Steps:
- Place potatoes in a large kettle; cover with water. Bring to a boil. Reduce heat; cover and cook until tender, 15-20 minutes. Drain and cool. Cut potatoes into 3/4-in. cubes., In a large bowl, combine the potatoes, eggs, celery and onion. In a small bowl, combine the remaining ingredients. Pour over potato mixture and stir gently to coat. Cover and refrigerate for 6 hours or overnight.

- Cut any larger potatoes in half, then cook until tender.
- Drain and cool.
- Put the baking on a baking tray and grill until crisp.
- Cool and break up into pieces.
- Thinly slice the spring onions on the diagonal.
- Mix together the potato, bacon and spring onions in a bowl.
- To make the mustard and honey dressing, put all ingredients into a screw top jar and shake until well mixed.
- Pour over the potato salad.

- 1. Preheat oven to 375 degrees. Lay bacon on cookie sheet and bake for 7 minutes. Flip and bake for another 7 minutes or until crispy. Move bacon to paper towels.
- 2. Using same cookie sheet with bacon grease on it. Lay potatoes cut side down. Bake for 15 minutes. Flip and bake for another 15 minutes.
- 3. Combine vinegar, Dijon mustard, honey, garlic, salt and pepper. Whisk in olive oil slowly to combine. Coarsely chop bacon. Gently toss potatoes with bacon, dressing and parsley.
