2 teaspoons Worcestershire sauce, plus more to taste
1/8 teaspoon salt, plus more to taste
Freshly cracked black pepper
Olive oil, for the grill pan
1 boneless rib-eye steak (about 8 ounces, 1-inch thick)
Salt and freshly ground black pepper

2 small baguettes, split in half lengthwise

Steps:

  • For the horseradish sauce: Combine the sour cream, horseradish, salt and pepper in a medium bowl. Cover and refrigerate to develop the flavors.
  • For the au jus: Combine the onion soup, beef broth, sugar, Worcestershire sauce, salt and 3/4 cold water in a saucepan and bring to a boil over medium-high heat.
  • Reduce heat and simmer 5 minutes. Taste and season with pepper and more salt if needed. Strain the mixture and discard the onions (if there were any in the soup.) Cover and keep warm.
  • For the steak: Heat a grill or grill pan over high heat. Oil the grill pan if needed. Season the steak with salt and lots of black pepper. Grill the steak for 2 to 3 minutes per side for medium rare. Let the steak rest, then thinly slice.
  • Spread the horseradish sauce on one side of each baguette. Dip the steak slices in the warm au jus and place on top of the bread with horseradish sauce, then place the other slices of bread on top. Transfer the remaining au jus to two dipping bowls and serve with the sandwiches for dipping.

1/4 cup olive oil
3 garlic cloves
1 cup light sour cream
6 tablespoons prepared horseradish, drained

Steps:

  • Remove steaks from the refrigerator, and let sit, covered, at room temperature for 20 minutes before grilling.
  • Meanwhile, combine oil and garlic in a small saucepan. Warm over low heat for 2 minutes. Remove from heat, and let sit for 15 minutes.
  • Prepare grill.
  • Whisk together sour cream, horseradish, chives, 1/4 teaspoon salt, and 1/4 teaspoon pepper in a small bowl. Cover and refrigerate.
  • Brush each steak on both sides with 1 teaspoon garlic oil, and season with remaining 1/2 teaspoon salt and 1/4 tea­spoon pepper. Place steaks on the grill, and cook over high heat for 4-5 minutes, brushing with the oil every minute or so until golden brown and slightly charred. 1 teaspoon kosher salt
1 teaspoon freshly cracked black pepper
2 tablespoons vegetable oil
1/4 cup sour cream
3 tablespoons mayonnaise
2 tablespoons prepared horseradish
1 teaspoon Worcestershire sauce
2 tablespoons fresh parsley, chopped

Steps:

  • Heat a grill or grill pan to medium-high heat.
  • Sprinkle the steak on both sides with salt and pepper. Brush the grill grates with oil and carefully place the steak on the hottest part of the grill. Cook until the internal temperature is 135 to 140 degrees F, about 8 minutes per side. Remove the steak and let it rest on a cutting board for about 10 minutes.

1/3 cup cider vinegar, eyeball it
3 tablespoons sugar
2 tablespoons grill seasoning (recommended: Montreal Steak Seasoning)
3 tablespoons vegetable oil, eyeball it
2 1/4 to 2 1/2 pounds flank steak
2 medium onions
4 tablespoons butter, divided
1 large green apple
Salt and pepper
1/8 teaspoon nutmeg, freshly grated or ground, eyeball it
3 pounds red skin potatoes, quartered
1 cup sour cream
1 tablespoon prepared horseradish
3 tablespoons chives, chopped or snipped
1 (18 ounce) jar cooked red cabbage, available on specialty foods aisle
2 tablespoons all-purpose flour
1/2 cup dry red wine
1 1/2 cups beef stock, about 1/3 of a 1 quart box
1 rounded tablespoon Dijon mustard
6 gingersnaps, finely crumbled

Steps:

