CRISPY ROASTED KALE

Number Of Ingredients 4

2 bunches curly kale (about 2 1/2 pounds)
1/4 cup good olive oil
Kosher salt and freshly ground black pepper
Fleur de sel

Steps:

  • Preheat the oven to 350 degrees F. Arrange 3 oven racks evenly spaced in the oven.
  • Lay each kale leaf on a board and, with a small sharp knife, cut out the hard stem. Tear large leaves in half. Place the kale in a large bowl of water and wash it well. Drain the kale and dry it in a salad spinner. Dry the bowl, and put the kale back in the bowl.
  • Toss the kale with the olive oil, 1 teaspoon kosher salt, and 1/2 teaspoon pepper. Divide the kale among 3 sheet pans or roast them in batches. If you put too much kale on one pan, it will steam rather than roast and will never become crisp. Roast for 15 minutes, until crisp. Sprinkle with fleur de sel and serve hot.

1/2 cup honey-roasted peanut butter, or any nut butter
1/4 cup olive oil
Kosher salt
5 cups baby kale

Steps:

  • Preheat the oven to 325 degrees F. Line 2 large baking sheets with parchment paper.
  • Whisk the peanut butter, oil and salt to taste together in a large bowl. Add the kale and gently massage the peanut mixture into the kale leaves.
  • Transfer the leaves to the prepared baking sheets and arrange in a single layer. Bake until the kale is golden, 15 to 20 minutes, rotating the pans about halfway through the baking time. The kale will finish getting crispy as it cools. Serve and enjoy!

This is my Dad's recipe and could not be easier. Just remember, turn off the oven and don't take them out or even open the door for 1 hour.

1 pound raw peanuts, in shells

Steps:

  • Preheat oven to 500 degrees F (260 degrees C).
  • Arrange peanuts in a single layer on a cookie sheet, and place in the preheated oven.
  • Turn oven off. Leave peanuts in oven for 1 hour without opening door. Serve warm or at room temperature.
