LITE FRUIT SALAD WITH HONEY POPPY SEED DRESSING BY PAULA DEEN

Lite Fruit Salad With Honey Poppy Seed Dressing by Paula Deen image

Another recipe from her cooking show. I found it made more dressing than I had salad for and it was a little on the sweet side so next time I'll add more salad ingredients and cut down on the honey, and I suppose you could even reserve the juice from the can of mandarin oranges and use that for the orange juice in the dressing.

HONEY POPPY SEED DRESSING

This is an easy dressing to make that is great over fruit. Just put it in a jar, shake, and it's ready to go. A little goes a long way, and really enhances most fruits, especially oranges, grapes and apples.

APPLE AND TOASTED PECAN SALAD WITH HONEY POPPY SEED DRESSING

Apple and Toasted Pecan Salad With Honey Poppy Seed Dressing image

This recipe is from my friend Joan and is one of our favorites. I am guessing on the amounts for the salad ingredients. You can proportion them to taste or based on how many people you are feeding. The dressing recipe makes enough for two good-sized salads. You can make this a main dish salad by adding cooked chicken.

1/2 c honey (more may be added after tasteing)
SALAD
1 romaine lettuce, sliced
1 c strawberries, fresh, sliced
1 large cucumber, sliced
1 c bag dole chopped "Asian blend" (it contains red cabbage sliced, broccoli slaw, shredded carrots, kale, snap peas and green cabbage all chopped)
1 or 2 peeled and chopped mangos
1/3 c chopped walnuts (or any nuts you want or not)
2 sliced hard boiled eggs (if you want)

Steps:

  • 1. Wash, rinse and chop all salad ingredients. Set aside in the refrigerator.
  • 2. Make your hard boiled eggs, if you are using them. Set aside and put in salad before applying the dressing.
  • 3. Mix all your salad ingredients in a medium sized bowl. Taste and decide how much more honey you would like in it. Refrigerate until a few minutes before using. I use a serving bowl and small ladle for the salad, each person can use what they like. If it's the whole salad, I put the dressing on just before everyone sits down. This salad is also excellent with adding in grilled chicken slices, crab meat, shrimp cut up and anything you feel you would like to try on top of it. Enjoy.

POPPY SEED-HONEY DRESSING

Poppy Seed-Honey Dressing image

I found this recipe in the 'Joy of Cooking' cookbook. I was looking for a poppy seed and honey dressing recipe that was like a dressing that I loved at the Bittersweet Cafe in Kent, WA. This dressing is delicious. 'Joy of Cooking' recommends using a salad of fruits and greens, but a simple garden salad is a perfect mate as well. The step with the immersion blender is optional and was not in the cookbook, but I found it helpful to keep the ingredients from seperating and it pureed the shallots perfectly. I hope you enjoy as much as I do.
