- Heat the oil to 350 in a large pot or use a deep fryer on high.
- Place the pickles in a medium bowl and cover with the buttermilk. Stir the flours, salt, paprika, and cayenne together in another bowl; mix well. Take about a handful of the pickles out of the buttermilk and dredge in the seasoned flour. Shake off the excess flour and place the coated pickles in the hot grease. Be careful not to place too many pickles into the hot grease, or the pickles won't fry up crisp. Fry the pickles until golden brown. Scoop them out with a slotted spoon and put them on the paper towels to drain.

Place the buttermilk in one bowl and in another bowl combine the following: flour, salt, paprika, and cayenne pepper Place each pickle in the buttermilk then dredge in the flour then back into the buttermilk then dredge into the flour again ( it is well worth to do it twice) Once the heat is at 350 - fry the pickles ( I do 4 at a time) Fry until golden brown - place the fried pickles onto a paper towel ( it will drain the excess oil) To make the sauce - in a small bowl combine ranch dressing and hot sauce --- I did ¼ ranch dressing to about 15 drops of hot sauce --- it really up to your taste buds Enjoy! - Preheat eight cups of vegetable oil to 350 degrees Farenheit in a large pot.[[5]]
- Mix the milk, dill pickle juice, and egg in a small mixing bowl.
- Drain pickle slices and add to a medium-sized bowl.
- Pour the milk mixture over the pickles and toss until all slices are evenly coated with marinade.
- Drain the pickle slices again and reserve the milk mixture.
- Mix together the all-purpose with the whole wheat flour, salt, black pepper, and paprika.
- Dip the pickle slices into the flour mixture, back into the milk mixture, and then back into the flour mixture.
- Place the pickles in a deep fryer basket, or a wire colander with handles. Do not overload the basket.
- Carefully lower the basket of pickles into the hot oil.
- Fry the pickles for about 1 1/2 to 2 minutes, or until the pickles are golden and crisp.

Stir flour mixture between batches and pull out dough chunks to keep coating from getting chunky.

- Preheat about 2-inches of oil in a large (8 quart) pot to 350°F. Prepare a tray with double paper towel stack. Set aside.
- In a medium bowl combine buttermilk, egg, and hot sauce. Beat with a fork to combine. Drain pickle juice from pickle jar, add pickles to buttermilk mixture. Stir to combine.
- In a separate bowl whisk together flour, paprika, garlic powder and cayenne pepper.
- Add about a handful of pickles to flour mixture. Swirl pickles around and make sure they are well coated. Shake off excess flour and drop pickles in hot oil one at a time. Only put 7-8 pickles at a time so the temperature does not drop too much.
- Fry pickles for 3-5 minutes until they are golden brown. Remove from oil with a slotted spoon and drain on a tray lined with paper towels.
- Serve and enjoy!
