FRIED CHICKEN BISCUITS WITH HOT HONEY BUTTER
This recipe for chicken biscuits could be a weeknight dinner with a side of greens, but it's made to travel, and perfectly suited for a picnic. The biscuit dough, adapted from Sam Sifton's all-purpose biscuit recipe, is lightly kneaded here, so it's not too tender to work in a sandwich. The chicken tenders, inspired by Masaharu Morimoto's katsu in the cookbook "Mastering the Art of Japanese Home Cooking," are pounded and coated in panko for plenty of crunch. Prepare both components the day you want to eat them, giving yourself at least one extra hour for everything to cool before you assemble, so the sandwich stays crisp. You can also cook well in advance, and assemble the sandwiches the next day. Either way, cooling the chicken completely, on a wire rack, is crucial. If you prefer breast meat over thigh, feel free to swap it in.

- Prepare the biscuits: In a bowl, use a fork to mix the flour, baking powder, sugar and salt. Add butter and use the fork to mash it into the flour until the mixture resembles large, lumpy crumbs. Stir in milk until a dough comes together.
- Flour your hands, then gently gather and knead the dough in the bowl for 2 to 3 minutes, or until it springs back slightly to the touch. (If the dough is sticky, sprinkle additional flour as needed.) Cover bowl loosely with plastic wrap and rest dough in fridge for half hour.
- Heat oven to 425 degrees. On a lightly floured surface, use a floured rolling pin to roll the dough to 1 to 1 1/2 inch thickness. Use a floured knife or round cutter to cut 6 biscuits, about 3 1/2 inches wide. Reroll the scraps and cut again as needed.
- Place biscuits on a baking sheet and bake for 15 to 20 minutes, or until they have puffed up and the tops are slightly golden. Let cool completely on a wired rack at room temperature. Transfer to an airtight container if not using until the next day.
- Prepare the chicken: Trim excess fat and any membranes from the meat, then lightly hammer the thickest parts of the thighs with a mallet or rolling pin. Season each side with salt.
- Mix flour, cayenne and salt in one wide bowl. Beat eggs in a second wide bowl, and place panko in a third. Dip each chicken thigh in flour, coating it all over and patting off the excess, then in egg, allowing extra egg to drip off, then in panko, making sure each thigh is entirely coated in bread crumbs, and using your hands to press loose crumbs into any places where they look scarce.
- In a large, heavy bottomed skillet, pour in oil to a 2-inch depth and heat to 350 degrees. Fry 2 thighs at a time, flipping them over every two minutes or so, until golden brown and crisp all over, about 8 minutes total. Transfer to a wire rack set over a paper towel-lined sheet pan and season lightly with salt. Let cool entirely at room temperature, at least 1 hour. At this point, you can assemble the sandwiches or transfer the rack to the fridge and leave the chicken uncovered overnight.
- Assemble the sandwiches: When both the chicken and biscuits have cooled (or the next day), mix together soft butter, honey and hot sauce until smooth. Cut open cooled biscuits, smear each cut side with honey butter, and sandwich with a piece of chicken. If traveling, loosely wrap each sandwich in a piece of parchment paper and pack side by side in a hard container, in a single layer, so the sandwiches aren't crushed. Serve with additional hot sauce and pickles on the side.

- Preheat the oven to 350 degrees F (175 degrees C). Place biscuits 1 inch apart on an ungreased baking sheet.

- Place chicken in a large, lidded bowl. Add milk and pickle juice. Cover and refrigerate for 4 hours.
- Preheat the oven to 350 degrees F (175 degrees C). Place biscuits 1 inch apart on an ungreased baking sheet.

