Cooking spray
2 cups coarsely chopped graham crackers (from 8 graham cracker sheets)
2 cups uncooked quick-cooking oats
0.75 cup dried cranberries
0.5 cup chopped dry-roasted peanuts
0.25 cup unsweetened shredded coconut
0.25 teaspoon kosher salt
0.5 cup honey
0.25 cup packed light brown sugar
0.5 cup creamy peanut butter
0.5 teaspoon vanilla extract

Steps:

  • Lightly coat an 8-inch square baking dish with cooking spray.
  • In a large heatproof bowl, stir chopped graham crackers, oats, cranberries, peanuts, coconut, and salt.
  • In a small saucepan over medium-high, bring honey and brown sugar to a boil, stirring constantly, and then remove from heat. Stir in peanut butter and vanilla until smooth.
  • Pour the honey-and-peanut butter mixture into the graham cracker mixture bowl and stir until coated.
  • Press the mixture into the prepared baking dish, chill for 30 minutes, and then cut into squares.

NO-BAKE S'MORES BARS

Nonstick cooking spray, for the pan
4 tablespoons salted butter
One 10-ounce bag mini marshmallows
One 12-ounce bag semisweet chocolate chips
Pinch of kosher salt
9 graham crackers, broken into pieces
1/4 cup mini chocolate-coated candies
2 tablespoons rainbow sprinkles

Steps:

  • Line a 9-inch square baking pan with waxed paper, overlapping all 4 sides. Spray with cooking spray.
  • Place a nonstick pan over low heat and add the butter. When melted, add two-thirds of the marshmallows and cook, stirring, until the marshmallows have melted and combined with the butter, about 3 minutes. Next, fold in the chocolate chips and stir until they are melted too. Add the salt and half of the broken graham crackers and stir so the cracker pieces are incorporated into the chocolate marshmallow mixture but not broken up too much.
  • Tip the mixture into the prepared pan and press it into the pan with a wooden spoon. Sprinkle over the remaining graham crackers and marshmallows, pressing them down with your hands so they set into the base. Next, add the coated candies and sprinkles and press them down.
  • Allow to set for 1 hour before removing from the pan and cutting into bars. Or you can chill for 10 minutes and slice if you're in a hurry!

I invented this easy no-bake recipe because of a bake sale at work, combined with my boredom with the usual rice cereal version. It was one of the most requested cookies, and helped me make enough for a down payment on my home! Top these with chocolate chips, and they taste just like s'mores!

½ cup peanut butter
¼ cup butter
1 (16 ounce) package miniature marshmallows
¼ cup honey
1 (12 ounce) box honey graham cereal

Steps:

  • Spray a 9x13 inch baking pan with nonstick spray; set aside.
  • Melt the peanut butter, butter, and marshmallows in a saucepan over medium heat, stirring until smooth. Stir in the honey. Remove from heat; stir in the honey graham cereal. Press the mixture evenly into the prepared pan with a greased spatula. Allow to cool; cut into squares to serve.

1 cup peanut butter (smooth or chunky)
1 cup white corn syrup
1/2 cup brown sugar, packed
1/4 cup white sugar
1 teaspoon vanilla
6 cups Honey Graham cereal (or use 6 cups corn flakes cereal)
1 cup semi-sweet chocolate chips
2/3 cup salted peanuts (or use unsalted)

Steps:

  • In a large heavy saucepan over medium heat combine the peanut butter, corn syrup, brown sugar and white sugar; cook stirring until smooth, then add in vanilla.
  • Quickly add in the cereal, chocolate chips and peanuts; mix until combined.
  • Using hands press the mixture into a 13 x 9-inch dish.
  • Cool completely before slicing.

⅓ cup white sugar

Steps:

  • Mix crumbs, butter, and sugar in a bowl. Press mixture into a 9-inch pie plate. Use a spoon to press the crumbs up the side of the plate and the side of your hand to press down on the top.
  • Refrigerate at least 1 hour before filling.
