This dense and deeply figgy cake, adapted from Eli's Table in Manhattan, gets its complex flavor from a combination of fresh figs and fig jam, seasoned generously with cinnamon, cardamom and ginger. - For the cupcakes: Preheat the oven to 325 degrees F. Line muffin pans with 24 muffin liners. In a medium bowl, whisk the flour, baking soda, baking powder and salt until well combined. In the bowl of an electric mixer with the paddle attachment, cream the butter, oil and brown sugar. Add the eggs, one at a time, scraping the bowl as needed. - In a medium sized mixing bowl stir together the warm milk, yeast, and teaspoon of honey.
- Let stand for 5 minutes or until foamy.
- Add the egg, 1/4 cup honey, and buttermilk and stir until combined.
- Stir in the salt and flour until the dough forms a ball and pulls away from the edges.
- Place in a greased bowl, flipping dough once to coat both sides, cover with plastic wrap and let stand for 1 hour.
- Place dough in the refrigerater and let rise over night.
- In the morning, in a small bowl, stir together all the filling ingreidents and set aside.
- Remove the dough from the refrigerator and punch down.
- Roll the dough out on a lightly flour surfuse until it is an 1/8-1/4 of an inch thin RECTANGLE.
- Spread the butter cinnamon mixture evenly over the top of it and roll it long ways in a jelly roll form.
- Cut off the ends and then cut into 1 inch slices.
- Place slices slightly apart in a 9"-13" baking dish, cover with plastic wrap, and let rise for about 1-1 1/2 hours.
- Preheat oven to 350F and baking for 10-15 minutes or until lightly golden brown.
- In the meantime, in a small bowl, stir together the cream cheese and the powdered suger then stir in the buttermilk, set aside.
- After baking the cinnamon rolls, remove them from the oven and let them stand for 10 minutes before spreading on the frosting.
- **Youcan make an orange frosting for these buns by changing the buttermilk to 3 tablespoons orange juice and adding 1/2 teaspoon finely grated orange zest.
- Serving Suggestions: Coffee, tea, oatmeal, coke (hehehe).
APPLE BUTTER ROLLS WITH HONEY MARZIPAN FROSTING
Steps:
- For the rolls: Combine the milk, yeast and 1 teaspoon sugar in a bowl and swirl together. Let sit until foamy on top, about 5 minutes.
- Combine the cinnamon, salt, cardamom and 3 1/2 cups flour in a large bowl or the bowl of a stand mixer fitted with the dough hook. Whisk together the eggs, oil, honey and vanilla in a medium bowl. Stir the yeast mixture and oil mixture into the dry mixture and then knead, either on a work surface or with the dough hook, adding up to 1 cup more flour as needed, until the dough is smooth and slightly sticky, 15 minutes by hand and 7 to 10 minutes by mixer. Place in an oiled bowl, cover with plastic wrap and let rise until doubled in size, 1 1/2 to 2 hours.
- For the filling: Spray a 9-by-13-inch baking dish with cooking spray and set aside.
- Turn the dough out onto a clean surface and roll it out, dusting with flour as needed to prevent sticking, into an 18-by-12-inch rectangle. Spread it with the apple butter and sprinkle with the cinnamon and almond paste. Roll up tightly starting from a long end (so that it results in an 18-inch-long roll), and pinch the edges to seal. Cut into 12 rolls and place in the prepared baking dish. Cover with plastic wrap and refrigerate overnight. (Or cover loosely with plastic wrap and let rise at room temperature for 1 hour, then go right to preheating the oven.)
- When ready to bake, remove the rolls from the refrigerator and loosen the plastic wrap. Let sit at room temperature until puffy, 1 to 2 hours.
- Preheat the oven to 350 degrees F.
- Beat the egg with a splash of water in a cup. Remove the plastic wrap from the baking dish and brush the rolls with the egg wash. Bake until the rolls are lightly browned and have an internal temperature of 190 degrees F, 35 to 40 minutes.
- For the frosting: Meanwhile, blend the blanched almonds in a food processor, scraping the sides occasionally, until creamy and spreadable, 5 to 10 minutes. Add the honey, almond extract, salt and lemon zest and continue to blend (it may clump together at this point, and that's okay) as you drizzle in the milk. Blend until creamy. (This can be made the day before and stored in an airtight container in the fridge.)
- When the rolls come out of the oven, spread them with the frosting, sprinkle with the sliced almonds and serve.

- Grease a 9x13 pan.
- Freeze the Bit-O-Honey Bars for 10 minutes.
- In a food processor, chop candy bars coursely. Set aside.
- In a large mixing bowl, using an electric mixer, combine oil and eggs, mix for 30 seconds on high.

This recipe was in a cooking magazine. They showed it on top of bread and a cake. It looked awesome. I have not made it myself. This was used with a Honey Pumpkin cake.

Steps:
- Combine gelatin and 2 tablespoons water and let set for at least 10 minutes.
- Bring honey and sugar + 2 tablespoons water to a boil in a small saucepan.
- Reduce heat to low and simmer 5 minutes.
- Remove from heat and let cool 3 minutes.
- Stir 2 tablespoons of honey mixture into gelatin mixture until dissolved.
- Whisk remaining honey syrup along with salt and cinnamon into this mixture.
- Strain into a medium size bowl and beat, using an electric mixer on high speed until double in volume and completely cool, about 10 minutes.
- Add butter, 2 tablespoons at a time, while continuously beating.
- Stir in vanilla and use immediately of chill.
- Rewhip before spreading on cake or bread.
