3 cups Chex™ cereal (any variety)
3 cups checkerboard-shaped pretzels
3 cups sesame sticks
1 cup mixed nuts
3 tablespoons butter or margarine, melted
1/4 cup honey
2 tablespoons sesame seed, toasted*, if desired

Steps:

  • In large microwavable bowl, mix cereal, pretzels, sesame sticks and nuts.
  • In 2-cup microwavable measuring cup, microwave butter on High about 30 seconds or until melted. Stir in honey and sesame seed. Pour over cereal mixture; stir until evenly coated.
  • Microwave uncovered on High 5 to 6 minutes, stirring every 2 minutes, until mixture just begins to brown. Spread on waxed paper to cool. Store in airtight container.

The ancient Greek version of a power bar is "Pasteli"! Greek honey sesame bars is a snack made from honey and sesame seeds in only 10 minutes!

220g honey (7.5 oz.)
220g sesame seeds (7.5 oz.)
a pinch of salt
zest of 1 medium sized lemon

Steps:

  • To prepare this Greek honey sesame bars (Pasteli) recipe start by toasting the sesame seeds. Place a frying pan over high heat and add the sesame seeds. Toast them for 2-3 minutes until golden (not too brown). Remove the sesame seeds from the pan and set aside. Continue with the rest of the recipe quickly, so that the sesame seeds remain hot. Alternatively you can spread the sesame seeds in a pan and toast them in the oven at 180-190C (375F).
  • In the same pan add the honey and bring to a boil, until it starts to foam. Remove the foam using a spatula, turn down the heat to medium and let it simmer until its temperature has reached 125C/260F. If you don't have a thermometer, take a bowl of cold water and drip in a teaspoon of the honey syrup. Let it cool down for a few seconds then shape it into a small ball using your fingers. Take it out of the water and drop it on your work surface. If it sounds like it is solid, the honey syrup is done.
  • Its now time to add the remaining ingredients for your pasteli. Add a pinch of salt and the toasted sesame seeds and stir for about 10 minutes over medium heat, using a wooden spatula. The mixture should thicken considerably and stick to the spatula.
  • Remove the pan from the heat, add the lemon zest and stir.
  • Line a round pan (22cm/ 8.5 inch. diameter) with parchment paper and pour in the mixture. Be careful not to touch it, as it is very hot. Spread the mixture very well using a spoon.
  • Let the pasteli cool down for about 20 minutes and them cut into portions. If you let it cool completely then it would be harder to cut into pieces.

6 cups popped Orville Redenbacher's Gourmet Kettle Korn Microwave Popcorn
3 cups crispy corn cereal squares
1 cup mini pretzel twists
1 cup dry roasted mixed nuts
1/4 cup honey
3 tablespoons Fleischmann's Original stick margarine, melted
2 tablespoons sesame seeds, toasted

Steps:

  • Preheat oven to 300°F. Combine popcorn, cereal, pretzels and nuts in large bowl. Stir together honey, Fleischmann's and sesame seeds in small bowl. Pour over popcorn mixture. Stir well to coat all pieces. Pour into 15 by 10 inch shallow baking pan. Bake 30 minutes, stirring once after 15 minutes. Transfer to waxed paper to cool. Stir before serving to break up clumps. Store remaining mix in tightly sealed container up to 1 week.

Steps:

One of my dearest friends shared her mother's recipe with me for this tasty, lightly honey flavored popcorn. It is very easy and makes for a nice snack, especially enjoyed by children. Please only use freshly popped unseasoned popcorn - this really doesn't work well with the preseasoned microwave popcorn. Prep time assumes you have started with already popped popcorn.

1/2 cup honey
1/4 cup butter (4 ounces)
6 cups freshly popped unseasoned popcorn
1 cup shelled peanuts (salted or unsalted, your choice)

Steps:

  • Heat honey and butter in a small saucepan over fairly low heat until blended, stirring.
  • Remove from heat and let cool down a bit.
  • Meanwhile, preheat oven to 350°F and line a jelly roll pan or two smaller rimmed cookie sheets with parchment paper.
  • In a very large bowl, combine popped popcorn and nuts, then pour syrup over and combine so everything is evenly covered with syrup.
  • Spread in one layer into prepared pan (s) and bake about 10 minutes, sitrring after the first 5 minutes.
  • Remove from oven and let cool in pans.

The glaze in this recipe is a riff on the sweet-and-salty coating used in cereal-seaweed snack mixes found in Hawaii that bakes into an irresistible, super-crisp shell. 1/2 cup/113 grams salted butter (1 stick)
1/3 cup/105 grams light corn syrup
1/3 cup/67 grams granulated sugar
2 tablespoons soy sauce
2 teaspoons Worcestershire sauce
1/2 teaspoon kosher salt
1/4 to 1/2 teaspoon ground cayenne
4 cups/100 grams crunchy, salty snacks, such as cheese crackers, rice crackers, bagel chips, sesame sticks or a combination
3 cups/115 grams salted mini pretzels
6 cups/180 grams rice or corn Chex or Crispix cereal, or a combination
3 cups/29 grams store-bought or homemade salted popcorn
1 cup/125 grams roasted, salted cashews (or your favorite nut)

Steps:

  • Heat oven to 250 degrees. Lightly grease two rimmed baking sheets with vegetable oil. In a small saucepan, combine 3 tablespoons vegetable oil with the butter, corn syrup, sugar, soy sauce, Worcestershire, salt and cayenne. Cook, stirring occasionally, over medium heat until the mixture is smooth and syrupy, about 5 minutes. Set aside.
  • In a large bowl, combine all the ingredients for the snack mix, except the hemp seeds. Pour the syrup over the mix and toss with a wooden spoon to evenly coat all the pieces.
  • Divide the mix across the two prepared baking sheets. Sprinkle the hemp seeds evenly over the mixture on both baking sheets.
  • Bake until the mix is dry, about 1 hour and 15 minutes, tossing well every 15 minutes. The mixture will be dry but still sticky, and will set as it cools.
  • Let the mix cool completely before breaking it into pieces to serve. Store in an airtight container at room temperature for up to 1 week.

Steps:

  • Place popcorn in a large bowl. Lightly coat a rimmed baking sheet with cooking spray. In a small saucepan, combine sugar, honey, 2 tablespoons water, and a pinch of salt. Bring to a boil, then reduce heat to medium-high and cook, swirling occasionally but not stirring, until sugar is dissolved and mixture is deep amber in color, 7 minutes.
