SPICY HONEY LIME CHICKEN
The combination of honey (or maple syrup), soy sauce, sriracha, lime, garlic and ginger in this spicy honey lime chicken recipe is wicked. Delicious hot, room temp or cold.

- MAKE MARINADE/SAUCE: Whisk all marinade ingredients together in a small bowl. Or blend them in a food processor.
- MARINATE CHICKEN: Pour half the marinade (about 1/2 cup) into a sealed zipper bag or container and add chicken. Marinate for 30 minutes at room temperature or 6-12 hours in fridge. Tip: if marinating overnight, I leave out lime juice and increase zest so it doesn't 'cook' the chicken. Glaze: The reserved 1/2 cup marinade will be used for glazing/basting. (Optional but suggested: Mix 1/2 teaspoon cornstarch into reserved marinade and microwave for 1 minute to make a glaze-like consistency. I do this). Set aside.
- PREPARE GRILL: Scrape grill and spray grill with oil (or dip paper towel in oil and rub on grill). Heat grill to medium-high heat. If using wood skewers, soak them for 30 minutes beforehand to avoid burning. Note 3.
- GRILL CHICKEN SKEWERS: Skewer marinated chicken pieces onto skewers and pat dry (important). Discard the marinade used for marinating. Lightly spray chicken with oil to further avoid sticking. Grill on all sides until chicken cooks to a golden brown (you'll need to turn chicken a couple of times), for 9-12 minutes in total (depending on thickness and how tightly packed the skewers are), basting once or twice with the honey lime glaze. Instant thermometer will read 160F/71C. Rest chicken, loosely covered for 5 minutes.
- SERVE: If you have any leftover sauce, drizzle it on the chicken or warm it in microwave for 30 seconds and pass it around. Sprinkle chicken with cilantro or parsley and serve with lime wedges if desired. Serve hot or at room temperature.

HONEY-GLAZED CHICKEN AND SHALLOTS
The combination of a sweet glaze, tangy shallots and pan-roasted chicken makes this a quick but decadent one-pan meal. Caramelizing shallots first, then tossing them with sherry vinegar gives them a pickled but syrupy bite. A little heat from a spicy chile and some freshness from parsley leaves balance this flavorful dish. Serve right off the stove, over cooked grains or alongside a crisp salad.

- Pat the chicken dry and season all over with salt. Heat 1 tablespoon oil in a large skillet over medium. Add the shallots and cook, turning frequently, until lightly caramelized on all sides, about 5 minutes. Transfer the shallots to a medium bowl and set aside.
- Add the remaining 1 tablespoon oil to the skillet, and raise the heat to medium-high. Place the chicken skin side down and sear without moving until the skin is golden brown, about 10 minutes. Turn and cook the other side until lightly browned, about 5 minutes.
- Reduce heat to medium-low, and add 1/4 cup water to the skillet. Use a spatula or tongs to loosen any stuck bits. Stir the honey, lime juice, garlic and chile into the liquid around the chicken pieces. Cover with a lid or foil, and cook until the meat is cooked through, about 8 minutes. Uncover, raise the heat to high and cook until the sauce is thickened, about 2 minutes more.
- Toss the shallots with the sherry vinegar and parsley, and season with salt. Serve the chicken with the dressed shallots and spoon the pan sauce over everything.
HONEY-LIME GLAZED CHICKEN THIGHS
This isn't my recipe, I found it surfing online, but it sounded so delicious I had to give it a try. It didn't disappoint. The mix of all the different flavors with the juicy chicken was out of this world! A perfect summer treat.

- 1. 1. In a small bowl, whisk the lime juice and 1 teaspoon of the lime zest together with the orange juice, soy sauce and honey. Transfer mixture to a Ziploc® Brand Storage Bag with the Smart Zip™ Seal and add the chicken thighs. Let the chicken marinate in the refrigerator for one hour.
- 2. 2.Preheat the oven to 400 degrees F. Heat the oil in a large, oven-safe nonstick skillet over medium-high heat. Remove the chicken from the marinade, reserving marinade. Sprinkle the chicken with salt and pepper. Place the chicken pieces in the skillet and cook for about 6 minutes, turning once. Remove the thighs and set aside. Add the shallots to the pan and cook over medium heat for 2 minutes, until softened. Add the reserved marinade and bring to a boil. Cook for about 5 minutes, until the liquid begins to get a bit syrupy. Add the chicken pieces and transfer the pan to the oven. Cook for 20 minutes, turning the pieces once.
- 3. 3. Transfer the chicken pieces to a serving platter. Pour the glaze over the chicken and sprinkle with the remaining 1 teaspoon of lime zest. Garnish with lime wedges.
- 4. Make the marinade for these chicken thighs ahead of time, and dinner's as easy as tossing them in the oven or on the grill. Serve them with a cool potato salad or pasta salad for a satisfying, no-fuss meal.
