This ham tastes very much like the famous honey baked ham but costs much less, and there's no need to fight the crowds at holiday time. You can even buy the ham presliced to make it easier and more like the original. It is very good. (I do this while preparing the rest of the meal in the kitchen so that I don't forget to baste!)

1 (5 pound) ready-to-eat ham
¼ cup whole cloves
¼ cup dark corn syrup
2 cups honey
⅔ cup butter

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Score ham, and stud with the whole cloves. Place ham in foil lined pan.
  • In the top half of a double boiler, heat the corn syrup, honey and butter. Keep glaze warm while baking ham.
  • Brush glaze over ham, and bake for 1 hour and 15 minutes in the preheated oven. Baste ham every 10 to 15 minutes with the honey glaze. During the last 4 to 5 minutes of baking, turn on broiler to caramelize the glaze. Remove from oven, and let sit a few minutes before serving.

1/2 cup clover or orange-blossom honey
1 tablespoon finely grated orange zest, plus 2 tablespoons fresh juice
1 tablespoon finely grated fresh ginger
1/2 teaspoon ground cloves
Freshly ground pepper
1 smoked bone-in spiral half ham (about 8 pounds; we love D'Artagnan Berkshire Pork's for a special occasion)

Steps:

  • Preheat oven to 325°F with a rack in lower third. Stir together honey, orange zest and juice, ginger, cloves, and 1/2 teaspoon pepper. Wrap ham, fat-cap-side up, tightly in parchment-lined foil. Place on a rimmed baking sheet or in a small roasting pan.
  • Bake 1 hour. Unwrap, leaving foil under ham to catch juices. Brush with some of the glaze; continue baking, uncovered, basting with more glaze every 15 minutes, until heated through, 45 minutes to 1 hour more. Brush with remaining glaze; let cool slightly. Serve warm.

1 1/4 cups sweet marsala wine or 1 1/4 cups madeira wine
1/2 cup packed brown sugar
1 tablespoon ground coriander
1/2 teaspoon ground allspice
1 (10 lb) ham, half
20 whole cloves
cooking spray

Steps:

  • Preheat oven to 350º.
  • Combine first 4 ingredients in a small saucepan; bring to a boil. Reduce heat, and simmer until Marsala mixture is reduced to 2/3 cup (about 8 minutes). Remove from heat.
  • Trim fat and rind from ham. Score outside of ham in a diamond pattern; stud with cloves. Place ham on a broiler pan coated with cooking spray. Brush ham with 1/4 cup Marsala mixture.
  • Bake at 350° for 1 hour. Baste with 1/4 cup Marsala mixture; bake an additional 1 1/2 hours or until thermometer registers 140°.
  • Baste with remaining Marsala mixture, and bake an additional 10 minutes. Remove from oven; let stand 15 minutes before slicing.

Ham dressed in pineapple rings and maraschino cherries is a holiday classic, burnished with a glossy glaze made with pineapple juice, honey and brown sugar. If you like sweet and salty, you'll love this show-stopping centerpiece!

One 9- to 10-pound bone-in fully-cooked smoked ham (butt or shank half)
1 tablespoon whole cloves, optional
Two 20-ounce cans sliced pineapple
20 maraschino cherries
2 cups honey
2 cups light brown sugar

Steps:

  • Let the ham sit at room temperature for about 30 minutes.
  • Preheat the oven to 325 degrees F.
  • Trim off any skin from the ham. Use a sharp paring knife to score through the fat in a diagonal crosshatch pattern without cutting through to the meat. Push the cloves into the ham, if using, placing them at the intersections of the cuts. Put the ham, flat-side down, on a rack in a roasting pan.
  • Drain the pineapples, reserving the juice. Arrange the sliced pineapple all over the ham, securing with toothpicks. Add a maraschino cherry to the center of each pineapple slice and secure with a toothpick.
  • Pour 1/4 inch water in the bottom of the pan and tent the ham with foil.
  • Roast until an instant-read thermometer inserted in the thickest part of the ham (avoiding bone) registers 130 degrees F, about 2 hours 30 minutes (or about 15 minutes per pound).
  • Meanwhile, combine the honey, brown sugar and reserved pineapple juice in a large saucepan set over medium heat. Simmer, stirring occasionally, until thickened, syrupy and reduced to about 3 cups, 25 to 30 minutes. Set aside.
  • Increase the oven temperature to 425 degrees F.
  • Uncover the pan and carefully brush a third of the glaze all over the ham. If the water in the roasting pan has evaporated, add more. Bake the ham for 15 minutes more. Brush with another third of the glaze and bake for 15 minutes more. Brush the remaining glaze over the ham and cook until the glaze is shiny and the skin is dark golden brown and crispy, about 15 minutes more. Let rest for 15 minutes.
