Sweet and spicy - a great quick snack. Best to keep in an airtight container for about a week at room temp.

Number Of Ingredients 6

1/2 cup honey
1/4 cup raw sugar
1/2 teaspoon sea salt
1/4 teaspoon cayenne pepper
1 cinnamon stick
1 cup unbroken walnut halves

Steps:

  • Combine honey, sugar, salt, cayenne and cinnamon in a small pot over medium heat,.
  • Stir once then cook 3 minutes till sugar dissolved.
  • Add walnuts, stir to coat.
  • Simmer 5 - 7 minutes or until syrup is lightly browned.
  • Drain through a coarse sieve, discard cinnamon stick.
  • Place walnuts on a wire rack over a 19 X 29 cms rectangular slice pan.
  • Cook in moderate oven 180 C for about 8 minutes or until nuts have darkened slightly.
  • Remove from oven, cool on wire rack.
  • Nuts will crisp as they cool.

3 tablespoons honey
3 cups raw walnut halves
½ tablespoon white sugar
½ teaspoon salt
½ cup extra-virgin olive oil
6 tablespoons seedless blackberry jam
4 tablespoons good quality balsamic vinegar
4 tablespoons orange juice
2 teaspoons Dijon mustard
2 teaspoons honey
½ teaspoon dried basil
salt and freshly cracked black pepper to taste
8 cups fresh spinach
1 sweet apple, chopped
1 Granny Smith apple, chopped
1 cucumber, sliced and quartered
2 red bell peppers, chopped
4 green onions, chopped
1 cup crumbled feta cheese
12 ounces fresh blackberries

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
  • Place 3 tablespoons honey in a microwave-safe bowl. Microwave on Medium until honey liquefies, about 30 to 45 seconds. Add walnuts and stir to coat. Spread in one layer onto the prepared baking sheet and bake in the preheated oven until nuts have darkened slightly, 8 to 10 minutes. Remove from oven, sprinkle with 1/2 tablespoon sugar and 1/2 teaspoon salt, and stir to coat. Allow to cool.
  • Combine olive oil, blackberry jam, balsamic vinegar, orange juice, Dijon mustard, 2 teaspoons honey, basil, salt, and pepper in a lidded jar. Shake until vinaigrette is well combined and chill in the refrigerator until serving.
  • Combine spinach, sweet apple, Granny Smith apple, cucumber, bell peppers, green onions, feta, and cooled walnuts in a large bowl. Toss to combine. Carefully mix in blackberries. Drizzle with vinaigrette and toss.

3 ripe pears (about 1 1/2 lbs.), like Bosc, unpeeled
3 Tbs. unsalted butter, melted
1/4 cup honey
1/4 cup granulated sugar
1/2 cup chopped walnuts
1/2 cup crumbled blue cheese

Steps:

  • Preheat the oven to 375 degrees. Cut the pears in half, then slice a thin sliver from the rounded side of each half so the pears can rest flat. Scoop out the core of each pear half with a melon baller. It doesn't have to be pretty, as you will later be filling the cavities with cheese and nuts. Pour the melted butter into a 9"x13" baking dish. Whisk in the honey and sugar. Arrange the pears, cut side down, on top of the honey-sugar mixture. Roast the pears until they are tender, about 30 minutes. Meanwhile, in a medium dry skillet, lightly toast the chopped walnuts over medium heat for 4 to 5 minutes, tossing occasionally, until they are fragrant, lightly browned in spots and softly hissing. Remove to a plate to cool. Remove the pears from the oven and gently flip them, cut side up. Baste the pears with the honey syrup and return them to the oven for 10 minutes. Remove the pears again and fill each cavity with a generous tablespoon of blue cheese. Return the pears to the oven and bake until the cheese has melted, about 5 minutes more. To serve, spoon some of the caramelized syrup onto serving plates, set the warm pear halves on top and sprinkle with toasted walnuts. Any leftovers can be stored, covered, in the refrigerator for 1 to 2 days and reheated in the microwave.

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.

FOR THE CARROTS
8 large carrots cut into 3 x 1-inch pieces (like thick-cut french fries)
1/4 cup olive oil
1 teaspoon salt
1/2 cup honey
FOR THE TOPPING
1/4 cup chopped pitted prunes
1 tablespoon olive oil
1/4 cup chopped fresh mint
1/4 cup chopped toasted walnuts
1/2 teaspoon salt
Squeeze of fresh lemon juice

Steps:

  • Preheat the oven to 450°F.
  • Toss the carrots with the olive oil in a large bowl, and coat thoroughly. Add the salt and toss to coat.
  • Combine the honey and 1/2 cup warm water in a small bowl and stir until thoroughly mixed.
  • Lay the carrots out on a large rimmed baking sheet or roasting pan so that they are evenly spaced and do not touch one another. Drizzle with the honey mixture and put the carrots in the oven to roast.
  • Roast until all of the water has evaporated and the carrots are soft and beginning to brown, 35 to 40 minutes.
  • While the carrots are roasting, prepare the topping. Mix the prunes and olive oil in a small bowl. Work the mixture so that the prunes are thoroughly coated and not sticking together. Add mint, walnuts, salt, and lemon juice and mix thoroughly to combine.
  • Remove the carrots from the oven and arrange them on a serving dish. Spoon the topping over the carrots and serve.