  • Mix bay, cider, sugar, grill seasoning and vegetable oil in the bottom of a large food storage bag, squish it all together until evenly combined. Drop the meat into the bag and move it around to evenly coat it. Let stand 10 to 12 minutes. Preheat a grill pan or indoor/outdoor grill to high.
  • Thinly slice 1 1/2 onions and reserve 1/2 onion whole but peeled. Heat a medium skillet over medium heat. Add 2 tablespoons butter and melt it. Add the sliced onions to the pan. Peel, core and slice the apple and add it to the onions. Season the apples and onions with salt, pepper and nutmeg. Cook the apples and onions 5 or 6 minutes, then add cooked red cabbage and combine then reduce heat to low. Set aside and keep warm.
  • Place meat on grill and let a bay leaf remain stuck on each steak. As the meat cooks, the heat will infuse the flavor throughout the meat. Cook steaks about 6 minutes on each side. Then, let meat rest. Discard leaves.
  • While meat cooks, place potatoes in a pot and cover with water, bring water to a boil then salt it. Cook potatoes 10 to 12 minutes or until tender. Drain potatoes and return to the hot pot. Mash them with sour cream, horseradish and chives and season with salt and pepper, to taste. Potatoes will be thick and spicy. If you like looser mashed potatoes, add a little milk or stock, continue to smash.
  • While potatoes cook, remove the red cabbage to a serving bowl and cover with foil. In the same skillet that the cabbage was cooked in, add 2 tablespoons butter. Melt butter then grate the reserved 1/2 onion with a hand held grater into the butter. Cook the grated onions 2 minutes then add flour and cook a minute more. Whisk in red wine and cook off a minute then whisk in stock and bring to a simmer. Stir in mustard and gingersnaps and season the sauce with salt and pepper. Let sauce thicken a couple of minutes.
  • Thinly slice the flank steak on an angle against the grain. Place a mound of potatoes on each dinner plate. Lay out some sliced flank steak along the edge of potatoes and dress with a ladle of sauer-sauce. Serve red cabbage, apples and onions alongside or in small side dishes.

1 pound thin-sliced sandwich steaks, roughly 10 pieces sliced to 1/8" thickness
1 tablespoon olive oil
1 teaspoon balsamic vinegar
2 tablespoon worcestershire sauce
1 garlic clove, minced
1 teaspoon dijon mustard
1/8 teaspoon chipotle hot sauce
1/2 teaspoon salt
1 small sweet onion, sliced thin
1 tablespoon butter
2-3 ounces mild cheese, such as English cheddar or Gruyère, diced or shredded
1/4 cup sour cream
2 tablespoons horseradish, minced
1 loaf whole grain bread
1 large heirloom tomato
2 tablespoons fresh basil, finely chopped
salt and pepper to taste

Steps:

  • In a bowl, combine the olive oil, balsamic vinegar, garlic, worcestershire sauce, chipotle hot sauce, dijon mustard, and 1/2 teaspoon salt, stirring well. Pour the mixture over the steak slices, making sure that each slice gets fully coated on all sides, and marinate them for at least half an hour. While the steaks are marinating, slice the tomato into 1/2" cubes, and combine in a bowl with the chopped basil. Add salt and pepper to taste, then cover and chill. Just before cooking the steaks, melt the butter in a large frying pan over medium heat, then add the onion and cook until it becomes translucent and starts to brown lightly, about 5-7 minutes, stirring occasionally. While the onion cooks, combine the horseradish and sour cream in a separate small bowl, stirring to blend together well. Cut the bread into eight 3/4" thick slices, lay them out on a cookie sheet, and toast them under the broiler on high heat for approximately a minute, removing once to flip the slices, then toasting the other sides for another minute. Once the onions have been cooked through, remove them from the skillet and set them aside. In the same skillet, pan-fry each steak slice individually, approximately 15-20 seconds per side, until each slice is fully browned. Take care not to overcook the steak slices. Set the cooked slices aside. Once all the slices are cooked, divide them in four and pile them onto four of the toasted bread slices on the cookie sheet. Divide the onions and the cheese and top the steak slices with them. Leaving the sandwiches open faced, slide them back under the broiler on high for approximately one minute, until the cheese melts and browns slightly on top. Serve the sandwiches open-faced with the sour cream horseradish sauce on the side, so that the sauce can be spooned on to taste before the top slice of bread goes on. Serve the chilled tomatoes on the side in a separate bowl, so the juices from the tomatoes don't seep into the sandwich bread.

