HONEY WHOLE-WHEAT BREAD

Honey Whole-Wheat Bread image

For the ultimate whole-wheat sandwich bread, this loaf relies on 100 percent whole-grain flour and equal amounts of honey and butter to keep it soft. This recipe is adapted from Ben Butler at Hayden Flour Mills. Martha made this recipe on "Martha Bakes" episode 807.

Provided by Martha Stewart

Categories     Food & Cooking     Breakfast & Brunch Recipes     Bread Recipes

Time 3h35m

Yield Makes 1 loaf

Number Of Ingredients 6

3 tablespoons honey
1 3/4 cups warm water (110 degrees)
1 envelope (1/4 ounce) active dry yeast (2 1/4 teaspoons)
1 pound, 6 ounces (about 4 1/2 cups) freshly milled whole-wheat bread flour, such as Hayden Flour Mills Hard Red Spring, plus more for dusting
1 tablespoon kosher salt
3 tablespoons unsalted butter, melted, plus more for bowl and pan

Steps:

  • In a small bowl, stir honey into warm water, then sprinkle with yeast. Let stand until foamy, about 5 minutes.
  • Stir together flour and salt in a medium bowl, then stir in yeast mixture and melted butter just until a dough forms. Knead on a lightly floured surface until smooth, 5 to 10 minutes. Transfer to a large buttered bowl, cover with plastic wrap, and let rise in a warm spot until doubled in bulk, about 45 minutes.
  • Preheat oven to 375 degrees. Punch down dough. Shape into an 8-inch square, about 1 inch thick. Fold in two opposite sides of dough to meet in middle, slightly overlapping. Press seam to seal. Place dough, seam-side down, in a buttered 9-by-5-inch loaf pan. Sprinkle with flour. Cover with plastic wrap and let rise in warm spot until dough is about 3/4 inch above top of pan, 30 to 45 minutes.
  • Transfer pan to oven and immediately reduce heat to 350 degrees. Bake, rotating pan halfway through, until top is golden brown and bottom sounds hollow when tapped, 35 to 40 minutes. Let cool in pan on wire rack 20 minutes, then turn out bread onto rack and let cool completely. Bread can be stored, tightly wrapped, at room temperature up to 3 days or frozen up to 3 months.

GREAT HARVEST HONEY WHOLE WHEAT BREAD COPYCAT

Great Harvest Honey Whole Wheat Bread Copycat image

Provided by Six Sisters Stuff

Yield 16

Number Of Ingredients 5

4 cups very warm water (see note below)
3 Tablespoons fast active-dry yeast
3/4 cup honey
1 Tablespoon salt
10-11 cups whole wheat flour (freshly ground if possible)

Steps:

  • In a large bowl, add water, yeast, honey and salt. Let it rest for 5 minutes (or until the yeast foams).
  • Add in flour 1 cup at a time, kneading it between each cup of flour added if you are making it by hand. If you are making it with a mixer (like a Bosch or Kitchen Aid), use a paddle attachment and just let it mix while you add the flour.
  • Knead bread for about 5 minutes. If the dough is sticky, add only enough flour so that the dough barely pulls away from the bowl. Every time I make bread, the amount of flour I use varies - humidity and elevation will make a big difference too. I usually use between 10-11 cups.
  • Preheat oven to 170 degrees; turn the oven off, and let dough rise inside the oven for 15 minutes.
  • Carefully remove bowl from oven. Spray the back of your hand with cooking spray and punch down the dough. Form into a log and cut in half, forming two larger-sized loaves. Put into 2 greased loaf pans.
  • Again, preheat oven (if it?s not warm anymore) to 170 degrees and let the dough in the pans rise in the oven for 20-30 minutes, or until the dough doubles in size.
  • Remove dough from oven and set oven temperature to 350 degrees. Once oven is pre-heated, place the loaves back in the oven and bake for 30 minutes.
  • Remove from pans immediately and let cool completely on a cooling rack.

BREAD MACHINE HONEY WHOLE WHEAT CHALLAH

Bread Machine Honey Whole Wheat Challah image

We make this every week in our house. People keep asking for the recipe -- we think they're impressed to find a healthy challah that also tastes great! It resembles actual bread more than cake. Just throw the ingredients into a bread machine with a "dough" cycle, braid, & bake!

