the turntable, on Medium for 6 mins. The puddings will still look a bit moist, but that's fine. Stand for 5 mins, then serve topped with a scoop of ice cream and a little liqueur, if you like.

1/4 cup coarsely ground coffee beans
1 1/3 cups sugar
1 cup light corn syrup

4 ounces unsweetened chocolate, finely chopped
1/4 cup (1/2 stick) unsalted butter, diced
2 teaspoons vanilla extract

Steps:

  • Sift cocoa into medium bowl. Bring cream and ground coffee to boil in heavy small saucepan, stirring to blend. Remove from heat; cover and steep 10 minutes. Strain cream through fine sieve into another bowl, pressing on coffee grounds to release as much cream as possible.
  • Bring sugar, corn syrup, 1/4 cup water, and coffee-flavored cream to boil in medium saucepan, whisking until sugar dissolves. Boil 1 minute, brushing down sides of pan with wet pastry brush. Remove from heat. Whisk in chocolate, butter, and vanilla. Pour 1/4 of chocolate mixture into cocoa to moisten, then add remaining chocolate mixture, whisking until sauce is smooth and shiny. 1 1/4 cups whole milk
1 cup sugar
9 large egg yolks plus 3 large egg whites, room temperature
5 ounces semisweet chocolate, chopped (1 cup)
1 3/4 cups heavy cream
1 tablespoon coffee extract, such as Trablit
FOR THE HOT MILK FOAM:
3 cups whole milk or heavy cream
1 tablespoon unsweetened Dutch-process cocoa powder, for dusting

Steps:

  • Make the semifreddo: Heatmilk and 1/4 cup sugar in a mediumsaucepan over mediumheat until it just begins to boil.Meanwhile, whisk 1/4 cup sugarwith the egg yolks in a bowl.
  • Slowly pour hot milk mixtureinto yolk mixture, whisking constantly.Return entire mixtureto saucepan, and heat until mixtureis thick and coats the backof a spoon, about 3 minutes.
