4 chicken breasts
1½ cups flour
2 cups panko breadcrumbs
2 tsp smoked paprika
2 tsp dried oregano
1 tsp dried thyme
1 tsp garlic powder
2 tsp salt
1 tsp pepper
2 eggs
2 tbsp oil ((optional))

Steps:

  • Slice boneless, skinless chicken breasts into strips.
  • Place the flour and half of the seasoning in one bowl and mix well. Whisk the eggs into another bowl. Finally, mix the panko breadcrumbs with the remaining spices in another bowl.
  • Coat the chicken first in the flour, then in the egg and finally in the breadcrumbs.
  • Place the chicken in an Airfryer. Drizzle or spray with olive oil (optional).
  • Set the temperature to 200ºC/390ºF and cook for 10 minutes.
  • After 10 minutes, turn the chicken fingers over and cook for another 3-5 minutes until crisp and golden. If you don't have an Airfryer, these chicken fingers can be baked at 220ºC until crisp and golden or fried in vegetable oil.
  • Remove the chicken fingers once cooked and serve with lemon wedges and dipping sauces of your choice.

1 teaspoon salt
1/2 teaspoon freshly ground black pepper
1 cup Gold Medal™ all-purpose flour
1/2 cup buttermilk
1 teaspoon Frank's™ RedHot™ Original cayenne pepper sauce
2 cups vegetable oil
3 tablespoons butter
1 teaspoon paprika
1/2 to 1 teaspoon ground red pepper (cayenne)
1/4 teaspoon garlic powder

Steps:

  • Season chicken tenders with 1/2 teaspoon of the salt and 1/4 teaspoon of the pepper.
  • In shallow bowl, mix flour, remaining 1/2 teaspoon salt and remaining 1/4 teaspoon pepper with whisk. In another shallow bowl, beat buttermilk and hot sauce together with whisk. Dredge chicken tenders in seasoned flour, then in buttermilk mixture, and back in flour.
  • In 12-inch skillet, heat oil over medium-high heat until hot (350°F). Fry tenders in hot oil, all at once, about 5 minutes, turning once, until deep golden brown and no longer pink in center (at least 165°F). Place on rack lined with paper towels to drain, with paper towels underneath rack.
  • In 1-quart saucepan, melt butter over medium-low heat. Beat in paprika, red pepper and garlic powder with whisk. Brush fried chicken tenders with spicy butter. Serve with slices of white bread and sweet pickles, if desired.

2-1/2 cups all-purpose flour
3 Tbsp. cornstarch
1 Tbsp. onion powder
1 Tbsp. coarse salt
1 Tbsp. smoked paprika
2 tsp. cayenne pepper
2 tsp. black pepper
1/2 tsp. garlic powder
2 cups buttermilk
1/3 cup hot sauce
4 cups vegetable, canola or peanut oil, for frying
1/3 cup cayenne pepper
1-1/2 Tbsp. brown sugar
1 tsp. chili powder
1 tsp. garlic powder
1 tsp. smoked paprika
White bread
Sliced pickles

Steps:

  • In a large bowl, whisk flour, cornstarch, salt, paprika, cayenne pepper, black pepper, garlic powder and onion powder.
  • In a separate large bowl, whisk buttermilk and hot sauce. Set aside.
  • Dip each chicken piece into flour mixture, then into buttermilk, then back into flour. Thoroughly coat each piece. Once finished coating chicken, and let it sit on a baking sheet for 15-20 minutes, until coating has set.
  • While coating sets, add 2 inches vegetable oil to a heavy bottom skillet or pot. Set to medium-high heat.
  • Flick a bit of flour into the oil. If it begins to sizzle and fry golden brown, the oil is ready.
  • Carefully drop in 4 tenders at a time. Fry about 2-3 minutes on each side. Do not overcrowd the pan.
  • Use tongs to remove chicken from oil. Place on paper towels or a wire rack to drain.
  • Once chicken is fried, whisk 1 cup of the frying oil you used to fry the chicken, cayenne pepper, brown sugar, chili powder, garlic powder, and smoked paprika until well blended.
  • Brush the mixture all over the hot chicken tenders.
  • To serve, place hot chicken over white bread. Serve with pickles on toothpicks.

¼ cup all-purpose flour

If you've never had Nashville Hot Chicken, we're talking about an ultra-crispy fried chicken doused with a cayenne-infused glaze, and by 'glaze' I mean melted butter and lard. For the record, I've never been to Nashville, so I can't tell you how authentic this is, but it works for me, and is fairly easy to pull off.

1 whole chicken, cut into 8 pieces
1 tablespoon kosher salt
1 cup buttermilk
¼ cup pickle brine
2 tablespoons Louisiana-style hot sauce
1 large egg
2 cups all-purpose flour
2 teaspoons fine table salt
¼ cup butter
¼ cup lard
2 tablespoons cayenne pepper
1 tablespoon packed light brown sugar
1 teaspoon paprika
½ teaspoon garlic powder
½ teaspoon kosher salt
½ teaspoon freshly ground black pepper
1 cup vegetable oil for frying, or as needed

Steps:

  • Toss chicken pieces with 1 tablespoon kosher salt. Transfer chicken to a bowl; cover and refrigerate overnight.
  • Whisk buttermilk, pickle brine, hot sauce, and egg together in a mixing bowl. Pour marinade over chicken and stir to ensure each piece is thoroughly coated. Cover and let chicken marinate in refrigerator 2 to 4 hours.
  • Mix flour and salt together in a shallow flat dish. Remove chicken from marinade and blot with paper towels. Reserve marinade. Toss chicken in flour until thoroughly coated. Return chicken to marinade, coating all sides; remove chicken from marinade allowing excess to drip back into the bowl. Coat the chicken once again in flour mixture. Place on a rack. Repeat with all chicken pieces. Allow to sit out about 15 minutes to allow coating to dry out a bit.
  • Place butter and lard in a large pot. Add cayenne pepper, brown sugar, paprika, garlic powder, kosher salt, and black pepper. Place over medium-high heat. Cook and stir until fats melt. Remove from heat; keep sauce warm.
  • Fill cast iron skillet about 1/3 of the way with vegetable oil. Heat oil to 350 degrees F over medium-high heat. Carefully place chicken into hot oil, skin side down. Maintain an oil temperature of 325 degrees F, adjusting heat as need. Fry until instant read thermometer reads 160 degrees F, 8 to 10 minutes per side.
  • Transfer chicken to a rack to drain. Brush with the sauce on both sides.
