SUNNY'S HAM AND CHEESE BISCUITS WITH HONEY DIJON BUTTER
Steps:
- For the biscuits: Preheat the oven to 400 degrees F.
- Place the self-rising flour in a large bowl and toss with the cheese and ham. Grate the butter into the flour mixture. Pour in the buttermilk and mix gently with a wooden spoon. Once the dough comes together, turn it out onto a floured surface, divide it into 8 equal balls and pat them down lightly.
- Put the balls in a cast-iron pan or on a baking sheet sprayed with cooking spray. Bake until brown, 20 to 25 minutes.
- For the butter: In a bowl, mix together the butter, honey and mustard.
- When the biscuits are done, brush some of the butter over the tops. Serve the biscuits with the remaining butter and the preserves.

- Place ham on a greased rack in a shallow roasting pan. Bake, uncovered, at 325° for 50-60 minutes. Combine honey, mustard and sugar; brush about 3 tablespoons over ham. Bake 10-15 minutes longer or until a thermometer reads 140° and ham is heated through. Stir into remaining glaze; heat through and serve with the ham.

- 1. Preheat oven according to directions on ham. 2. Stud with the whole cloves about 1 - 2 inch spacing. Place ham in roasting pan. 3. In a small saucepan, combine brown sugar, pineapple juice, honey, orange juice, orange zest, ground cloves, and Dijon mustard. Bring to a boil, reduce heat, and simmer for 5 to 10 minutes. 4. Brush glaze over ham, and bake according to directions on ham in the preheated oven. Baste ham every 10 minutes with the honey glaze. During the last 5 minutes of baking, turn on broiler to caramelize the glaze. Remove from oven, and let sit a few minutes before serving.

- Place ham in 4 to 6 quart slow cooker. Add apple juice. Mix brown sugar, honey and mustard; spread over ham.
- Cover and cook on Low 6 to 8 hours or until ham is hot and glazed.
- Remove ham from slow cooker; place on cutting board. Cut ham in half; reserve one half. Cut remaining half into slices; place on serving platter to serve.
- Note: Cut reserved ham into 1/2 inch cubes. Place 1 1/2 cups cubes in a resealable plastic fod storage bags. Seal and label bags with date of preparation. Refrigerate both bags up to 3 days or freeze up to 1 month for later use. If frozen, thaw in refrigerator befoore using.
