Sour Cream and Lemon Honey Corn Muffins image

Number Of Ingredients 10

6 tablespoons unsalted butter, melted, plus more for greasing
2 large eggs
1 cup light sour cream
1/4 cup milk
1/3 cup honey
1 lemon, zested and juiced
1/2 cup all-purpose flour
1 1/4 cups cornmeal
1 teaspoon baking powder
2 teaspoons salt

Steps:

  • Preheat oven to 350 degrees F. Grease your muffin tray.
  • Mixture is prepared in 2 parts - wet and dry. First prepare the wet mixture. In a large mixing bowl whisk together eggs, sour cream, melted butter, milk, honey, lemon zest and juice. In a separate large mixing bowl combine all dry ingredients. Once the dry mixture is blended begin to add the wet mixture by folding into the dry mixture. As soon as both mixtures are blended spoon the mixture into the prepared muffin tray. Fill each cup about 2/3 to 3/4 full. Bake muffins for about 20 to 25 minutes, or until the top has a golden crust. When ready, remove from the oven and let them cool slightly. Remove from tray and serve.

1/2 cup flour
1/2 cup cornmeal
4 1/2 teaspoons brown sugar (or Splenda brown blend)
1/2 teaspoon baking powder
1/4 teaspoon salt
1/4 teaspoon baking soda
1 dash pepper
1 egg
1/3 cup sour cream
1/4 cup 2% low-fat milk
1 tablespoon canola oil
1 (8 3/4 ounce) can whole kernel corn, drained
1 jalapeno pepper (minced, and use 1/2 if less of a kick is wanted)
1/4 cup butter
2 tablespoons honey

Steps:

  • Preheat oven to 400°F.
  • In a small bowl combine first 7 ingredients.
  • In another bowl, combine the egg, sour cream, milk and oil. Stir into dry ingredients just until moistened. Stir in jalapeño and corn.
  • Coat muffin cups with nonstick spray, fill 2/3s full with batter. Bake at 400°F for 14-16 minutes until tester comes out clean.
  • In a small bowl combine honey and butter; serve with warm muffins.

1 pint ripe blueberries
1/4 cup honey
8 homemade or store bought corn muffins, sliced in 1/2 horizontally

Steps:

  • Place ingredients, except muffins, in a food processor and process until smooth. Place in a ramekin, cover and refrigerate for at least 2 hours.
  • Place the muffins, cut-side down on the grill and grill until golden brown. Remove from the grill and slather with blueberry butter.

There's an interesting country story behind this recipe. I've worked at our local Farm Bureau office for 15 years. A friend on our women's committee developed it to give people new ideas for using farm commodities. I especially like preparing these muffins for my family on a winter night-along with a big pot of chili, they make for a very hearty meal! My husband and I have a farrow-to-finish hog operation here on the farm where he was born. We also grow several crops. One son farms with us, we have a grown daughter and our other son just graduated from high school.

2 cups all-purpose flour
2 cups yellow cornmeal
1 cup nonfat dry milk powder
1/4 cup sugar
2 tablespoons baking powder
1 teaspoon salt
1/2 teaspoon baking soda
2-2/3 cups water
1/2 cup butter, melted
2 large eggs, lightly beaten
1 tablespoon lemon juice
HONEY BUTTER:
2 tablespoons honey
1/2 cup butter, softened

Steps:

  • In a large bowl, combine the flour, cornmeal, milk powder, sugar, baking powder, salt and baking soda. In a small bowl, combine the water, butter, eggs and lemon juice; stir into dry ingredients just until moistened. , Fill greased muffin cups two-thirds full. Bake at 425° for 13-15 minutes or until a toothpick inserted in the center comes out clean. Cool for 5 minutes before removing from pans to wire racks. , In a small bowl, beat honey and softened butter until smooth. Serve with warm muffins.

2 Tbsp sugar
1 1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 c buttermilk or sour cream
2 eggs
1/4 c butter, melted
HONEY BUTTER:
1/2 c butter, softened
1/3 c honey
1 tsp grated orange peel

Steps:

  • 1. Prepare Honey Butter. Preheat oven to 400 degrees. Grease or paper line 12 muffin cups.
  • 2. Combine flour, cornmeal, sugar, baking powder, baking soda, and salt. Whisk buttermilk or sour cream into dry ingredients; stir until just moistened.
  • 3. Fill muffin cups 2/3 full with batter.

Dry: 1 cup flour, 1 cup yellow cornmeal, 1/2 cup sugar, 1 tablespoon baking powder, 1tsp salt.
Wet: 2 eggs whisked, 1 cup milk, 1/4 cup honey.

Steps:

  • Ok recipe: melt half a stick of butter, while that is melting, separate dry from wet ingredients. Dry: 1 cup flour, 1 cup yellow cornmeal, 1/2 cup sugar, 1 tablespoon baking powder, 1tsp salt. Mix dry. Wet: 2 eggs whisked, 1 cup milk, 1/4 cup honey. Mix well and combine with dry. By now, butter melted, add to batter and just hand stir well. Add to muffin tins, bake at 400 for fifteen minutes. The whole thong start to finish was 20 min. Literally.
