HOT BUTTERED CIDER WITH RUM



Hot Buttered Cider with Rum image

This hot buttered cider with rum is festive and ideal for a crowd.

1 stick (½ cup) unsalted butter, softened
¼ cup dark brown sugar, packed
1½ teaspoons ground cinnamon
1 teaspoon ground nutmeg
¼ teaspoon ground cloves
⅛ teaspoon salt
Half-gallon (64 ounces) all natural apple cider
Rum (or apple brandy)
Cinnamon sticks (optional)

Steps:

  • In a medium bowl, combine the butter, brown sugar, cinnamon, nutmeg, cloves, and salt. Mash with a spoon until evenly combined.
  • Bring the apple cider to a simmer over medium heat in a large pot, then turn the heat down to low. Gradually add the butter mixture, whisking until the butter is melted.
  • Ladle the buttered cider into mugs. Top each drink off with a shot of rum and garnish with a cinnamon stick, if desired. Serve hot.

Steps:

  • Mix 1 stick softened butter, 1/4 cup light brown sugar and 1/2 teaspoon each ground nutmeg, cinnamon and cloves until combined. Put the butter on a piece of plastic wrap and roll into a 1-inch-thick log; wrap and chill 1 hour. Pour 3 cups apple cider into a slow cooker; cover and heat on high for 1 hour. Divide 1 cup bourbon among 6 glasses. Top each with hot cider and a slice of the spiced butter.
  • If you don't have a slow cooker, keep these drinks warm in a saucepan on the stovetop over low heat.

1/4 cup brown sugar
1 orange, halved
1/2 cup unsalted butter, softened
1 teaspoon pumpkin pie spice
4 ounces brandy, for adults

Steps:

  • In the sleeve of a slow cooker, combine the cider, brown sugar, and orange halves. Cook on low for 2 hours.
  • Stir together the butter and pumpkin pie spice in a small bowl. Cover and refrigerate until ready to use.
  • Pour the hot cider into mugs and top with a spoonful of the flavored butter. For adults, pour 1 ounce of brandy into each mug.

6 quarter-sized slices peeled fresh ginger
6 star anise
four cinnamon stick (3-inch-long, plus more for garnish)
1 teaspoon whole cloves
1 teaspoon fennel seed
1 teaspoon szechuan peppercorns
1 quart fresh apple cider
calvados (optional) or Applejack (optional)
8 tablespoons unsalted butter, cut into tablespoons

Steps:

  • Rinse out and squeeze out 12-inch square of cheesecloth. Wrap ginger, star anise, cinnamon, cloves, fennel seed, and Sichuan peppercorns in cheesecloth. Using piece of kitchen twine, tie into packet.
  • Pour cider into large nonreactive saucepan and add spice bundle. Bring to simmer over medium-low heat, stirring occasionally.
  • Ladle cider into warmed mugs. Add dry cinnamon stick to each mug and spike with Calvados or Applejack, if desired. Top each with pat of butter. Serve hot.

3 orange spice tea bags
½ cup light brown sugar
2 cups apple cider
1 ½ cups light rum
8 cinnamon sticks
3 teaspoons butter

Steps:

  • Pour water into a large saucepan and bring to a boil. Remove from heat and toss in the orange spice tea bags. Cover and let steep 5 minutes. Remove tea bags and stir in sugar, apple cider, rum, and 2 of the cinnamon sticks. Heat just to steaming -- do not boil.

1 vanilla bean, split
10 allspice berries
2 cloves
2 tablespoons butter
1/2 teaspoon cider vinegar
1/3 cup dark brown sugar
1 large cinnamon stick
14 pieces butter rum flavored Lifesavers candies (optional)

Steps:

  • Heat cider in a pot with cinnamon, allspice berries, cloves, and vanilla bean.
  • Add brown sugar and candies (if using) and stir until dissolved.
  • Keep mixture below a boil at just a light simmer.
  • Remove cinnamon stick after 15 to 30 minutes.
  • Add cider vinegar.

This spiced and hot rum buttered cider toddy is a wonderful drink throughout the cold winter months, and is perfect during the Festive Holiday Season as well. I use Scrumpy or local French Breton cloudy cider for this, which I believe is called Hard Cider in North America. Serve the hot rum buttered cider toddy in attractive warmed glasses and float a cinnamon stick on the top for that extra touch!

1 orange
8 cloves
750 ml organic strong cider
50 ml dark rum
2 cinnamon sticks
25 g butter
extra cinnamon stick (to garnish) (optional)

Steps:

  • Stud the orange with the cloves.
  • Gently melt the butter in a large saucepan before adding the cider; continue to heat the cider and butter for about 5 minutes, then add the clove-studded orange and the cinnamon sticks; heat gently for a further 5 minutes - do NOT allow it to come to the boil.
  • Add the rum and heat for a further minute or two, again do not allow the toddy to come to the boil.
  • Serve in warmed punch glasses or mugs, add a cinnamon stick to each glass if you wish.
  • You can add more cider, rum and butter to the pan with the spiced fruit, throughout the evening.

HOT BUTTERED BOURBON AND CIDER

3/4 cup bourbon
2 1/2 tablespoons fresh lemon juice
Ground nutmeg

Steps:

  • Bring first 5 ingredients to simmer in medium saucepan. Remove from heat; cover and let steep 15 minutes. Add 2 tablespoons chilled butter to saucepan; bring to simmer. Remove from heat. Stir in bourbon and lemon juice. Strain into large measuring cup. Divide hot cider among 4 mugs. Cut 1 tablespoon butter into 4 pieces. Add 1 piece to each mug. Sprinkle nutmeg over.
