TEXAS HOT WIENER SAUCE

While living in the Mid-Hudson Valley of NY I fell in love with this style of hot dog, particularly the sauce. My wife was born there and she loved them as well. When we moved to Texas it was a surprise to find, 'There is no such thing as hot wiener sauce in Texas.' I did a lot of research and found the recipe is a closely guarded secret that I had to crack. After years of experimenting I finally created the same experience we only had back in NY. Serve on your favorite hot dog with brown mustard, diced onion, in a steamed hot dog bun. This sauce will be thin, it is supposed to be, it is not a 'chili dog' recipe. The sauce will thicken as it cools. It freezes well.

6 cups water
½ pound all-beef hot dogs, ground
¼ cup white vinegar
1 tablespoon paprika
1 tablespoon chili powder
1 teaspoon sea salt, or more to taste
1 teaspoon red pepper flakes
½ teaspoon onion powder
½ teaspoon dried oregano
½ teaspoon ground cinnamon
¼ teaspoon ground white pepper
¼ teaspoon dried thyme leaves
2 grinds freshly ground black pepper, or more to taste
½ cup cornstarch
¼ cup cold water, or as needed

Steps:

  • Stir water, ground hot dogs, vinegar, paprika, chili powder, sea salt, red pepper flakes, onion powder, oregano, cinnamon, white pepper, thyme, and black pepper together in a large stockpot; bring to a boil, reduce heat to medium-low, and simmer for 45 minutes.
  • Stir cornstarch with just enough cold water to dissolve completely; stream into the hot dog mixture while stirring. Continue to cook, stirring frequently, until the sauce has thickened slightly, about 15 minutes more. Adjust salt and pepper to taste before serving.

1 Tbsp. vegetable oil
1 lbs. 85% lean ground beef
1 onion, chopped fine
3 Tbsp. tomato paste
1 Tbsp. chili powder
1 tsp. brown sugar
1/4 tsp. ground allslpice
2 cuos chili sauce
1 cup water
1/4 cup hot sauce (adjust to taste) Franks is our choice
2 Tbsp. Worchershire sauce
2 Tbsp. yellow mustard.

Steps:

  • Heat oil in skillet over medium high heat until shimmering. Add the beef and onion and cook until beef is no longer pink, about 5 minutes. Stir in tomato paste, chili powder, brown sugar and allspice, and cook until paste begins to darken about 2 minutes. Add chili sauce and water and bring to a boil. Reduce heat to medium-low and simmer until mixture is thickened. About 7 minutes. Transfer half of mixture to food processor and process until coarsely ground; return to skillet. Stir in hot sauce, Worcestershire and mustard. Serve.

1 (6 oz) can tomato paste
4 tomato paste cans of water
1/2 cup ketchup
1 TB Worcestershire
2 TB Heinz 57 Sauce
1 TB chili powder
1 1/2 tsp cumin powder
1/2 tsp garlic salt
1/4 cup white vinegar
2 TB cornstarch

Steps:

  • Put all ingredients, as listed, into blender. Blend high speed, 1/2 a-minute or till smooth. Pour into 2 1/2-qt saucepan & cook, stirring constantly, medium heat, till thickened & smooth, & comes to the 1st bubble of a boil! Remove from heat at once. Cool & funnel into bottle with tight-fitting cap. Keep refrigerated to use in 6 weeks. Freeze to thaw & use in 1 year. Makes about 5 cups sauce. Add a pinch of Cajun-- Cajun Seasoning: Combine 1/2 teaspoon garlic salt, 1/2 teaspoon ground white pepper, 1/2 teaspoon ground red pepper, 1/2 teaspoon ground black pepper, and 1/4 teaspoon dry mustard. ALABAMA CHILI - Michigan Style: 1 1/2 lbs ground round 2 TB oil 1 envelope onion soup mix 6-oz can tomato paste 2 tomato paste cans water 2 cups Pete's Sauce (above) 2 cans(10-oz each) Chili Beef Soup 14-oz can stewed tomatoes 1-lb can undrained kidney beans In roomy skillet, brown ground round in the oil, crumbling with fork till pink color disappears. Remove from^heat. Turn into 4-qt kettle or saucepan and add all other ingredients. Stir frequently & cook on med-low heat, so it won t scorch. Serve piping hot. (Don't ever let it boil or it will burn!) Keep leftovers tightly covered & refrigerated to rewarm in a week. Freeze in small portions to thaw & rewarm in 90 days.

Yield 12 servings (10 cups potato mixture).

6 medium Yukon Gold potatoes (about 3 pounds), halved and thinly sliced
3 large sweet red peppers, thinly sliced
3 large onions, halved and thinly sliced
1/3 cup olive oil
6 garlic cloves, minced
3 teaspoons salt
1-1/2 teaspoons pepper
12 bun-length beef hot dogs
12 hot dog buns, split

Steps:

  • In a large bowl, combine potatoes, red peppers and onions. In a small bowl, mix oil, garlic, salt and pepper; add to potato mixture and toss to coat., Transfer to two 13x9-in. disposable foil pans; cover with foil. Place pans on grill rack over medium heat; cook, covered, 30-35 minutes or until potatoes are tender. Remove from heat., Grill hot dogs, covered, over medium heat 7-9 minutes or until heated through, turning occasionally. Place buns on grill, cut side down; grill until lightly toasted. Place hot dogs and potato mixture in buns. Serve with remaining potato mixture.
