Steps:
- Heat grill to high. Toss wings in a few tablespoons of oil and season with salt and pepper. Place on the grill in single layers and grill until golden brown on both sides and just cooked through, about 4 to 5 minutes per side.
- Whisk together the vinegar, Dijon mustard, chipotle puree, honey, and oil in a medium bowl. Season with salt and pepper, to taste.
- Melt butter in a large skillet or a large pot on the grates of the grill. Add the hot sauce mixture and bring to a boil. Whisk in the ancho chile powder and season with salt, to taste. Add the wings and cook, stirring, for 2 to 3 minutes. Serve with Blue Cheese-Yogurt Dip.
- Combine all ingredients in a bowl and season with salt and pepper, to taste. Cover and refrigerate for at least 30 minutes before serving.

- Preheat oven to 450 degrees. Evenly coat a large rimmed baking sheet with olive oil and set aside.
- Place butter and hot sauce in a small saucepan over low heat. Cook, whisking, until butter is melted and hot sauce is well incorporated. Remove from heat and transfer to a large bowl; let cool to room temperature, about 10 minutes.
- Add chicken, eggs, celery, breadcrumbs, and salt to bowl with butter mixture; using your hands, mix until well combined. Roll chicken mixture into firm, 1-inch round balls and place on prepared baking sheet; arrange the meatballs in rows so that they are touching on all sides. Transfer to oven and bake until cooked through, about 15 minutes.

- Combine chicken wings, 2 green onions, ginger, garlic and peppercorns in large saucepan. Add enough cold water to cover mixture by 2 inches. Bring to simmer. Reduce heat to medium-low. Simmer gently until liquid is reduced to 4 cups, about 2 1/2 hours. Strain broth into large glass measuring cup; discard solids. Season broth to taste with salt. Refrigerate at least 30 minutes. - Wash the chicken wings in cold water and pat them dry. With a sharp knife, trim off each wing tip right at the joint.
- Combine all the marinade ingredients in a nonreactive container and mix well. Add the wings, cover, and refrigerate for 4-6 hours, or overnight if desired.
- Preheat the grill for 10-15 minutes, with all the burners on high.
- While the grill is preheating, drain the marinade from its container into a nonreactive saucepan. Bring the liquid to a boil for a minute or two, remove pan from heat, and reserve for basting.

- Whisk soy sauce, sherry, and ginger together in a bowl and pour into a resealable plastic bag. Add chicken, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator, 15 to 20 minutes.

I have been trying out many chicken wing recipes and finally came up with a recipe that is easy to make, quick to cook and has a nice crunchy coating and it tastes so good.

- Remove wing tips and any loose skin and discard. Leave the remaining skin on if desired.
- Rinse wings in cold water, pat dry with paper towels and set aside.
- In a large zip-loc bag, combine flour, salt, cayenne pepper and paprika, shake well.
- Add chicken to the zip-loc bag, seal and toss to coat well. Refrigerate for 1 to 4 hours. "Chilling the chicken wings is important to achieve nice, crispy wings.".
- In a mixing bowl add Panko bread crumbs.
- In another bowl, whisk together eggs and milk until frothy.
- Remove chicken from the refrigerator and shake off any excess flour coating.
- Dip coated chicken in the egg mixture, then roll in the Panko bread crumbs until well coated.
- In a heavy bottom 12 inch frying pan or skillet, add oil and heat to 375°F.
- Place chicken in the pan with the main meat side up and fry for 6 minutes.
- Turn the chicken over and continue to fry for another 6 minutes. The wings should be nicely browned.
- Test for doneness by making a cut into the thick portion of the wing to make sure there is no pink showing.
- Remove chicken from the frying pan onto paper towels to absorb any excess oil, and immediately place in a large bowl.
- In a small saucepan, add butter, Sriracha hot chili sauce, black pepper, granulated garlic powder and heat just to boil, stirring constantly.
- Pour the hot sauce over the chicken wings and toss to coat well.
- Serve immediately or while they are still hot.
- You may also freeze the chicken after it is cooked and then reheated in a preheated 400 F oven for 10 minutes.
- NOTE: You may also use the following choices of hot sauces.
- 1 tablespoon of Red Hot Sauce - wings will be medium hot.
- 2 tablespoons of Sriracha Hot Chili Sauce - wings will be hot.
- 2 teaspoons of Sambal Oelek - wings will be very hot.

- Mix together ingredients for marinade and add to chicken; marinate chicken at least 30 min, up to an hour.
- Mix together ingredients for cooking sauce in a small bowl and set aside.
- Heat 1 tbsp sesame oil and 1 tbsp peanut oil, garlic, and red pepper in wok until you just start to smell them; add chicken and cook, stir-frying 3-4 minutes or until cooked through; remove from wok and set aside.
- Add the other 1 tbsp sesame oil and 1 tbsp peanut oil to wok and add snow peas, mushrooms, and bok choy; stir-fry 2-3 minutes or until bok-choy becomes crisp-tender.
- Add green onions, bamboo shoots, baby corn, and bean sprouts to the other veggies and stir-fry another minute or so.
- Add the chicken back to the wok and stir all together.
- Pour reserved cooking sauce over the stir-fry and cook, stirring until mixture is hot and thickened, about 30 seconds to 1 minute.
- Serve with hot steamed rice.
- Just adding a note that the reason I don't use grated ginger in this recipe is because I wanted the dish to have a "subtle" ginger taste, and although I could have use a small amount of grated ginger, I felt that perhaps not as much in the dish would have been flavored by that- so in reference, I would use slices about the size of a large coin or American quarter coin.

- Place the tamarind paste in a small bowl, add 1/2 cup boiling water. Let stand 20 minutes. Strain into a bowl through fine sieve, pressing the moisture from the paste. Discard contents of sieve. - Cook and drain the noodles as directed on the package but do not add the flavor packet. Mix the water, pesto, cornstarch, chili puree and contents of the flavor packets. Heat the work until hot. Add the oil and rotate to coat. Add the chicken and stir-fry for 3-4 minutes until no longer pink. Add the mushrooms, carrots and onions. Stir fry 1 minute. Stir in the pesto mixture.
