Honey Roasted Almonds image

A wonderful snack and good to give as gifts too. Great for on the run! Adapted from the California Almond Board.

Number Of Ingredients 7

2 cups whole almonds
2 tablespoons soy sauce
2 tablespoons honey
1/2 teaspoon grated orange peel (zest)
1/2 teaspoon garlic powder
1/2 teaspoon ground ginger
2 teaspoons almond oil (or you may use hazelnut oil, or a neutral tasting oil with a drop or two of almond extract )

Steps:

  • Spread the almonds in a shallow baking pan.
  • Bake at 350 degrees, 15 minutes, stirring occasionally; cool.
  • In small saucepan blend soy sauce with the honey. Stir in orange peel, garlic powder and ground ginger.
  • Bring mixture to a boil. Stir in almonds; toss to coat evenly. Boil, stirring constantly, until liquid is absorbed, about 5 minutes.
  • Toss with almond oil.
  • Place almonds on cookie sheet in a single layer, separating almonds. Bake at 250*F., 15 minutes.
  • Pour out onto oiled waxed paper.
  • Toss and separate every 5 minutes until cool.
  • Store in tightly closed plastic bag.

2 cups almonds, whole with skins on
1/4 cup sugar
1/2 teaspoon salt
2 tablespoons honey
2 tablespoons water
2 teaspoons almond oil or 2 teaspoons vegetable oil

Steps:

  • Spread the almonds in a single layer in a shallow ungreased baking pan and place in cold oven. Bake at 350°F, stirring occasionally, until the internal color of the nut is tan to light brown, 12 to 15 minutes. (The nuts will continue to roast a little more after they are removed from the oven.) Set the roasted almonds aside.
  • Thoroughly mix the sugar and salt, and set aside.
  • Stir together the honey, water, and oil in a medium-size saucepan and bring to a boil over medium heat. Stir in the roasted almonds and continue to cook and stir until all of the liquid has been absorbed by the nuts, about 5 minutes.
  • Immediately transfer the almonds to a medium-sized bowl into which some sugar mixture has been sprinkled. Sprinkle the remaining sugar mixture over the almonds and toss until they are evenly coated. Spread the almonds out onto a silicon pad or parchment paper. When cool, store at room temperature in a tightly covered container or plastic bag. Will keep up to 2 weeks.

3 1/2 cups almonds (1 lb or 500 g)
1 tablespoon extra virgin olive oil (15 ml)
2 teaspoons coarse sea salt (10 ml) or 2 teaspoons flake sea salt (10 ml)
1 1/2 teaspoons ground cumin or 1 1/2 teaspoons curry powder

Steps:

  • Preheat oven to 325°F.
  • Toss all ingredients together in a large bowl.
  • Line a baking sheet with parchment paper or foil.
  • Roast almond mixture until lightly toasted and skins are just beginning to split (about 20 minutes).
  • Let cool.

½ teaspoon kosher salt
3 tablespoons honey
3 tablespoons water
1 tablespoon almond oil

Steps:

  • Spread almonds in a single layer on a baking sheet and place in a cold oven.
  • Turn oven on to 350 degrees F (175 degrees C). Bake almonds, stirring occasionally, until light tan and fragrant, 12 to 15 minutes. The nuts will continue to cook after removing from oven.
  • Meanwhile, mix sugar and salt together in a small bowl; sprinkle about 1 tablespoon sugar mixture into a large bowl.
  • Stir honey, water, and almond oil together in a saucepan; bring to a boil. Add almonds; cook and stir until almonds have absorbed all the liquid, about 5 minutes.
  • Transfer coated almonds to the large bowl sprinkled with sugar mixture. Sprinkle remaining sugar mixture over almonds; toss to coat evenly.
  • Spread almonds onto waxed paper to cool completely. Store at room temperature in a tightly covered container or plastic bag.

1/8 cup turbinado sugar
1/4 cup honey
3/4 teaspoon kosher salt

Steps:

  • Preheat your oven to 325°F Line a rimmed baking sheet with parchment or wax paper. If using parchment, lightly oil it.
  • Combine the sugar and salt in a bowl large enough to accommodate the almonds and set aside.
  • Melt the honey in a large skillet over low to medium heat. Add the almonds and stir until all the nuts are coated with the honey.
  • Spread the nuts in a single layer on the baking sheet and bake for about 10 minutes.
  • Let the almonds cool slightly and toss them in the sugar-salt mixture.
  • Remove the parchment or wax lining from the baking sheet and spread out the almonds on it again to let them cool completely.

