LAVENDER LEMON SORBET
My dear friend --Rita-- recently sent me some wonderful lavender so I wanted to find some really great recipes to showcase this treat! This one hits the spot! Plan ahead though because this needs time to cool!

Steps:
- In a medium saucepan over medium heat mix all ingredients together and bring to a boil.
- Reduce heat to low and simmer for 10 minutes.
- Refrigerate 4 hours or until well chilled.
- Strain mixture and pour into an ice cream maker. Freeze according to manufacturer's directions.
- Note: I read Rita's review of another Lavender Sorbet and learned that she used ice cubes to create the sorbet. You can try that here if you like, reducing the water by half and chilling the cooked mixture. Then add ice cubes and blend. Add more cubes if you think it needs it. If you try this method please let me know so I can give more accurate directions. Thanks!

LAVENDER HONEY
Spoon warmed lavender honey over Figs and Raspberries for a fragrant dessert.

- Heat honey in a saucepan over medium heat until hot. Stir in lavender. Let cool. Refrigerate, covered, overnight.
- Heat lavender honey over medium heat until heated through. Pour through a fine sieve into a bowl; discard lavender.
HOMEMADE LAVENDER HONEY
In Provence, lavender honey is made by the bees that frequent the wild purple-budded bushes growing near their hives. Be aware that this homemade version, infused with lavender flowers, needs to stand for 24 hours before being used. If you purchase dried lavender flowers, be sure that they are culinary quality. Steps:
- Warm the honey in a small saucepan over low heat. Stir in the lavender. Remove from the heat, cover, and let stand at room temperature for 24 hours.
- Warm the honey again over low heat until it is liquid enough to pour freely. Strain through a wire sieve (I place a clean paper coffee filter inside the mesh strainer), into a clean jar. Cool and cover.
- Store in the refrigerator for up to 6 months. Serve at room temperature.

HONEY & LAVENDER SORBET
Steps:
- 1. Melt together water and honey until completely mixed. 2. Leave to cool. 3. Churn syrup. After 15-20 minutes add lavender flowers. 4. Churn/freeze until set.
