I visited a coffee shop in Hartford on a cold winter day and ordered their honey lemon ginger tea. It was tart, sweet, full of flavor, and warmed me from head to toe. The proprietor was nice enough to give me a rough description of her recipe. After a few tries at home, I came up with this close version.

4 cups water
¾ cup brown sugar
¼ cup grated ginger root
3 tea bags
2 lemons, juiced
3 tablespoons honey

Steps:

  • Stir water, brown sugar, and grated ginger root together in a saucepan; bring to a boil, reduce heat to medium-low, and cook at a simmer for 20 minutes.
  • Remove saucepan from heat and add tea bags; steep tea to desired strength, 3 to 5 minutes. Remove and discard tea bags.
  • Stir lemon juice and honey into the tea; strain into a pitcher.

Ginger-Anise Tea With Lemon and Honey image

Got this from Middle Eastern Recipe (http://www.ummah.com/family/recipes.html). It's especially nice when you have a sore throat or generally feel cruddy, but is also delicious anytime. The ginger really comes through in a good way. Smells good too. Make sure to pour it through a fine strainer as you want to rid the tea of seeds and depending on your ginger you might get bits of ginger settling in the bottom of the cup, which makes for a very potent last sip!

1 cup water
1 teaspoon anise seed
1/4 teaspoon ground ginger
1 tablespoon lemon juice
1 tablespoon honey

Steps:

  • Bring all the ingredients to a boil in a small pan then let simmer for about 5 minutes. Pour through a strainer into a mug. For me this ends up making either a little more than one mug or enough for two small mugs.

2 1/2 inches fresh ginger, peeled and halved lengthwise, and cut crosswise into 1/4 - inch thick slices
4 cups fresh cold water
2 herbal tea bags
1 lemon, juice of, large
2 -4 tablespoons honey, to taste

Steps:

  • In a covered saucepan, bring the ginger and water to a boil, then reduce heat to low. Simmer, covered, on low heat for 20 minutes.
  • Remove from heat, add the tea bags, cover and let steep for 5 to 10 minutes.
  • Strain the tea, discarding the tea bags and saving the ginger for reuse.
  • Add the lemon juice and honey to taste, reheat and serve hot.
