These simple sandwiches are reminiscent of a lazy summer cookout - but doable on a weeknight. Though slow cookers are often associated with winter, they're great in hot weather because they don't heat up the kitchen like ovens do. For this recipe, there is no need to add liquid to the pot before cooking, because the chicken will release moisture as it cooks. If you have a lot of liquid remaining when the chicken is done, that's absolutely fine; just incorporate it into the shredded chicken. But if you have a little extra time, before you shred the chicken or add the honey, remove the chicken to a bowl with tongs, pour the juices into a small saucepan, and simmer until the juices are reduced by half to intensify flavor and thicken the sauce. After that, simply pick the recipe back up at Step 3.

1 tablespoon vegetable oil
2 teaspoons red-pepper flakes, plus more to taste

1/4 cup honey
2 teaspoons cider vinegar, plus more to taste
2 heaping cups shredded green cabbage (about 8 ounces or ¼ medium green cabbage)

  • In a 6- to 8-quart slow cooker, combine the chicken, oil, 1 teaspoon red-pepper flakes, 1 teaspoon garlic powder, the onion powder, sweet paprika and smoked paprikas.   • Using two forks, finely shred the chicken with its cooking liquid. Pour in the spiced honey and the cider vinegar and toss to coat. Taste; it may need a little more salt, to sharpen the flavor. Also add more red-pepper flakes and vinegar, if you like.
  • In a medium bowl, combine the cabbage, mayonnaise, scallions and lemon juice; season the slaw to taste with salt and pepper.
  • Toast the buns, then spread with mayonnaise and a few shakes of hot sauce. Mound the chicken on the bottom buns and top with the slaw.

1 teaspoon chili powder, 1/3 palm full

1/2 cup, 4 ounces, cayenne pepper sauce, preferred brand Frank's Red Hot
Bib or leaf lettuce leaves
4 crusty rolls, split
2 cups sour cream

8 ribs celery, cut into sticks
2 large carrots, peeled and cut into sticks

Steps:

  • Heat a large nonstick skillet over medium high heat. Season chicken with salt, pepper, paprika and chili powder. Drizzle breast with a little extra virgin olive oil to coat. Pan grill chicken breasts 5 minutes on each side.
  • Heat a metal or oven safe glass bowl over low heat and melt butter in the bowl. Add hot sauce to the butter and combine. When the chicken breasts are done, remove from pan and add to the bowl and coat evenly with hot sauce mixture.
  • Place chicken breasts on bun bottoms and top with crisp lettuce. Combine sour cream, scallions and blue cheese and slather bun tops with blue cheese sour cream. Affix bun tops on sandwiches and serve with remaining sauce for dipping your veggies. Arrange Buffalo Chicken Sandwiches on dinner plates with red onion, celery and carrot sticks.

1 tbsp Wondra quick mixing flour (this is a wonderful secret to thicken sauces and gravy without it being lumpy)

  • 1. Place chicken undrained in cooker. Break up the chunks to shred. 2. Add chicken broth to cover and bring to a low boil and continue to break up chicken and stir often. 3.   • Boil the chickens until done, and let cool. When the chicken meat is completely cool to the touch, pick the chicken meat from the bones; set aside. Reserve a little of the broth for later.

1 cup buttermilk
1 egg
1 tablespoon Dijon mustard
Four 4-ounce cube steaks
2 cups canola oil
2 tablespoons cayenne
2 teaspoons dark brown sugar
1/2 teaspoon paprika
1/4 teaspoon garlic powder
4 kaiser buns
2 tablespoons mayonnaise
Bread-and-butter pickles
Bamboo sandwich skewers

Steps:

  • Preheat the oven to 200 degrees F.
  • For the steak: Combine the flour, garlic powder, cayenne, and 2 teaspoons each of salt and pepper in a medium bowl; whisk to blend. In a second medium bowl, whisk together the buttermilk, egg and mustard.
  • Sprinkle the steaks on both sides with salt and pepper, then dredge in the flour mixture; dust off any excess. Now dip the steaks into the egg mixture; shake off any excess before returning the steaks to the flour mixture a second time; again, shake off any extra flour. Place the steaks on a wire rack set over a baking sheet. Let sit for 10 minutes to allow the breading to form a dry crust.
  • Meanwhile, in a 12-inch cast-iron skillet over medium heat, heat the canola oil to 350 degrees F, or until it begins to ripple in the center. Add the steaks and cook until golden brown on the bottom, about 2 minutes. Flip, and cook another 2 minutes. Remove to a wire rack set over a baking sheet and keep warm in the oven. Do not discard the frying oil.
  • For the sauce: Wisk together the cayenne, brown sugar, paprika and garlic powder. Slowly pour in 1/3 cup of the hot frying oil. Whisk until well combined.
  • For the sandwich: Spread the bottom of each kaiser bun with mayonnaise. Add a steak, some sauce, and then some pickles. Secure the bun top with two skewers. Slice in half and serve.
  • EAT CAREFULLY!!! This is HOT chicken-fried steak!

1/2 c sliced fresh mushrooms
2 tsp all purpose flour
2/3 c water
1 tsp chicken bouillon granules
1/2 c cooked chicken, skinned and chopped
4 slice whole wheat bread, toasted

Steps:

  • 1. Coat a skillet with cooking spray, and add butter; place over medium-high heat until butter melts.
  • 2. Add mushrooms, and cook 3 to 4 minutes or until tender, stirring often. Sprinkle flour over mushrooms, stirring well.
  • 3. Add water and bouillon granules; cook, stirring constantly, 2 minutes or until mixture is thickened.
  • 4. Reduce heat to low; add chicken to mixture, and simmer 2 to 3 minutes or until chicken is thoroughly heated. Spoon chicken mixture evenly over toast slices.
