Hot Date with a Chicken image

A date, apricot, and cayenne pepper stuffing fills these baked chicken breasts.

¼ cup dates, pitted and chopped
1 small apple - peeled, cored, and chopped
2 tablespoons chopped dried apricots
2 tablespoons raisins
1 tablespoon grated orange zest
1 tablespoon orange juice
¼ teaspoon cayenne pepper
¼ teaspoon ground cardamom
¼ teaspoon ground mace
2 (6 ounce) skinless, boneless chicken breast halves
2 tablespoons vegetable oil

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C).
  • Combine the dates, apple, apricots, raisins, orange zest, and orange juice in a small bowl. Season with cayenne pepper, cardamom, and mace; mix well.
  • Place the chicken breasts between two sheets of heavy plastic (resealable freezer bags work well) on a solid, level surface. Firmly pound the chicken with the smooth side of a meat mallet to a thickness of about 1/4 inch. Mound the fruit filling on the flattened breasts and roll up, tucking in the ends. Secure the chicken with toothpicks.
  • Heat the vegetable oil in an oven proof skillet over medium-high heat. Add the chicken breasts, and cook until browned on all sides, about 5 minutes. Place in the preheated oven, and continue cooking the chicken breasts until the filling is hot and the juices run clear, 20 to 25 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

Set the mood with this warm drink spiced with nutmeg, cinnamon and ginger.

4 cups milk
7 teaspoons unsulphured molasses
1/4 teaspoon freshly grated nutmeg
1/2 teaspoon ground cinnamon
Pinch of ground ginger
1/4 teaspoon ground allspice
Pinch of coarse salt
14 dates, pitted

Steps:

  • In a medium saucepan, heat milk, molasses, spices, and salt over medium heat for 5 to 6 minutes. Remove from heat.
  • Chop dates in a blender as finely as possible. Add about 1 cup milk mixture; blend, scraping down sides to be sure all dates have been pureed.
  • Strain date mixture through a fine sieve back into pan; whisk over medium heat until well combined. Divide among four cups, and serve immediately.

Butterscotch Sauce:
1/4 cup unsalted butter
1/2 cup packed dark brown sugar
1/2 cup heavy cream
1/2 teaspoon flaky sea salt
1 1/2 teaspoons

1 Tbs unsalted butter
3 tablespoons light brown sugar, packed
2 tablespoons water
Large pinch of kosher salt

  • Cake: Butterscotch Sauce: Melt butter in a medium heavy-bottomed saucepan over medium heat Add the sugar, cream and salt and whisk until well blended. Bring to a very gentle boil and cook for about five minutes, whisking occasionally. Remove from heat and add one teaspoon of the vanilla extract Taste the sauce to see if you want to add additional pinches or salt or splashes of vanilla. Pecans: Lightly toast pecans in the oven (~30 minutes at 250?) Put the brown sugar, water, butter and kosher salt in a heavy, preferably non-stick, skillet. Bring to boil, stirring for 1 minute before adding the nuts. Stir and toss until the nuts are thoroughly coated with a glaze, about 3 minutes. If they start to smoke, take them off before they burn. Transfer nuts to sheet of foil or parchment paper and quickly separate with forks. Dates:
