SOUTHERN PECAN CANDY

Unlike traditional pralines, this recipe is spread in a pan, then cut into squares. It is loaded with pecans and has the same sweet taste as pralines. The candy was in my mother's recipe collection and dates back to 1941.-June Moffett, Santa Ana, California

Number Of Ingredients 6

1 teaspoon butter plus 1/4 cup butter, cubed
3 cups sugar, divided
1 cup half-and-half cream
1/8 teaspoon baking soda
1/2 teaspoon vanilla extract
1 pound chopped pecans, toasted

Steps:

  • Line a 13-in. x 9-in. pan with foil and grease the foil with 1 teaspoon butter; set aside. In a large heavy skillet over medium-low heat, cook 1 cup sugar until melted. Do not stir. Reduce heat to low; cook for 5 minutes or until golden brown., In a large saucepan, combine cream and remaining sugar. Slowly pour in cooked sugar. Cook and stir over medium heat until a candy thermometer reads 236° (soft-ball stage). Transfer to a large bowl; stir in butter and baking soda. Cool until mixture reaches 110°., Add vanilla. Beat until smooth and thickened, about 2 minutes. Stir in pecans. Quickly spread into prepared pan; cool completely. Using foil, lift candy out of pan. Discard foil. Store candy in an airtight container.

To make hot, fresh honey roasted pecans, the secret is to thinly coat pecans with honey, and then roast them. It's just that easy!

1 cup pecan halves, or halves and pieces
1 tablespoon honey
Pinch of fine salt

Steps:

  • Gather the ingredients.
  • Preheat oven to 350 F. Line an oven safe dish or a baking sheet with parchment paper.
  • In a medium bowl, combine the honey and pecans until thoroughly coated. Sprinkle with a pinch of salt and toss once or twice more.
  • Bake for up to 15 minutes. Take care not to over-caramelize the nuts, which will taint the honey flavor.
  • Cool at least 10 minutes, and serve. Store in a sealed container for up to six months.
  • Enjoy!

An easy Honey-Glazed Pecans recipe.

1/3 cup honey, warmed
1 cup pecans
1 tablespoon sugar

Steps:

  • Preheat oven to 350°F.
  • Stir together honey and pecans, tossing to coat well. Spread pecans in 1 layer in a shallow baking pan and sprinkle with sugar. Bake in middle of oven 15 minutes, then stir and bake 5 minutes more.
  • Transfer while still warm to a sheet of parchment paper or foil and, working quickly, separate pecans with a fork. Cool completely (about 1 hour) and remove nuts from parchment, breaking up any large pieces.

This recipe was taken from epicurious.com and was originally used as a pumpkin pie garnish....but it is so amazing and so easy by itself that I just HAD TO share it here! I think it would be a PERFECT addition to any holiday tray. CAUTION: This is very addictive. it is common to consume mass quantities in one sitting. be warned!! :)

6 tablespoons sugar
3 tablespoons honey
3 tablespoons unsalted butter
1 pinch salt
1 cup pecan halves

Steps:

  • Place large piece of foil on work surface.
  • Stir sugar, honey, butter and salt in heavy medium skillet over medium-low heat until sugar dissolves, butter melts and syrup comes to simmer.
  • Add pecans
  • Cook until syrup turns deep caramel color and bubbles thickly.
  • stir nuts occasionally to coat (about 9 minutes)
  • Scrape onto foil
  • WORKING QUICKLY, separate nuts with spoon.
  • Cool completely.
  • Break candy apart into desired sizes (NOTE: this is why the yield/servings is a guesstimate).
  • Place in airtight container.
  • You may now eat a piece of heaven -- or five pieces -- (if you haven't done so by now!).
  • Enjoy!

1/4 cup honey

Steps:

  • Heat oven to 350 degrees. Place pecans in an even layer on baking sheet. Roast 12 to 15 minutes. Remove from baking sheet and place in large bowl.
  • In saucepan combine honey and pecans. Cook over medium high heat, stirring until mixture simmers and foams (about 4-6 min).
  • Transfer to a baking sheet (lined with wax paper for easy clean up) and separate with fork. Cool completely. Store in air tight container.

1 tablespoon water
2 ¼ cups pecan halves
½ cup white sugar
¼ teaspoon salt
1 ½ teaspoons ground cinnamon

Steps:

  • Preheat oven to 225 degrees F (105 degrees C). Lightly grease a rimmed baking pan.
  • Combine the egg white and water in a mixing bowl; beat until fluffy. Fold in the pecans to coat evenly. Combine the sugar, salt, and ground cinnamon in a shaker or cup with a lid. Dust the pecans evenly with the sugar mixture. Spread the nuts over the prepared pan.
  • Bake in preheated oven until toasted and fragrant, stirring every 15 minutes, about 1 hour. Cool on pan, and store in an airtight container.

4 large eggs, room temperature
1 cup chopped pecans
1 cup light corn syrup
1/4 cup sugar
1/4 cup packed brown sugar
2 tablespoons butter, melted
1 teaspoon vanilla extract
1/2 teaspoon salt
1 sheet refrigerated pie crust
TOPPING:
3 tablespoons butter
1/3 cup packed brown sugar
3 tablespoons honey
1-1/2 cups pecan halves

Steps:

  • Preheat oven to 350°. In a large bowl, combine eggs, pecans, corn syrup, sugars, butter, vanilla and salt. Unroll crust into a 9-in. pie plate; flute edge. Add filling. Bake for 30 minutes. , In a small saucepan, melt butter over medium heat. Stir in brown sugar and honey until combined. Stir in pecan halves until coated. Spoon over pie. , Bake until a knife inserted in the center comes out clean, 15-20 minutes longer. Cool completely on a wire rack. Refrigerate leftovers.
