Steps:
- In a large resealable plastic bag, combine bread crumbs, almonds, cilantro, and curry powder.
- Place flour in a shallow bowl.
- In another shallow bowl, beat the egg, and milk.
- Dip the chicken strips in flour, then in the egg mixture.
- Then place in the resealable bag in step 1, and shake to coat.
- In a large skillet, cook chicken in oil for 5-6 minutes on each side or until no longer pink, and drain on paper towels.
- In a small bowl, combine the sauce ingredients, and serve with chicken.

CHICKEN AND WALNUT SALAD WITH HONEY YOGURT DRESSING
Steps:
- 1. Cut the chicken in pieces and set aside. 2. In a small bowl, mix the yogurt, honey and salsa. Add the chicken pieces and stir gently. 3. Cut the cherry tomatoes in half and set aside. Put the mixed greens in a medium bowl and sprinkle with the olive oil. Toss gently to coat the leaves with the oil. Sprinkle with the balsamic vinegar and toss again. 4. Top the greens with the chicken and cherry tomatoes and add the walnuts.
HONEY YOGURT CHICKEN
Steps:
- Add Ritz crackers to a plastic bag and finely crush. Add almonds and spices and mix. Dip chicken breasts in honey yogurt and place in plastic bag with Ritz mixture making sure chicken breasts are covered completely with mixture. Place chicken breasts in a oven safe dish (spray with cooking spray prior to adding chicken). Add small cubes of butter on top of each chicken breast and sprinkle some randomly in between each breasts. Bake at 350 oven for 30 -35 mins
