Hot and Sweet Orange Salad image

3 cups baby arugula
4 navel oranges, peeled and sliced 1/4-inch thick
1 Fresno chile pepper, very thinly sliced with seeds
1/2 small red onion, very thinly sliced
4 sprigs fresh tarragon, leaves stripped and coarsely chopped
3 tablespoons EVOO
Kosher salt and freshly ground pepper

Steps:

  • Put the arugula on a platter. Arrange the orange slices in overlapping layers over the arugula, allowing some of the leaves to peek through. Scatter the chile pepper, onions and tarragon on top. Drizzle with the EVOO and sprinkle with salt and pepper to taste.

6 small Kirby cucumbers, sliced on an angle or, 1 large seedless cucumber, thinly sliced on an angle
1 small bunch scallions, cut into long, thin slices on an angle
2 bay leaves
1 red chile pepper, thinly sliced on an angle
1/4 cup chopped dill leaves
1/2 cup sugar
2/3 cup rice wine vinegar
2 tablespoons tamari sauce

Steps:

  • Layer the cucumbers, scallions, bay, chile pepper and dill in a storage container with a tight fitting lid.
  • In a small saucepan over low heat add the sugar, vinegar and soy sauce. Simmer until the sugar dissolves. Pour the hot brine into the cucumber mixture and cover with a lid. Let marinate for 10 minutes. Stir the mixture every few minutes.

POPPY SEED DRESSING:
1/2 cup canola oil
6 tablespoons cider vinegar
3/4 cup sugar
1 small onion, quartered
1/2 teaspoon ground mustard
1/4 teaspoon salt
1 teaspoon poppy seeds
SALAD:
10 cups torn salad greens
1 can (11 ounces) mandarin oranges, drained
6 bacon strips, cooked and crumbled
2 to 4 tablespoons slivered almonds

Steps:

  • In a food processor or blender, combine the oil, vinegar, sugar, onion, mustard and salt. Cover and process until smooth. Stir in the poppy seeds, In a salad bowl, combine the greens, oranges, bacon and almonds. Drizzle with dressing and toss to coat. Serve immediately.

2 pounds medium sweet potatoes, peeled and cubed (about 6 cups)
1 cup fat-free mayonnaise
2 tablespoons orange juice
1 tablespoon honey
1-1/2 teaspoons grated orange zest
1-1/2 teaspoons minced fresh gingerroot
1/4 teaspoon salt
1/4 teaspoon pepper
1 medium Granny Smith apple, peeled and chopped
1 cup finely chopped fennel bulb
1/2 cup dried cranberries
1/2 cup chopped pecans, toasted
1/4 cup chopped walnuts, toasted

Steps:

  • Place sweet potatoes in a Dutch oven; cover with water. Bring to a boil. Reduce heat; cook, covered, 8-10 minutes or just until tender. Drain., Meanwhile, in a large bowl, mix mayonnaise, orange juice, honey, orange zest, ginger, salt and pepper. Stir in apple, fennel, cranberries, pecans and walnuts. Add sweet potatoes; toss gently to coat. Serve warm or refrigerate, covered, and serve cold.
