GINA'S BUTTERSCOTCH SUNDAE

1 pint high quality butter pecan ice cream
Butterscotch Sauce, recipe follows
1 cup chopped toffee bars (recommended: Heath bar)
Whipped cream, for garnish
Maraschino cherry, for garnish
1 cup light brown sugar
1/2 cup corn syrup
1 stick unsalted butter
2 tablespoons bourbon
1 teaspoon vanilla extract

Steps:

  • Scoop ice cream into sundae glasses. Top with warm Butterscotch Sauce, chopped toffee, whipped cream, and a cherry.
  • In a small heavy bottomed saucepan, add the brown sugar, corn syrup, and butter and cook over medium low heat, stirring, until sugar dissolves. Add bourbon and vanilla extract, stirring well.

Make your own homemade Butterscotch Sundae Sauce with this super easy recipe. Only 5 simple ingredients and no candy thermometer required.

1/3 cup unsalted butter
3/4 packed dark brown sugar
1/2 teaspoon course salt
2/3 cup whipping cream
2 teaspoons vanilla

Steps:

  • In a medium sized, heavy-bottom saucepan melt the butter over medium heat. When melted, stir in the brown sugar til it's starting to dissolve. Then add in the salt & and whipping cream and stir until dissolved.
  • Bring the mixture to a slow, gentle, rumbling boil and allow to bubble for approximately 5 minutes while stirring occasionally to ensure the mixture isn't burning. Remove the pan from the heat and stir in the vanilla.
  • Serve warm over ice cream, or allow to cool completely and store in an airtight container in the fridge.

Take ice cream sundaes to the next level with a recipe for quick and easy homemade butterscotch sauce made with just five simple ingredients.

4 tablespoons unsalted butter
1/2 cup packed dark brown sugar
1 teaspoon large-flake salt
1/2 cup heavy cream
1 teaspoon vanilla extract

Steps:

  • Melt the butter in a medium heavy-bottomed saucepan (not non-stick) over medium heat.
  • Add the brown sugar, salt and heavy cream and stir the mixture with a rubber spatula until it's well blended. Bring the mixture to a boil, scraping down the sides occasionally, and boil it for 4 to 5 minutes.
  • Remove the mixture from the heat and stir in the vanilla extract. Transfer the butterscotch sauce to a container to cool. (See Kelly's Notes.)

  • Melt 1 stick of butter in a medium saucepan over medium heat. Whisk in 1 cup each dark brown sugar and heavy cream and 1 teaspoon kosher salt. Bring to a boil, then reduce the heat and simmer, stirring, until thickened, 5 to 10 minutes. Remove from the heat and stir in 1 teaspoon vanilla bean paste. Make sundaes with blondies, rum raisin ice cream, the butterscotch sauce and chopped cashews.

1 teaspoon kosher salt
1 teaspoon vanilla bean paste
Vanilla ice cream, for serving
Blondies, for serving
Chopped roasted salted cashews, for topping
Whipped cream, for serving

Steps:

  • In a medium saucepan, melt the butter over medium heat. Add the sugar, cream and salt and whisk until combined. Bring to a boil, then reduce the heat and simmer, stirring occasionally, until smooth and thickened, 5 to 10 minutes. Remove from the heat and stir in the vanilla bean paste; the sauce will thicken as it cools.
  • Scoop vanilla ice cream on top of the blondies, then top with the butterscotch sauce, cashews and whipped cream.
