20 -25 shrimp
1 lime, juice and zest of
2 garlic cloves, minced
2 tablespoons fresh cilantro, chopped
1 teaspoon olive oil
sea salt and freshly cracked pepper, to taste
1 lime, juice of
3 tablespoons vegetable oil
1 tablespoon honey
sea salt and freshly cracked pepper, to taste
1 garlic clove, minced
1 dash cayenne pepper

Steps:

  • Combine all ingredients in a large zip lock bag and marinate in the refrigerator for 1 hour.
  • Soak wooden skewers in water for a few minutes. Skewer the shrimp on the wooden skewers then place on the grill over medium heat. Cook for a few minutes on each side or until pink and juicy.
  • Remove skewers from grill and serve with the honey lime dipping sauce. Enjoy.
  • Honey Lime Dipping Sauce: Add all the dressing ingredients in a small bowl and whisk to combine. Set aside.

1 cup barbecue sauce
1/4 cup honey
1/4 cup lime juice (about 1 1/2 limes)
1/4 cup canola oil
2 teaspoons Dijon mustard
Pinch red chile flakes
Pinch chile powder
Pinch cayenne pepper
4 chipotles in adobo
3/4 cup all-purpose flour
1 teaspoon kosher salt
1 teaspoon fresh cracked black pepper
1/4 teaspoon cayenne pepper
1/4 teaspoon chili powder
12 ounces rock shrimp (about 1 1/2 cups)
Canola oil, for frying
1 cup cooked rice noodles, optional, for garnish
6 lime wheels, optional, for garnish
4 tablespoons Mango Jicama Salsa, recipe follows
1 pinch chile threads, optional, for garnish
Lotus chips, optional, for garnish
2 lime wedges, for service
1 cup jicama, diced into 1/8-inch pieces
1 cup ripe mango, diced into 1/8-inch pieces
1/4 cup 1/8-inch diced red onion
2 teaspoons minced jalapeno
1 tablespoon chopped fresh cilantro
1 tablespoon sweet chili sauce
1/4 teaspoon sea salt

Steps:

  • For the honey chipotle lime sauce: In a food processor, puree all the ingredients until combined and add to a saucepan to heat through over medium heat.
  • For the shrimp: While the sauce is reducing, combine the flour with the salt, pepper, cayenne and chili powder and stir to combine. Add the shrimp in batches to the flour and toss gently to coat evenly.
  • Preheat a couple inches canola oil to 350 degrees F in a deep skillet and add the shrimp. Cook until golden brown, turning as needed, 3 to 4 minutes. Work in batches to avoid crowding. Remove from the oil and drain on a paper towel-lined plate.
  • Divide and add the rice noodles to the bottom of 2 martini glasses. Top the noodles with 3 lime wheels each and set aside until service.
  • Add the shrimp to the reduced sauce and toss gently to coat evenly. Remove from the sauce with a slotted spoon or tongs and place in the prepared martini glasses. Garnish with Mango Jicama Salsa, chile threads, lotus chips and a lime wedge, if desired. Serve immediately.
  • Toss the jicama, mango, onions and jalapeno gently in a bowl with the remaining ingredients and refrigerate for 20 to 30 minutes.

2 tablespoons honey
2 tablespoons golden brown sugar
1 tablespoon fresh lime juice
1/2 vanilla bean, split lengthwise
5 1/2-inch-thick rounds peeled cored pineapple
2 medium bananas, peeled

  • Place butter, honey, brown sugar, and lime juice in small saucepan. Scrape in seeds from vanilla bean; add bean. Bring to simmer over medium heat, whisking until smooth. DO AHEAD Can be made 2 days ahead. Cover and refrigerate. Remove vanilla bean and rewarm sauce before using.

So what you start with is very thin steak, and what you end up with is large thin slices of char-flavored meat that resembles roast beef. The acid in the lime marinade is very complementary to the char flavor of the meet.   • TO PREPARE STEAK: Remove the steak and season with salt and pepper.

2 Tbsp extra virgin olive oil
1 recipe Browned Butter Lime Sauce, recipe follows
Browned Butter Lime Sauce
6 Tbsp salted butter, diced
3 Tbsp fresh lime juice
1 clove garlic, minced
1/2 tsp salt
1/2 tsp freshly ground black pepper

Steps:

  • Working in batches of two salmon fillets at a time (or using two skillets, because you don't want to overcrowd the salmon when cooking it on the stove-top so it cooks more evenly), place salmon fillets on a cutting board or plate and sprinkle 1 tsp flour over each side of the salmon fillets and spread flour to evenly coat. Sauce:
2 tablespoons honey
2 teaspoons fresh lime juice
1/2 teaspoon grated lime rind
Quesadillas:
1 cup thinly sliced peeled firm ripe peaches (about 2 large)
1 tablespoon chopped fresh chives
1 teaspoon brown sugar
3 ounces Brie cheese, thinly sliced
4 (8-inch) fat-free flour tortillas
Cooking spray
Chive strips (optional)

Steps:

  • To prepare sauce, combine first 3 ingredients, stirring with a whisk; set aside. To prepare quesadillas, combine peaches, 1 tablespoon chives, and sugar, tossing gently to coat. Heat a large nonstick skillet over medium-high heat. Arrange one-fourth of cheese and one-fourth of peach mixture over half of each tortilla; fold tortillas in half. Coat pan with cooking spray. Place 2 quesadillas in pan; cook 2 minutes on each side or until tortillas are lightly browned and crisp. Remove from pan; keep warm. Repeat procedure with remaining quesadillas. Cut each quesadilla into 3 wedges; serve with sauce. Garnish with chive strips, if desired.

Top Secret Honey-Lime Chicken Wing Sauce ! image

My best friend and I are culinary students and came up with this recipe while we were in culinary school. It really goes with everything... Chicken... French Fries... Honesty, I would put this s**t on everything... : ) I was to point out that most of these ingredients can be added to taste. The sauce is AMAZING and now the only wing sauce I use.

8 -12 ounces hot sauce
1/2 cup butter
2 tablespoons fresh cilantro (or more to taste)
3 garlic cloves (I usually like 4)
3 fresh limes
1 tablespoon lime zest
1/4 cup brown sugar
3 tablespoons honey
salt and pepper
red pepper flakes or cayenne pepper

Steps:

  • in a sauce pan saute garlic, cilantro, and half cup of butter until soft, then add bottle of hot sauce.(i use a hot sauce that also doubles as a buffalo wing sauce because i like the extra vinegar, my fave is Franks) - juice three limes using at least a tablespoon of lime zest, and the juice with pulp. add brown sugar, honey, salt and pepper(s) - (s&p to taste).
  • simmer on stove until you get a deep red color, then pour over chicken wings or dip chicken fingers. THIS IS DELICIOUS ! The real secret of this recipe is getting that clear-red result after the simmer.
