Grilled Nectarines with Honey-Orange Ricotta Whipped Cream and Toasted Almonds image

1 cup fresh whole milk ricotta
1/4 cup cold heavy cream
2 tablespoons clover honey
2 teaspoons grated orange zest
1/2 vanilla bean, seeds scraped
6 nectarines, cut in 1/2 and pitted
Canola oil
1/4 cup toasted slivered almonds
Mint springs

Steps:

  • In a large bowl, whisk together the ricotta, cream, honey, orange zest and vanilla seeds until light and fluffy. Cover and refrigerate for 30 minutes.
  • Heat the grill to high. Brush the nectarines with oil and put on grill for a few minutes on each side, just to soften and heat through.
  • Put some of the ricotta onto each serving plate. Top with nectarines and garnish with toasted sliced almonds and mint sprigs.

Rhubarb Ice Cream with Honey-Scented Strawberries and Whipped Cream image

Make your own ice cream bursting with the sweet flavors of spring with this recipe from Bi-Rite Creamery co-owner Anne Walker.

Yield Makes 1 quart ice cream; serves 4 to 6

4 cups chopped rhubarb
1/4 cup sugar
1 teaspoon freshly squeezed lemon juice
5 large egg yolks
1 3/4 cups heavy cream
3/4 cup whole milk
1/2 cup honey
1/4 teaspoon coarse salt

Steps:

  • Place rhubarb, sugar, 2 tablespoons water, and lemon juice in a large saucepan. Cook over medium-high heat until rhubarb is very soft and most of the liquid has evaporated. Transfer to the jar of a blender and carefully blend until smooth. Transfer rhubarb puree to refrigerator until chilled.
  • In a medium heatproof bowl, whisk eggs just to combine; set aside.
  • In a large heavy-bottomed saucepan, mix together cream, milk, honey, and salt. Place over medium-high heat and cook until mixture barely begins to simmer; reduce heat to medium.
  • Slowly whisk in 1/2 cup cream mixture into eggs. Repeat process with another 1/2 cup cream. Slowly stir egg mixture into saucepan with cream using a heatproof spatula. Cook, stirring constantly until mixture is thickened and coats the back of a spoon, about 1 to 2 minutes.
  • Strain custard through a fine-mesh strainer into a bowl set in an ice-water bath. Using a clean spatula, stir custard occasionally until cooled. Cover and transfer to refrigerator until chilled, at least 2 hours and up to overnight.
  • Whisk 1 1/2 cups rhubarb puree into chilled custard. Transfer custard to an ice cream maker and freeze according to manufacturer's instructions. Meanwhile, place a 1 quart container in the freezer and freeze until ice cream is ready. Transfer ice cream to chilled container and stir in remaining 1/2 cup rhubarb puree. Serve ice cream immediately with honey-scented strawberries and whipped cream or for firmer ice cream, transfer to freezer for at least 4 hours and up to 3 days.

6 large eggs, separated
1 teaspoon vanilla extract
1 cup sifted all-purpose flour
1/2 teaspoon salt
3/4 cup sugar, divided
2 cups finely chopped pecans, divided
Whipped Honey Cream (recipe follows)
Garnish: Pecan halves

Steps:

  • Whip egg whites in the bowl of an electric mixer with 1/4 cup sugar until glossy and thick. Transfer to a bowl and set aside. In the same bowl of the electric mixer, beat egg yolks, salt and vanilla until lemon-colored, thick, and ribbons when beaters are lifted, about 10 minutes. Gradually beat in remaining 1/2 cup sugar and continue beating at medium speed for 5 minutes. With a spatula, stir in the flour, 1 cup of the chopped pecans, and the thick meringue. Preheat oven to 300 degrees. Butter and flour three 8-inch cake pans and divide batter between them. Spread batter to level and bake 20 minutes. Cool 10 minutes on a wire rack and turn out of pans onto racks to cool completely. Place one cake layer, upside down, on a cake platter and spread with honey cream. Top with second cake layer, upside down, and spread with honey cream. Top with third layer, upside down, and spread top and sides of cake with remaining honey cream, reserving 1 cup for the garnish. Lightly press remaining chopped pecans around the sides of cake Place reserved honey cream in a pastry bag or zip-lock plastic bag with a small corner discarded. Pipe 10 evenly-spaced mounds on top of the cake, and top each mound with a pecan half, rounded side up. Refrigerate until the honey cream sets up and is firm. To serve, cut into 10 slices between pecan-topped honey cream. Whipped Honey Cream: 1 cup (2 sticks) unsalted butter, room temperature 1/2 cup clover or other light honey 4 large egg whites 2 cups sifted powdered sugar Cream butter until light and fluffy. Blend in honey well. Whip egg whites to soft peaks, then gradually beat in powdered sugar. Fold in creamed butter-honey mixture, and whip until fluffy.

STRAWBERRIES WITH HONEY-ROSEMARY WHIPPED CREAM AND CANDIED ROSEMARY

1 pound strawberries, hulled and quartered (about 2 cups)
1 tablespoon orange liqueur
1/2 cup heavy cream
1 tablespoon honey
3 sprigs fresh rosemary
1 1/2 cups sugar
Vegetable oil, for oiling rack

Steps:

  • Combine the strawberries and orange liqueur in a bowl and set aside at room temperature for 30 minutes or cover and refrigerate for 1 hour.
  • Combine the cream, honey and 1 sprig of the rosemary in a small saucepan. Bring to a simmer over medium heat and cook for 2 to 3 minutes, stirring occasionally. Set aside to cool to room temperature, then refrigerate, covered, until well-chilled
  • Meanwhile, break the remaining rosemary into small sprigs and combine them in a small saucepan with 1/2 cup water and 1 cup of the sugar. Bring to a boil, stirring to dissolve the sugar, then remove the rosemary from the syrup using tongs and toss it in a bowl with the remaining 1/2 cup sugar. Transfer the candied rosemary to a lightly oiled cooling rack or silicon pad to dry.
  • Strain the chilled cream into a stainless steel bowl and whisk until soft peaks form. Divide the macerated strawberries between four bowls. Top each with two tablespoons of whipped cream and a sprinkling of candied rosemary. Serve.

HONEY WHIPPED CREAM

This is a wonderful complement to many desserts, like the Honey Pumpkin Pie, or the Honey Gingerbread. It is easy to make, with just a few ingredients, and you can customize it a bit by using orange or almond flavoring instead of vanilla. I used Southern Belle Honey when I made this and the peachiness was a nice touch. Fireweed Honey would provide a bit of butteriness to the mix. For something a bit different, you can try Meadowfoam Honey or MeadowMaple Honey, with their natural marshmallow or maple/marshmallow taste.
