This is no plain old grilled chicken breast sandwich. Brushing on a seasoned honey-mustard baste turns the ordinary into something special.

1/4 cup Dijon mustard
2 tablespoons honey
1 teaspoon dried oregano leaves
1/8 teaspoon ground red pepper (cayenne)
4 boneless skinless chicken breast halves (1 pound)
4 whole-grain sandwich buns, split
4 slices tomatoes
Leaf lettuce

Steps:

  • Heat coals or gas grill for direct heat.
  • Mix mustard, honey, oregano and red pepper. Brush on chicken.
  • Cover and grill chicken 4 to 6 inches from medium heat 15 to 20 minutes, brushing frequently with mustard mixture and turning occasionally, until juice of chicken is no longer pink when centers of thickest pieces are cut. Discard any remaining mustard mixture.
  • Serve chicken on buns with tomato and lettuce.

2 tablespoons honey
1 teaspoon dried oregano
1 teaspoon water
1/4 teaspoon garlic powder

Steps:

  • Heat gas or charcoal grill. In small bowl, mix mustard, honey, oregano and red pepper. Brush on both sides of chicken.

1 tablespoon mayonnaise
1 baguette
2 ounces sliced Swiss cheese

This is a nice, healthy way to eat chicken breast. It's pretty tasty too! I toast the buns by opening them up on a cookie sheet and spraying them with butter flavor cooking spray and setting under the broiler for a few minutes, but watch them closely, they don't take long and they go from toasty brown to burnt black quick!

1 tsp dried oregano leaves
1/4 tsp garlic powder
1/8 tsp ground red pepper
1 tsp canola oil
4 boneless, skinless chicken breasts, split lengthwise
8 thin slices tomato
lettuce

Steps:

  • 1. Mix mustard, honey, oregano, garlic powder and olive oil. Brush on chicken.
  • 2. Heat coals or gas grill. Cover and grill chicken 4 to 6 inches from medium heat. 7 minutes per side, brushing frequently with honey mustard sauce.

From Taste of Home. Quick and easy! We enjoy these sandwiches with their tangy honey-mustard sauce. I usually make a bit of additional sauce and mix it with some mayo to spread on the sandwich buns. I also use the lesser amount of cayenne pepper to allow for the little taste buds in our family and often grill the chicken instead of broiling it. Either way, we think they're tasty!

In the past, I have found that when I pound the chicken breast flat to an even thickness instead of just using them "as they are" I come closer to the recipe times listed.
