4 medium cucumbers, peeled and thinly sliced
1 medium onion, sliced
2 teaspoons salt
1/2 cup heavy cream
2 tablespoons vinegar
1/4 teaspoon salt
1/8 teaspoon pepper

Steps:

  • In a large bowl, combine cucumbers, onion, and salt. Let stand at room temperature about 1 hour.
  • Drain well.
  • Combine cream, vinegar, salt and pepper, add to cucumber/onion mixture, and stir.
  • Chill several hours before serving.

½ teaspoon white vinegar

  • In a bowl, mix the mayonnaise, milk, sugar, and vinegar until smooth. Place cucumber slices in the bowl, and toss to coat with the dressing. Season with salt and pepper. Chill 30 minutes in the refrigerator before serving.

1 medium onion, sliced
2 cups water
1/2 teaspoon salt
3/4 cup heavy whipping cream
1/4 cup sugar
1/4 cup cider vinegar
Minced fresh parsley, optional

  • In a bowl, combine cucumbers, onion, water and salt. Let stand for 1 hour; drain and rinse. In a serving bowl, beat cream, sugar and vinegar. Add cucumbers and onion; toss gently. Sprinkle with parsley if desired.

This is such a yummy blend of cucumbers and onions in a sweet creamy sauce. When I was young my Grandma would make this for me all the time. That was over 30 years ago. It is a wonderful go to recipe for those hot summer days when you don't want to cook. I prefer using Vadalia onions, but any yellow onion will do. I try not to use too big of cucumber (diameter) because there are too many seeds. I have even substituted splenda for the sugar and light miracle whip with good results. (However, the juice doesn't flavor as long with the splenda). Finally, the cook time is the refrigerator marinate time. I hope you enjoy.

3 -4 large cucumbers
1 large yellow onion
1 cup Miracle Whip
1/2 cup sugar
1/4 cup white vinegar
1/4 teaspoon salt (or to taste) (optional)
1/4 teaspoon pepper (or to taste) (optional)

Steps:

  • Peel and slice cucumber and onions thinly. The best results are even slices. I use a mandolin for this step.
  • Place sliced cucumber and onions in a medium bowl that has a lid.
  • In a small bowl mix together the Miracle Whip, sugar, vinegar. Add salt and pepper if using. Pour over top of the cucumbers/onions. Place the lid on the bowl and give it a shake or two.
  • Marinate 6 hours or overnight in the refrigerator.
  • Do not add more liquid. Juice will keep for a long time. Just keep adding onions and cucumber as they get low until you no longer get the wonderful flavor on the cucumbers. Then it is time for a new batch.

1/4 teaspoon pepper

1 tablespoon olive oil
2 cucumbers, peeled, seeded, and cut into 2 " strips (1 pound)
1 tablespoon white wine vinegar
2 tablespoons heavy cream
1 1/2 tablespoons snipped fresh dill
salt and pepper, to taste

Steps:

  • In a heavy skillet, cook garlic in oil over low heat, stirring, until it begins to color.
  • Add cucumbers and cook over medium heat, stirring, until cucumbers are tender and wilted.
  • Stir in vinegar and cream and cook, stirring, for 3 minutes or until thickened slightly.
  • Remove from heat and stir in dill, and salt and pepper to taste.
