Number Of Ingredients 8

4 limes, juiced (about 1/2 cup), plus more for garnish and rims
Superfine sugar, for rims
1 honeydew melon (about 6 pounds), quartered, peeled, and seeded
1/4 cup granulated sugar
1/4 cup water
1/4 cup packed fresh mint, plus sprigs for garnish
1/2 cup medium-bodied golden rum, such as Appleton
3 cups small ice cubes

Steps:

  • Rub a lime wedge on rims of 8 glasses, then dip rims in superfine sugar.
  • Cut 3 melon quarters into 1-inch chunks. Puree melon in a food processor until smooth. Strain puree through a cheesecloth-lined sieve, and discard solids. (You should have about 4 cups.) Using a 1-inch melon baller, scoop balls from remaining quarter, and reserve.
  • Bring granulated sugar and water to a boil in a small saucepan, stirring until sugar dissolves. Remove from heat, and add mint. Let stand at room temperature, uncovered, for 10 minutes. Strain through a fine sieve, and discard mint leaves. (You should have a scant 1/3 cup syrup.)
  • Combine melon puree, mint syrup, rum, and lime juice in a pitcher, and refrigerate until cold, about 30 minutes. Add ice to pitcher, and divide among glasses. Garnish each with melon balls, mint sprigs, and lime wedges, and serve immediately.

HONEYDEW MOJITOS

Honeydew Mojitos image

We've never met a mojito we didn't like, and this blended version might just be our new go-to. Combining the whimsy of a frozen beverage with the fresh, minty flavor of a mojito, our Honeydew Mojitos make the most out of one of the season's brightest melons.

Time 15m

Number Of Ingredients 7

1 medium-size thin-skinned lime, plus lime slices for garnish
4 cups honeydew melon cubes (1-inch pieces)
.75 cup (6 oz.) white rum (such as Bacardí)
.5 cup loosely packed fresh mint leaves, plus mint sprigs for garnish
.5 cup Simple Syrup
Ice cubes
1 cup sparkling water, seltzer water, or club soda

Steps:

  • Cut lime lengthwise into quarters. Using a knife, remove center white pith from lime wedges; discard. (Do not remove the peels.)
  • Place lime wedges, melon cubes, rum, mint leaves, and Simple Syrup in a blender. Process until mixture is smooth, about 1 minute. Pour through a fine mesh strainer into a measuring cup or a bowl, stirring and pressing lightly on solids to extract as much juice as possible. Discard solids.
  • Fill 4 glasses with ice cubes. Pour ¾ cup strained mixture into each glass. Top with ¼ cup sparkling water; stir. Garnish glasses with lime slices and mint sprigs.

Time 4h25m

Yield 4 servings

Number Of Ingredients 4

1/2 cup sugar
10 sprigs mint, plus leaves for topping
3 cups chopped honeydew melon
1/4 cup fresh lime juice (from 2 to 3 limes)

Steps:

  • Bring the sugar and 3/4 cup water to a simmer in a small saucepan over medium heat, stirring until the sugar is dissolved. Remove from the heat and add the mint, pressing with a wooden spoon to submerge. Let cool completely, then remove the mint with a slotted spoon and discard.
  • Combine the mint syrup, honeydew and lime juice in a blender and puree until smooth. Pour into a 7-by-11-inch or 8-inch square metal baking dish.
  • Freeze the honeydew-mint mixture until ice crystals begin to form around the edges, about 45 minutes. Scrape the crystals toward the center of the pan with a fork, breaking apart any large chunks. Continue freezing, scraping every 30 minutes or so, until all of the granita has been scraped into flakes, 3 to 4 hours. Spoon into chilled bowls and top with mint leaves.

EASY MOJITOS

Easy Mojitos image

It's hard to find mojitos at any of the restaurants in the small town I'm stationed in, and when I tried to make my own using club soda, they never seemed to turn out right. Using lemon-lime soda also cuts down on the amount of sugar usually used.