Provided by Rachel Leah D

Categories     Yeast Breads

Time 45m

Yield 3 medium-sized challah loaves, 15 serving(s)

Number Of Ingredients 11

1 1/2 cups water
1 egg
1 egg white
2 tablespoons olive oil (this is equivalent to 1/6 cup)
3 tablespoons honey (measure using the same spoon as the olive oil so it doesn't stick!)
1 tablespoon sugar
4 3/4 cups whole wheat flour
2 teaspoons active dry yeast (or one 1/4 oz. packet)
1/8 teaspoon salt
1 additional egg (optional)
sesame seeds (optional)

Steps:

  • Add water, eggs, olive oil, honey, sugar, and flour to the bread machine bowl in that order.
  • Make a well on top of the flour mound and add the yeast.
  • Add salt along the side of the flour mound.
  • Set your bread maker to run a "dough" cycle.
  • Remove dough and braid challah (this is the fun part! See http://www.youtube.com/watch?v=q0kf0MFRpXg for instructions.).
  • (Optional) For a professional look, coat the braided challah with egg using a basting brush, and sprinkle sesame seeds on top.
  • Bake at 325 F for 30-40 minutes.

WHOLE WHEAT BEER & HONEY BREAD MACHINE ROLLS

Whole Wheat Beer & Honey Bread Machine Rolls image

Another of my make do bread recipes, when DH had a few beers left over ( doesn't happen often.) This bread can be made into loafs or rolls, but we find rolls to be our family favorite. A heavy lager might be more robust, hey give it a try, dh only drinks bud and coors, so we haven't had a chance to try the heavier beers, let us know what ya'all think. LOL so.. salute.

Provided by BakinBaby

Categories     Yeast Breads

Time 35m

Yield 12 rols, 12 serving(s)

Number Of Ingredients 8

1 1/2 cups whole wheat flour
1 1/2 cups bread flour
1 1/2 teaspoons active dry yeast
1/8 cup honey
3/4 teaspoon salt
1/4 cup water
6 ounces beer (flat)
2 tablespoons oil

Steps:

  • Mix honey, salt, water, oil and beer in small mixing bowl , heat in microwave 1 minute, stir until well blended.
  • Place honey mix with remaining ingredients into bread machine according to manufacturers directions.
  • Select dough cycle.
  • When cycle is complete, shape dough into rolls.
  • Place in lightly greased pans. ( I like to use pie pans instead of a baking sheet so rolls are wedged next to each other).
  • Cover rolls with a damp cloth and let rise about 30-40 minute or until doubled in size. When using whole wheat flour I like to set pans on an electric heating pad set on medium. (That makes the whole wheat flour rise faster,If you don't use the heating pad, not to worry, you might need more rise time.).
  • When rolls have doubled, bake in a preheated 350 degree oven 15-20 min , brush tops with melted butter.

BREAD MACHINE HONEY-WHOLE WHEAT BREAD

Bread Machine Honey-Whole Wheat Bread image

A really great soft bread that we make in our bread machine. Perfect for kids, no preservatives, and can be made in the oven, too.

Provided by Live Life Farm

Categories     Bread     Yeast Bread Recipes     Whole Grain Bread Recipes     Wheat Bread

Time 55m

Yield 16

Number Of Ingredients 9

1 ½ cups warm water
2 tablespoons butter
¼ cup raw honey
3 ½ cups whole wheat flour
¼ cup flaxseed meal
¼ cup vital wheat gluten
1 ½ teaspoons salt
1 ½ tablespoons dry milk powder
2 teaspoons active dry yeast

Steps:

  • Place warm water, butter, honey, whole wheat flour, flaxseed meal, vital wheat gluten, salt, dry milk, and yeast in a bread machine in the order listed. Run a basic wheat bread cycle, but adjust the cook timer to cut baking time down by 25 to 30 minutes. I time the bread and take it out when I see that it is not yet brown. If you like a crusty bread you may let it cook the entire time.
  • Remove loaf from the machine after the cycle is done.

