AWESOME CHEESY HOT CRAB DIP
I got this recipe from a Southern Living Magazine a couple of years ago. It was an instant favorite, and I get so many requests for the recipe that I figured I would make it easy on myself and just post it. I usually use more Old Bay, Tabasco, and scallions than it says, cause I like a little extra kick. It really is AWESOME, especially with crusty french bread.

Steps:
- Blend cream cheese and mayo until creamy.
- Add lemon juice, Tabasco, and scallions; mix.
- Add old bay, salt, pepper and crab meat; mix.
- Put in baking dish and top with parmesan cheese.
- Bake at 350 degrees for 30 to 40 minutes, until cheese starts to brown.
- Can be refrigerated up to 24 hours before cooking.

- Preheat the oven to 325 degrees F (165 degrees C).
- Combine cream cheese, 1/2 cup Parmesan cheese, hot sauce, seafood seasoning, garlic powder, and black pepper in a bowl; stir to combine.
- Drain crab; pick out and discard any shells. Add crab to cream cheese mixture, along with bell peppers and onion; mix thoroughly. Transfer into a baking dish and sprinkle with remaining Parmesan.
- Bake in the preheated oven until bubbly, about 20 minutes. Turn on the broiler and broil until the top is a nice golden brown color, about 5 minutes.

- Heat oven to 350°F.
- Mix reduced-fat cream cheese and mayo until blended.
- Reserve 1 Tbsp. each shredded cheese and onions for garnish. Add remaining shredded cheese, onions and crabmeat to cream cheese mixture; mix well. Spread onto bottom of 1-qt. baking dish sprayed with cooking spray.
- Bake 15 min., stirring after 10 min. Garnish with reserved shredded cheese and onions.

HOT CHEESY SPINACH AND CRAB DIP

- 1. Melt the butter in a pan. 2. Add the garlic and saute until fragrant, about 30 seconds. 3. Add the white wine and spinach and heat until the spinach wilts, about 1-2 minutes. 4. Process the spinach, cream cheese, sour cream, crab, chili sauce, salt and pepper in a food processor until nice and mixed. 5. Mix in the parmigiano reggiano, mozzarella, cheddar cheese and green onion. 6. Place the mixture into a baking dish. 7. - Heat oven to 350°F.
- Melt butter in a large skillet over medium-high heat. Add shallot and cook until softened, about 3 to 4 min. Add garlic and cook until fragrant, about 1 min. Whisk in the Neufchatel in increments until smooth; remove from heat. Add the shredded cheese in handfuls and stir to blend. Stir in the milk, lemon juice, crabmeat and 2 Tbsp. of the chopped parsley. Pour into a 1-1/2-qt. casserole
- Mix together the panko, the remaining 2 Tbsp. parsley and the paprika. Sprinkle on top of dip.
- Bake 20 min., until bubbly and hot. Serve with the crackers.
