1 jar(s) (16.3 oz.) peanut butter - creamy or chunky
3 tsp chili powder
3 tsp cayenne peppercrushed red pepper flakes
2 tsp hot hungarian paprika

Steps:

  • 1. Mix all the ingredients together in a bowl then place back into the peanut butter jar. Let the jar sit overnight to allow the flavors to marry.
  • 2. Notes: You can use less of the spices or more depending on your tolerance for heat. Use in any recipe that calls for peanut butter.

1 egg white
1/4 cup sugar
1 tablespoon water
1 tablespoon kosher salt
2 teaspoons cumin
1 teaspoon cayenne pepper
1/2 teaspoon garlic powder
1/2 teaspoon ancho chili powder
2 cups high-quality dry roasted unsalted peanuts
5 dried chiles, optional garnish

Steps:

  • Preheat oven to 250 degrees F.
  • Whisk egg white until foamy in a medium bowl. Whisk in sugar, water, salt, cumin, cayenne, garlic and ancho powders. Toss nuts in mixture until well coated.
  • Spray a sheet pan with nonstick cooking spray or line with parchment. Spread nuts out on the prepared pan in a single layer. Cook for 45 minutes until slightly golden, turning nuts with a spatula every 15 minutes so they toast evenly and don't stick.
  • Set the nuts aside, stirring periodically as they cool. When completely cool, transfer to serving bowl and garnish with dried red chiles if desired.

This peanut sauce is very flavorful, with lemon, ginger, and quite a bit of heat. It's good with satays, stir-frys, rice bowls, or good as a dip. Don't be afraid to add more or less of the spices, just add to taste! Store in the fridge up to one week.

2 teaspoons vegetable oil
1 large clove garlic, minced
1 tablespoon minced fresh ginger root
¾ cup hot water
¼ cup peanut butter, or more to taste
½ lemon, juiced
2 tablespoons Thai-style sweet chili sauce
2 tablespoons hoisin sauce
1 tablespoon soy sauce
1 pinch red pepper flakes, or more to taste

Steps:

  • Heat vegetable oil in a medium saucepan over medium heat. Cook and stir garlic and ginger in hot oil until fragrant, about 1 minute. Add hot water, peanut butter, and lemon juice to the saucepan; stir until smooth. Stir chili sauce, hoisin sauce, and soy sauce into the peanut butter mixture.
  • Reduce heat to low and cook sauce at a simmer until thickened, about 5 minutes. Add red pepper flakes; stir.