HONEY WHEAT OATMEAL BREAD - ALL WHOLE GRAIN VERSION

Honey Wheat Oatmeal Bread - All Whole Grain Version image

This is now our daily bread -- my daughter makes it several times a week in our bread machine. This has replaced the earlier version that I have posted because we've tried to eliminate white flour from our diets wherever possible. The vital wheat gluten is what makes it possible for the bread to rise nicely. Gluten is the protein part of the wheat kernel, and you can buy a powdered form of it at most health food or whole food stores -- that's what you need for this recipe to work. Without the gluten, it'll be a brick. So, get the gluten unless you want to build a bread wall. Cooking time is for the white bread cycle on our machine. Your time may vary.

Provided by ThatBobbieGirl

Categories     Yeast Breads

Time 3h10m

Yield 1 loaf

Number Of Ingredients 8

10 fluid ounces warm water
1 tablespoon olive oil
1/3 cup honey
1 teaspoon salt (we use Real Salt)
1 cup rolled oats (freshly rolled by DangerBoy at our house)
3 cups whole wheat flour (freshly ground, if possible)
2 tablespoons vital wheat gluten
2 teaspoons instant yeast

Steps:

  • Put ingredients into bread pan in the order suggested by the manufacturer of the bread machine.
  • If you're going to use a timer, it is vital to keep the yeast away from both the liquids AND the salt.
  • I make this on the white bread cycle and it comes out great, but you may wish to use the whole wheat cycle.
  • I never noticed any difference except that the whole wheat cycle took a lot longer.
  • Your machine may yield different results, tho.
  • If you like crusty bread, just let the finished bread set on a rack to cool.
  • If you want a softer crust, slip the hot bread into a plastic bag so that the crust will get steamed and be nice& soft- and good for sandwiches.

AMISH SOFT HONEY WHOLE WHEAT BREAD

Amish Soft Honey Whole Wheat Bread image

I've been looking for a soft all whole wheat bread, and I finally found it! This is in an Amish cookbook that I have, and I am writing it as it is written. I mix it with my KitchenAid. :) This is our sandwich bread that we have all the time on hand and the recipe can easily be cut into 1/3 to make just one loaf. :) 10/8/07 Corrections made to make bigger loaves. I usually use recipe #185778 to have a great rise.

Number Of Ingredients 9

3 cups warm water (110-115 degrees)
1 teaspoon sugar
2 tablespoons yeast
3 eggs
3/4 cup honey
3/4 cup Crisco (I use butter flavored)
2 tablespoons salt
11 -12 cups whole wheat flour
4 tablespoons wheat gluten (optional)

  • Divide into 3 loaves. Let rise again in warm place until doubled (about 1-1/2 hours).

HONEY WHOLE WHEAT BREAD

Honey Whole Wheat Bread image

After following this recipe, you'll be able to take a warm, brown loaf of bread from your oven -- perfect for breakfast with butter and honey, for sandwiches in a lunchbox, or a healthy snack.

Provided by Martha Stewart

Categories     Food & Cooking     Breakfast & Brunch Recipes     Bread Recipes

Yield 2 loaves

Number Of Ingredients 8

3 1/2 cups warm water, 100 degrees to 110 degrees
3 tablespoons honey
2 packets active dry yeast
4 cups bread flour, plus more for dusting
3 cups whole-wheat flour
1 cup wheat germ
2 tablespoons salt
Canola oil, for bowls, plastic wrap, and pans

Steps:

  • Combine warm water, honey, and yeast in a large liquid-measuring cup. Stir until dissolved. Let stand until foamy, about 10 minutes.
  • In a large bowl, whisk together 3 1/2 cups of the bread flour, the whole-wheat flour, wheat germ, and salt. Make a well in the center and pour in the yeast mixture. Stir with a wooden spoon, gradually drawing in the flour until well combined.
  • Remove the dough to a lightly floured surface. Knead in the remaining 1/2 cup bread flour a little at a time until dough is smooth and elastic, 10 to 15 minutes. Place in a lightly oiled bowl. Cover with lightly oiled plastic wrap. Transfer to a warm place, and let rise until double its original size, 1 to 1 1/2 hours.
  • Preheat oven to 400 degrees, with rack in center. Brush two 9-by-5-inch loaf pans with canola oil. Remove the plastic wrap from the dough. Turn the dough out onto a lightly floured work surface, and punch down. Divide dough into two equal pieces. Flatten one piece of dough into an oval, and roll up lengthwise. Place the roll, seam-side down, into a prepared pan. Repeat process with second piece. Cover with oiled plastic wrap. Place the loaves in a warm place, and let rise again until doubled in size, 30 to 45 minutes.
  • Bake until deep golden brown, 50 to 60 minutes (the loaves will sound hollow when tapped on the bottom). Transfer pans to a rack, and let cool 5 minutes. Invert the loaves onto the rack to cool completely.

