1 ¼ cups quick oats
1 cup white whole wheat flour
1 ½ teaspoons baking powder
1 ½ teaspoons ground cinnamon
½ teaspoon kosher salt
½ cup honey
¼ cup unsweetened applesauce
4 tablespoons unsalted butter, melted and cooled
1 large egg
1 teaspoon vanilla extract
⅓ cup dark chocolate chips
¼ cup chopped walnuts

Steps:

  • Whisk oats, flour, baking powder, cinnamon, and kosher salt together in a large bowl.
  • Combine honey, applesauce, butter, egg, and vanilla extract in a medium bowl. Whisk until blended. Pour into the bowl with the flour mixture; stir until just combined. Fold chocolate chips and walnuts into the batter.
  • Place batter in the refrigerator and let chill at least 30 minutes or up to 3 days.
  • When ready to bake, preheat the oven to 350 degrees F (175 degrees C) and place a rack in the center. Line a large, rimmed baking sheet with parchment paper or a silicone baking sheet.
  • Remove chilled dough from the refrigerator. Let sit for 5 to 10 minutes if very stiff.
  • Drop dough onto the prepared baking sheet in 1 1/2-inch balls using a cookie scoop or spoon, leaving 1 inch of space around each. Gently flatten each cookie with your fingers to 3/4-inch thick.
  • Bake in the preheated oven until golden, firm around the edges, and set on top, 9 to 10 minutes.
  • Place the baking sheet on a wire rack. Let cool on the baking sheet for 2 minutes before transferring cookies to the wire rack to cool completely.

1/2 cup brown sugar
1/4 cup honey
1 egg

Steps:

1 1/2 cups rolled oats
1/2 teaspoon baking soda
1/2 teaspoon baking powder

1/2 cup honey
1/2 cup oil (corn, grapeseed or olive)
1 tablespoon molasses
1 egg (beat with 1 Tbsp Water)

Steps:

  • 1.In a large bowl, mix all the dry ingredients together.
  • 2.In a medium bowl, mix all the wet ingredients together. Hint: when measuring out the honey, spray the measuring cup with oil or baking spray--your honey won't stick).
  • 3.Mix the wet stuff with the dry stuff. Add the raisins and walnuts and mix. If the mixture seems too wet, add a bit of flour. If it isn't binding together very well, you may wish to add an egg white.
  • 4.COOL the mix for 20 minutes in the fridge.
  • 5.Preheat the oven to 335 degrees (lower temperature due to the honey in the recipe which will burn more easily).
  • 6.Drop by teaspoonfuls onto your baking sheet (I recommend lining the baking sheet with parchment paper). Press down with a fork to ensure even cooking.
  • 7.Bake for about 15 - 20 minutes or until golden on the bottom of the cookie. The cookies freeze very well and make a great snack! Enjoy.

2 1/2 cups whole wheat pastry flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt

1 1/4 cups honey
2 -3 eggs, beaten
1 teaspoon vanilla
1 ounce unsweetened chocolate, melted
1 1/2 cups rolled oats
1 cup chopped walnuts (or half of each, optional) (optional) or 1 cup shredded coconut (or half of each) (optional)
1 cup chocolate chips (or to taste!)

Steps:

  • Cream together butter and honey.
  • Add beaten eggs, vanilla, and melted chocolate. Mix well.
  • In a separate container, mix together all dry ingredients except the oatmeal, coconut, and nuts. (You may wish to sift the flour.).
  • Add the dry ingredients to the wet ingredients and mix well.
  • Add the coconut, nuts, and chocolate chips.
  • The mixture will probably be a bit more gooey than your standard cookie recipe -- don't worry.
  • Place dough in the fridge while you preheat the oven to 350 degrees.
  • Drop by spoonfuls onto a greased cookie sheet.
  • Bake for about 14 minutes.

1 tsp baking soda
1 tsp baking powder
1 tsp ground cinnamon
1/2 tsp salt

1 1/2 c brown sugar (i use dark, but light is fine), packed
1 Tbsp honey
1 tsp orange extract
2 large eggs
3/4 c craisins (dried, sweetened cranberries)
1/2 - 3/4 c mini cinnamon chips (i use hershey's)
2 c oats, quick cooking (not instant)
1/2 c chopped walnuts; or any nut you prefer (optional)

Steps:

  • 1. Preheat oven to 350 degrees.
  • 2. In a medium sized bowl, sift together the flour, baking soda, baking powder, cinnamon and salt. Set aside.
  • 3. In a large bowl, cream together the butter and sugar until fluffy.
  • 4. Add the honey and orange extract. Beat until fluffy.
  • 5. Add the eggs, one at a time, and beat until fully incorporated.