- For the chicken: Whisk together the eggs, buttermilk and hot sauce in a shallow casserole dish.
- In a second shallow casserole dish, combine the flour, cornstarch, salt and pepper.
- Place the chicken cutlets into the flour mixture, coating evenly on each side and shaking off the excess. Then place the chicken into the egg wash, coating the pieces on both sides. Dredge the chicken a second time in flour and egg. (If you like, you can dredge a third time; the breading will be thicker with every coating.)
- Heat the shortening in a large cast-iron skillet over medium heat. Fry the breaded chicken until golden brown, about 2 minutes; flip and continue cooking until golden brown and cooked through, another 1 to 2 minutes. Transfer to a paper-towel-lined plate to drain.
- For the gravy: Melt the butter in a medium saucepan over medium-low heat. Add the flour and whisk until smooth. Cook until the mixture begins to turn golden brown, 3 to 5 minutes. Whisk in the milk and cook until thick and smooth, another 3 to 5 minutes. Season with salt and pepper.
- For the hot sauce: In a small bowl, mix together the melted butter, cayenne, paprika, brown sugar, salt, pepper and garlic powder.

- Bake until golden brown, 18 to 22 minutes, depending on size. Brush again with melted butter and serve immediately.

GRILLED HOT HONEY BISCUITS WITH THYME-ROASTED PEACHES

- To make the Thyme-Roasted Peaches:.
- Cut the peaches in half and remove the pits. Cut the halves into 4 wedges each. Lay half of the peaches in two rows on a piece of aluminum foil large enough to fold over them on both sides.
- Scatter one tablespoon of the butter, half of the thyme and 1 tablespoon of honey over the peaches. Repeat this process with another piece of foil and the remaining peaches and ingredients.
- Lightly sprinkle salt over the prepared peaches. Bring the long ends of the foil to meet over the peaches and fold over to seal. Bring the short ends over and press together to seal. This will create two flat packets.
- Place the packets, seam-side down on a grill set to medium heat. Cook with the grill cover on for 5 minutes. Flip the packets and cook for another 5 minutes until the peaches are tender when pierced with a fork but not over cooked. Let rest.
- To make the Grilled Hot Honey Biscuits:.
- In a medium bowl, combine the flour, sugar, salt, baking powder and lemon zest. Add the butter and work it into the dry mixture with your fingers until the butter forms small pea-sized clumps. Stir in the buttermilk and gently knead the dough until it comes together.
- Roll into a 3-inch-thick log and cut into 8 even pieces. Press the biscuits into 1/2-inch thick disks. The biscuits should be flatter than normal to enable them to be cooked on the grill.
- Spray both sides of the biscuits with nonstick spray and place on the grill set to very low heat. Cook for 5 minutes on each side with the grill cover on. The biscuits are done when they are firm and not squishy in the middle. (NOTE: due to the inconsistent heat of grills, it's important to monitor the biscuit's cooking. If needed, flip the biscuits more than once to ensure they are cooked through without burning them.).
- Once the biscuits are done, remove from the grill and drizzle with the hot honey. Set aside to cool slightly.
- To assemble:.
- Top the biscuits with 3 or 4 pieces of peaches, making sure to include any delicious juices that seeped out and garnish with a dollop of crème fraiche or unsweetened whipped cream.

- Preheat oven to 425 degrees. Melt 1 tablespoon butter in a saute pan over medium heat. Stir in shallots and rosemary; cook until shallots are soft, about 2 minutes. Set aside.
- In a large bowl, whisk the flour, baking powder, 4 tablespoons mustard powder, and salt. Using two knives or a pastry cutter, cut in the remaining 1/2 cup butter with dry ingredients until the mixture is coarse and crumbly. Cut in the shortening.
- Combine milk, grainy mustard, and shallot-and-rosemary mixture. Make a well in the center of dry ingredients, and pour in milk mixture. Slowly mix in flour mixture until all of it is incorporated. I'm always experimenting with biscuits and this is just another that we absolutely loved! Enjoy!

Steps:
- Preheat oven to 450 degree F. Five minutes before biscuits are ready to bake, place one tablespoon butter in an iron skillet or round cake pan and place in oven to melt. Make sure pan is hot. In food processor, mix together flour, salt and baking powder. To this add sour cream and pulse just to blend in. Add pats of butter and pulse roughly 6 times or until fine crumbs. Now add milk and pulse, just until all dry ingredients are wet and lumpy - do not over mix.
- On a lightly floured surface, with floured hands, pat out biscuits to one inch thick.
- Cut with knife or biscuit cutter and place into hot pan. Bake for roughly 14 minutes or until golden and browning on bottom, yet moist and tender on inside! Brush tops with butter straight from the oven!