I found this recipe at www.nutsforalmonds.com. My huband loves almonds but the already roasted pre-package variety are by far too salty for him. And the Smoked ones he does not care for the flavor. So thus started my hunt for the below recipe.

11 ounces fresh almonds (2 cups)
water, for blanching (optional)
1 tablespoon extra virgin olive oil (optional)
1 teaspoon sea salt (optional)

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C).
  • Bring a saucepan three-fourths full of water to a boil over high heat, add the almonds and boil for 30 seconds Drain, then immediately wrap the almonds in a kitchen towel and rub them in the towel to loosen the skins Pinch the almonds from the skins; the almonds should slip out easily This step is optional and can be skipped.
  • Transfer the almonds to a heavy rimmed baking sheet.
  • Add the oil and toss to coat evenly.
  • Add the salt and toss again.
  • Place in the oven and toast, stirring the almonds once or twice so they brown evenly (about every 5 minutes), until golden brown and fragrant, 20 to 30 minutes.
  • Transfer to paper towels to cool completely, about 1 hour, before serving.
  • Adjustments: Omit oil and salt and toast as directed above for plain roasted almonds.
  • Be sure to purchase fresh almonds and not almonds that are"smoked" or"salted"- those are generally already roasted.
  • Total time is listed as 1 hour 30 minutes, with the"cooking" time as time allowed for almonds to cool completely.

SHOYU WASABI ROASTED ALMONDS



Shoyu Wasabi Roasted Almonds image

Tried to find recipes to use up this huge bag of wasabi powder I bought from an asian market. The 1 kilo bag was priced about the same as two of those little 1oz cans so.... I have a lot of wasabi powder. We had a couple pounds of almonds left over from the holiday cookie baking frenzy too and I don't like to let them get rancid so.... Of course, wasabi almonds. I looked for recipes and thought right away that most of them would present the same problem that every other spiced nut recipe would. The spices won't adhere to the nuts. You're left with slightly seasoned nuts and a pile of spices in the bottom of the bowl. I tried the recipe going around with egg whites (baking wasabi pretty much renders the flavor out), I didn't want sugary sweet, and oily nuts were givng me the spice piles in the bowl. I've eaten the Blue Diamond wasabi almonds before and thought they were okay so I checked their Wasabi almond ingredients on their website. This is what I came up with that works for me.

4 -5 cups raw skin-on almonds
5 tablespoons soy sauce
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon cayenne pepper
1 teaspoon powdered sugar
5 tablespoons wasabi powder (the fake stuff. should contain horseradish, mustard, some sort of citric component and food coloring)
1 teaspoon cornstarch
1 teaspoon finely ground sea salt
horseradish powder (if you want to kick up the burn) (optional)
coleman mustard powder (added burn) (optional)
cayenne pepper (for a lingering burn) (optional)

Steps:

  • Line a baking sheet with non-stick aluminum foil or parchment paper. Pre-heat oven to 350.
  • Spread almonds on the sheet to a single layer. Bake for 10 minutes.
  • While the nuts are baking, combine marinade ingredients in a stainless mixing bowl large enough to accomodate all the nuts and whisk to combine.
  • After the almonds have baked for the 10 minutes pour them into the marinade and stir to evenly coat them and then put them back on the sheet in a single layer and bake for an additonal 10 to 15 minutes stirring the nuts at about 7 minutes or so so that they will bake evenly. Taste one at ten minutes and see if is roasted to your liking if not continue until they are done.
  • Rinse and dry your mixing bowl and combine the dry ingredients in it. When the nuts are done roasting, toss them while they are still hot in the dry ingredients (I usually use a food service disposable glove and press the powder into the nuts). Drop the nuts into a wired strainer over a plate and shake the excess powder off. Warning! Done this way the nuts are a wasabi bomb so if you like it milder, use less powder and a lighter coating.
