Thank ye fer enjoyin' me feel jolly drink. Oh you ask why Hornswaggle because the canned peaches make it easy. Hornswaggle=cheat Also the blender makes it a cheating way so you don't have to muddle the goods. Woe ye all had as much a ruckas as I did wit' 'tis Contest? Raiders 'o th' Lost Pantry Cookin' Contest If ye didnt maybe ye need a drink? Yo-ho-ho and a bottle of rum!

1/2 teaspoon freshly grated ginger
1 tablespoon honey
1/3 cup packed canned peaches, 5 slices (Canned blends up nice and smooth if using fresh be sure they are nice and ripe)
6 mint leaves
1/4 cup fresh lime juice
1/4 cup golden rum (You can add more if you want clap of thunder or a stronger drink)
12 ice cubes
seltzer water or carbonated lemon-lime beverage
mint leaf
lime slice

Steps:

  • Place in a blender everything but 6 ice cubes, soda and garnishes.
  • Blend till smooth.Place three ice cubes into two tall glasses.
  • Divide the drink mix into both glasses.
  • Top with seltzer or lemon lime soda if you want more sweetness.
  • Garnish with mint leaves.
  • Fer th' band 'o pirates:.

3 slices fresh gingerroot (thumbnail sized)
12 fresh mint leaves
2 ounces white rum
1/2 ounce fresh lime juice
1/2 ounce sugar syrup
5 ounces ginger ale

Steps:

  • Muddle ginger in base of shaker.
  • Add mint and lightly muddle (just to bruise mint and release their essential oils).
  • Add the next three ingredients and shake with ice and fine-strain into a glass filled with crushed ice.
  • Top with ginger ale.
  • Garnish with a sprig of mint.

50 ml spiced rum
15 ml peach liqueur
25 ml lemon juice
25 ml fresh white peach puree
club soda (optional) or Sprite (optional)
3 mint leaves
lime wedge
10 ml simple syrup

Steps:

  • Tear mint leaves into a glass, add wedge of lime and soak in simple syrup.
  • Muddle with barspoon.
  • Half fill a rocks glass with crushed ice and add rest of ingredients to glass, stir before serving.
  • Top off with club soda or Sprite.
  • Garnish with a mint sprig and a lick of peach.
  • Note: Variation of a white peach Mojito but using Morgans Spiced instead of golden rum.

For me, a really good mojito is made with simple sugar. That way, you are assured that the sugar is completely dissolved when you add the rum and club soda. This recipe also calls for mint infused simple sugar, which makes the minty taste even more intense. Prep time does not include time to cool the simple sugar.

1 cup sugar
1 cup water
20 mint leaves, divided
1 1/2-2 ounces light rum
1/2 lime
1 club soda

Steps:

  • To make the simple syrup, mix the water with the sugar. Heat to boiling, stir until the sugar dissolves. Turn off the heat and toss in 10 mint leaves. Let steep for an hour or so. Strain out the leaves and store in the fridge until you are ready to use it.
  • To make one mojito: Pour 1 ounce mint-infused simple syrup into a tall glass.
  • Add 10 mint leaves, and muddle it together. (Use a muddler or a spoon.)
  • Add crushed ice. Muddle some more.
  • Add to that 1-1/2 to 2 ounces of light rum.
  • Squeeze in the juice of half a lime.
  • Add a splash of club soda and stir.
  • Garnish with a mint sprig and a slice of lime.
  • To make more, just remember the ratio: 2 parts syrup, 1 part lime, 3 parts rum. Oh, and lots of mint and club soda!