  • Prepare 2 baking sheets by lining with parchment paper or silpat. In a large mixing bowl, cream together butter and sugars. Add spices, salt, and baking soda, mix to combine. These cookies are by far the bast oatmeal raisin cookies I have ever tried. The Shredded Wheat gives it an extra chewiness that I always try to find in this type of cookie. I came up with this idea on accident. I was making oatmeal raisin cookies and I didn't have enough oats. So rather than run to the store, I decided to improvise. Best moment of laziness I'll ever have.

Number Of Ingredients 11

1 cup butter (two sticks softened)
2 large eggs
2 teaspoons vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
1 teaspoon cinnamon
1 cup rolled oats (Not Instant)
3 cups of honey shredded wheat (Coarsely Ground)
1 1/2 cups raisins

Steps:

  • Step One: Preheat oven to 350 degrees Fahrenheit. In a mixer blend together butter, eggs, and vanilla.
  • Step Two: In a separate bowl mix together flour, baking soda, baking powder, salt, and cinnamon. Add to butter and egg mixture in the mixer and mix well.
  • Step Three: Measure out about three cups of Honey Shredded Wheat and put it in a plastic bag. With a rolling pin crush the cereal until the biggest pieces are about the size of a rolled oat.
  • Step Three: Add the crushed Honey Shredded Wheat and the rolled oats into the mixer with the rest of the ingredients. Mix Well.
  • Step Four: Mix in raisins.
  • Step Five: Scoop out two tablespoons of dough at a time for each cookie. Form into a ball shape with your hands. Set only nine balls of dough to each tray.
  • Step Six: Put them in the oven on the middle rack and bake for about 12 minutes. Let them cool on a tray for a few minutes before you take them off. Make sure to lay the cookies flat once you scoop them off the tray until they have completely cooled off.
  • Enjoy!

1 tablespoon unsalted butter, melted
1/4 cup canola oil
1/2 cup honey
1 large egg
1/4 cup smooth unsalted almond butter
1/2 teaspoon vanilla extract
1/4 cup nonfat dry milk powder
1 cup whole wheat pastry flour (or 1/2 cup each all-purpose and whole-wheat flour)
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1 3/4 cups rolled oats
1/2 cup raisins

Steps:

  • Preheat the oven to 350*F. Mist 2 baking sheets with cooking spray. Beat the butter, canola oil, honey, egg, almond butter and vanilla extract in a large bowl with a mixer until combined.
  • In another bowl, whisk the dry milk, flour, baking soda, cinnamon and salt. Add the flour mixture to the butter mixture and stir to combine. Stir in the oats and raisins.
  • Scoop tablespoonfuls of batter about 2 inches apart onto the prepared baking sheets. Bake until golden, about 12 minutes. Let the cookies cool 2 minutes on the baking sheets, then transfer tho a rack to cool completely. Store in a loosely covered container for up to 3 days.

3/4 cup honey
2/3 cup natural peanut butter, optional
1/2 cup coconut oil
1/3 cup unsweetened cocoa powder
1 1/2 teaspoon vanilla extract
1/4 teaspoon salt

Steps:

  • Line 2 baking sheets with parchment paper. In a medium saucepan over medium-high heat, combine honey, peanut butter and coconut oil, stirring until everything blends together smoothly. Stir in oats, cocoa powder, vanilla and salt and mix until everything is fully incorporated and coated. Use a spoon or small ice cream scoop to drop cookies down onto parchment-lined baking sheets, then place in freezer for at least 15 minutes to set. Store in an airtight container either in the fridge or freezer (depending on how you like them) and enjoy!

Very easy to make. Lightly sweet, these cookies are high in protein and fiber, and tasty without any refined sugar, so you get a boost of energy to get you through the morning. My teenagers grab these for breakfast when they are rushing out the door. Makes a filling snack as well. You can substitute your favorite dried fruit and nuts in place of the raisins and walnuts. I have also added 1/2 cup chocolate chips on occasion.

1/4 cup vanilla protein powder