skirt steak (one steak weighing 1 1/2 - 2 lbs)
1 large garlic clove
2 tablespoons creme fraiche or 2 tablespoons sour cream
1 tablespoon grated horseradish (fresh or store bought)
sea salt & freshly ground black pepper
1 lemon
extra virgin olive oil

Steps:

  • Put a grill pan on a high heat and let it get screaming hot.
  • Pick the rosemary leaves off the woody stalks and finely chop. Mix with a good pinch of salt and pepper and scatter over your clean board.
  • Drizzle olive oil over both sides of the steaks and roll them in the rosemary and seasoning.
  • Put the creme fraiche (or sour cream) and horseradish into a small bowl with a pinch of salt and pepper.
  • Halve your lemon and add a squeeze of juice to the bowl.
  • Add a splash of extra virgin olive oil and mix well.
  • Taste and add a little more horseradish if you think it needs to taste more fiery.
  • Lay the steak in your hot pan and press down gently.
  • Wait a minute, then turn over.
  • Cut the tip off the garlic clove and discard. Rub the hot, charred side of the meat with the garlic.
  • Flip the steak again after another minute, repeat the garlic rub, and press down again.
  • For medium-rare meat, cook for around 4 to 5 minutes on each side. For well-done meat, cook for a few minutes more.
  • Remove the steaks from the grill to a plate to rest for a few minutes. Drizzle with a little olive oil to keep them from drying out.
  • Place your steaks on plates and spoon a good dollop of the horseradish sauce on top or next to them.
  • Drizzle some of the lovely resting juices on top, and a little extra virgin olive oil.

4 10-oz. or 14-oz. Omaha Steaks rib eye steaks
1/4 C. olive oil
8 tsp. Blackening Seasoning (recipe below) or Omaha Steaks Blackened Seasoning
1 C. Creamy Horseradish Sauce (recipe below) or Omaha Steaks Creamy Horseradish Sauce
Blackening Seasoning:
3 Tbs. sea salt or kosher salt
1/4 C. paprika
2 Tbs. cayenne pepper
1 Tbs. dry oregano
1 Tbs. thyme
1 Tbs. fennel seed
1 Tbs. black pepper
1 Tbs. white pepper
1 Tbs. granulated garlic
1 Tbs. onion powder
Creamy Horseradish Sauce:
1/2 C. mayonnaise
1/4 C. sour cream
3 Tbs. prepared horseradish
1 Tbs. fresh lemon juice
1 Tbs. green onions, finely minced
1/2 tsp. sea salt or kosher salt

Steps:

Makes 1 cup.Heat a cast iron skillet until very hot, in a well ventilated area. Brush steaks with olive oil. Coat each side of the steaks with 1 tsp. Blackening Seasoning. Place steaks in the iron skillet, flipping steaks halfway through cooking. To cook a 1-inch-thick steak medium rare, cook about 4 minutes on first side and 3 minutes on other side. Spoon 2 Tbs. Creamy Horseradish Sauce on each plate before topping with the cooked steak.

Number Of Ingredients 11

1/2 cup soy sauce
1/2 cup dry white wine
1/2 onion, chopped
3 tablespoons chopped fresh rosemary
2 tablespoons olive oil
2 garlic cloves, chopped
1 2-pound flank steak, trimmed
1/2 cup sour cream
1 tablespoon plus 1 teaspoon prepared horseradish
2 green onions, chopped
Romaine lettuce leaves

Steps:

  • FOR STEAK: Combine first 6 ingredients in glass baking dish. Add steak and turn to coat. Cover and marinate overnight, turning occasionally.
  • FOR SAUCE: Mix first 3 ingredients in small bowl. Season with generous amount of pepper. (Can be prepared 1 day ahead. Cover and refrigerate.)
  • Prepare barbecue (high heat). Drain steak. Pour marinade into small saucepan and boil 1 minute. Season steak with generous amount of pepper. Grill to desired doneness, basting occasionally with marinade, about 6 minutes per side for rare. Transfer steak to plate and let stand at least 15 minutes. (Can be prepared up to 2 hours ahead.) Cut steak across grain into thin diagonal slices. Line platter with romaine leaves. Top with steak. Serve warm or at room temperature with horseradish sauce.