100% HONEY WHOLE WHEAT/CRACKED WHEAT BREAD

100% Honey Whole Wheat/Cracked Wheat Bread image

This recipe is adapted from The El Molino Cookbook that I've had for a million years! This has the potential to make 3 loaves and is the ONLY recipe I use for whole wheat bread. It is the moistest I've ever had and because honey is a natural preservative it has a longer shelf life. You can add a little more honey and make amazing dinner rolls or cinnamon rolls. The cookbook states "the same natural ingredients but a new improved method that gives a higher, lighter loaf." Yes, this rises 3 times! I use the quick acting yeast and am able to make 9 loaves in a day without stressing out.You can substitute about a cup of the whole wheat flour with a cup of white bread flour but I rarely do.Enjoy!

  • In the bowl of your electric mixer (I use a KitchenAid ) dissolve yeast in warm water. Add milk, honey, oil, salt and eggs. Mix until blended.
  • Add 2 1/2 cups of the flour and beat for 3 to 4 minutes. Cover bowl with plastic wrap or a warm towel and allow sponge to rise in a warm place until doubled in bulk, about 30 minutes.
  • Mix in remaining flour reserving 1/2 C for kneading. At this point you may add the softened cracked wheat if desired. This may seem a little stickier than you may be used to but as long as your fingers don't stick in the dough you have the right amount of flour.
  • Turn out onto floured board or counter top or use the dough hook from your mixer. Knead for 8 to 10 minutes until elastic and smooth.
  • Put in a large buttered bowl and let rise in warm place until doubled in bulk.
  • Punch dough down. On lightly floured board or counter top divide into 3 equal portions. Shape into loaves and place in buttered loaf pans approximately 8" X 4".
  • Cover and let rise for the third time until doubled in bulk.
  • Bake at 375 degrees for 30 - 35 minutes. The bread tests done when the crust make a hollow sound when tapped.
  • Remove from pans and brush with melted butter. Cover with a hot damp towel to soften crust if desired.

Number Of Ingredients 8

3 cups stone-ground whole wheat flour or graham flour
1/3 cup honey
1/4 cup shortening
1 tablespoon salt
2 packages regular or quick active dry yeast
2 1/4 cups very warm water (120°F to 130°F)
3 to 4 cups Gold Medal™ all-purpose flour or Better for Bread™ flour
Butter or margarine, melted, if desired

Steps:

  • Mix whole wheat flour, honey, shortening, salt and yeast in large bowl. Add warm water. Beat with electric mixer on low speed 1 minute, scraping bowl frequently. Beat on medium speed 1 minute, scraping bowl frequently. Stir in enough all-purpose flour, 1 cup at a time, to make dough easy to handle.
  • Turn dough onto lightly floured surface. Knead about 10 minutes or until smooth and elastic. Place in greased bowl and turn greased side up. Cover and let rise in warm place 40 to 60 minutes or until double. Dough is ready if indentation remains when touched.
  • Grease bottoms and sides of 2 loaf pans, 9x5x3 or 8 1/2x4 1/2x2 1/2 inches.
  • Punch down dough and divide in half. Flatten each half with hands or rolling pin into rectangle, 18x9 inches, on lightly floured surface. Roll dough up tightly, beginning at 9-inch side, to form a loaf. Press with thumbs to seal after each turn. Pinch edge of dough into roll to seal. Press each end with side of hand to seal. Fold ends under loaf. Place seam side down in pan. Brush loaves lightly with butter. Cover and let rise in warm place 35 to 50 minutes or until double.
  • Move oven rack to low position so that tops of pans will be in center of oven. Heat oven to 375°F.
  • Bake 40 to 45 minutes or until loaves are deep golden brown and sound hollow when tapped. Remove from pans to wire rack. Brush loaves with butter; cool.
