PAN-SEARED TUNA WITH AVOCADO, SOY, GINGER, AND LIME

2 big handfuls fresh cilantro leaves, finely chopped
1/2 jalapeno, sliced
1 teaspoon grated fresh ginger
1 garlic clove, grated
2 limes, juiced
2 tablespoons soy sauce
Pinch sugar
Sea salt and freshly ground black pepper
1/4 cup extra-virgin olive oil
1 (6-ounce) block sushi-quality tuna
1 ripe avocado, halved, peeled, pitted, and sliced

Steps:

  • In a mixing bowl, combine the cilantro, jalapeno, ginger, garlic, lime juice, soy sauce, sugar, salt, pepper, and 2 tablespoons of olive oil. Stir the ingredients together until well incorporated.
  • Place a skillet over medium-high heat and coat with the remaining 2 tablespoons of olive oil. Season the tuna generously with salt and pepper. Lay the tuna in the hot oil and sear for 1 minute on each side to form a slight crust. Pour 1/2 of the cilantro mixture into the pan to coat the fish. Serve the seared tuna with the sliced avocado and the remaining cilantro sauce drizzled over the whole plate.

1 1/2 lb tuna steaks, 3/4 to 1 inch thick
1/4 cup lime juice
2 tablespoons olive or vegetable oil
2 teaspoons finely chopped gingerroot
1/2 teaspoon salt
1/8 teaspoon ground red pepper (cayenne)
2 cloves garlic, crushed
Lime wedges, if desired

Steps:

  • If fish steaks are large, cut into 6 serving pieces. In shallow glass or plastic dish or resealable food-storage plastic bag, mix remaining ingredients except lime wedges. Add fish; turn to coat. Cover dish or seal bag and refrigerate, turning fish once, at least 1 hour but no longer than 24 hours.
  • Heat coals or gas grill for direct heat. Remove fish from marinade; reserve marinade. Cover and grill fish about 4 inches from medium heat 11 to 15 minutes, brushing 2 or 3 times with marinade and turning once, until fish flakes easily with fork. Discard any remaining marinade. Serve fish with lime wedges.

2 limes juiced
1/4 c olive oil
4 clove garlic minced
1/4 c honey
2 12 oz ahi tuna steaks
salt and pepper

Steps:

  • 1. In a bowl whisk together the lime juice, olive oil and garlic. Lay the tuna steak out on a plate and season with salt and pepper. Place half of the glaze mix over the tuna and let marinate for 30 minutes in the fridge.
  • 2. whisk the honey into the remaining glaze. On a cast iron grill pan or outside grill get it hot place the tuna steak on the grill. Brush with the honey mixture. Sear 3 minutes turn and brush again with the honey mixture. turn in 3 minutes brush with honey mixture. keep turning and brushing until desired doneness.

1/4 cup light olive oil
1 tablespoon Old Bay Seasoning
1 tablespoon lime juice
1 tablespoon honey
1 1/2 teaspoons basil leaves
1 lb tuna steak (works well with swordfish steaks too)

Steps:

  • Combine first 5 ingredients in shallow dish or self-closing plastic bag. (I prefer to use a shallow dish so that the honey doesn't stick in one place -- easier to mix I think -- ).
  • Add tuna steaks; turn to coat. Refrigerate 20 minutes. Turn occasionally.
  • Grill or broil 8 to 10 minutes per inch of thickness (or until fish flakes easily with a fork.)
  • NOTE: Baste 1 or 2 times with leftover marinade during cooking.
  • Discard leftover marinade.

1 lb tuna steak
1/4 cup olive oil, plus
2 tablespoons olive oil
1/4 cup lime juice
1/8 cup balsamic vinegar
2 -3 garlic cloves, minced
1 tablespoon fresh ginger, minced
1/4 cup cilantro, chopped plus
2 tablespoons cilantro, chopped
1/4 cup honey

Steps:

  • In a med bowl, mix 1/4c olive oil, lime juice, vinegar, garlic, ginger, and 1/4c cilantro. Add tuna and turn to coat evenly. Let marinate at least 1/2, but the longer, the better.
  • In a small bowl, mix honey, 2 tbsp olive oil, and 2 tbsp cilantro. Set aside.
  • Remove tuna from marinade, but reserve marinade. Over med to low grill temp, grill tuna for 6-7 minutes per side, basting frequently with marinade. When fish is almost done, brush both sides with honey glaze, remove from grill, and serve.

1 medium pink grapefruit
1/4 cup lemon juice
1/4 cup lime juice
2 tablespoons honey
1 tablespoon snipped fresh dill or 1 teaspoon dill weed
1 teaspoon crushed red pepper flakes
2 teaspoons minced fresh gingerroot
4 tuna steak or fillets (6 ounces each)

Steps:

  • Peel and section grapefruit over a bowl, reserving juice. Refrigerate half of the grapefruit sections. Add remaining grapefruit to the reserved grapefruit juice. Add the lemon juice, lime juice, honey, dill, red pepper flakes and ginger. Remove 1/4 cup for basting; cover and refrigerate. Pour remaining marinade into a large resealable plastic bag; add the tuna steaks. Seal bag and turn to coat; refrigerate for 30 minutes, turning once., Drain and discard marinade. Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Steps:
