1 1/2 pounds boneless (skinless, chicken thighs (You can also use chicken breasts))
2 Tablespoons olive oil
6 garlic cloves (divided (3 minced, 3 whole) *)
1/4 cup honey
3 Tablespoons stone ground dijon mustard
salt and pepper to taste
green onions or fresh parsley for garnish

Steps:

  • In a medium sized skillet over medium heat add 1 tablespoon olive oil. Add 3 whole garlic cloves. Salt and pepper the chicken thighs and cook each side until the temperature reads 165 degrees. Remove and set aside on a plate.
  • Add 1 tablespoon olive oil and 3 garlic cloves minced. Cook until tender and whisk in honey and mustard. Add the chicken back to the pan and heat for a couple of minutes more. Garnish with green onions or fresh parsley.

2 tablespoons honey
2 tablespoons Dijon mustard
1 tablespoon extra-virgin olive oil, plus more for grill
1/2 teaspoon kosher salt
Freshly ground black pepper
4 boneless skinless chicken breasts, butterflied
1 lime, cut into wedges

Steps:

  • In a small bowl, add the honey, mustard, 1 tablespoon of oil and salt and pepper, to taste. Mix well and put the mixture into a large plastic resealable bag. Add the chicken, seal the bag and shake to incorporate. Refrigerate at least 2 hours.
  • Preheat the grill to medium heat.
  • Remove the chicken from the bag and arrange it on a well-oiled grill. Cook until a nice crust forms on both sides, about 4 to 5 minutes per side. Let the chicken rest on a serving platter for 10 minutes before serving. Serve with lime wedges.

1/4 cup honey
2 tablespoons dijon mustard
2 tablespoons whole grain Dijon mustard
2 tablespoons apple cider vinegar
1 tablespoon soy sauce (or tamari or omit for gluten-free)
2 cloves garlic, minced/grated
salt and pepper to taste
1/2 cup chicken broth (or water)
1 pound boneless skinless chicken breasts (or thighs)
2-3 sprigs of rosemary

Steps:

  • Mix the honey, mustards, vinegar, soy sauce, garlic, salt, pepper, and broth, and toss with the chicken, place it all in a baking dish with the chicken in a single layer before placing the sprigs of rosemary in between the chicken.
  • Bake, covered, in a preheated 350F/180C oven until the chicken is cooked through, about 25-35 minutes.
  • Serve topped with the sauce from the pan!

1 pinch salt
½ cup all-purpose flour
2 (6 ounce) skinless, boneless chicken breast halves
2 tablespoons olive oil
¼ cup dry white wine
¼ cup lemon juice
¼ cup cold unsalted butter, cut into pieces
2 tablespoons capers, drained
2 lemon wedges

Steps:

  • Mix together salt and flour in a small dish or plastic bag, then coat chicken and shake off excess. Heat olive oil in a skillet over medium-high heat. Shake excess flour from chicken, then brown in hot oil until both sides are golden-brown, and the inside has turned white and firm, 3 to 4 minutes per side.
  • Remove the chicken, and set aside in a warm place. Pour white wine into the skillet, and allow to boil as you dissolve the cooked bits from the bottom of the pan. Add the lemon juice, and allow to come to a boil, cook for a few minutes until reduced by half.
  • Sprinkle the cubed butter into the boiling sauce. Swirl and shake the pan vigorously to dissolve the butter, thus thickening the sauce. The butter must never come to rest, or the sauce will separate and become oily. Once the butter has completely incorporated, remove from heat and stir in capers.
  • To serve, pour lemon-caper sauce over the chicken, and serve with a wedge of lemon.

The original recipe states that it makes enough sauce for 4 chicken breasts, but I've found that it can easily be stretched to serve with at least 6 decent-size chicken breasts.

4 boneless skinless chicken breast halves
1/3 cup Dijon mustard
1 tablespoon honey
3 tablespoons apricot preserves
1 teaspoon ground ginger

Steps:

  • Preheat oven to 350 degrees.
  • Lightly spray the bottom and sides of a 10-inch casserole dish (or any baking pan large enough to hold the chicken breasts). Place the chicken breasts in the coated baking pan.
  • With a wooden spoon, mix the mustard, honey, apricot preserves, and ginger in a small mixing bowl until well blended. Brush (or spoon) the mustard mixture over the tops of the chicken breasts. Bake the chicken, uncovered, for 30-45 minutes (depending on thickness of the breasts).
  • After 15 minutes of baking turn over each chicken breast, spoon sauce over them, and continue baking for the remaining 15 minutes, or until breasts are thoroughly cooked.
  • Transfer the chicken breasts to individual plates. Spoon the sauce over each chicken breast serving.
