These oatmeal cookies with honey have no raisins!

1 ¼ cups quick oats
1 cup white whole wheat flour
1 ½ teaspoons baking powder
1 ½ teaspoons ground cinnamon
½ teaspoon kosher salt
½ cup honey
¼ cup unsweetened applesauce
4 tablespoons unsalted butter, melted and cooled
1 large egg
1 teaspoon vanilla extract
⅓ cup dark chocolate chips
¼ cup chopped walnuts

Steps:

  • Whisk oats, flour, baking powder, cinnamon, and kosher salt together in a large bowl.
  • Combine honey, applesauce, butter, egg, and vanilla extract in a medium bowl. Whisk until blended. Pour into the bowl with the flour mixture; stir until just combined. Fold chocolate chips and walnuts into the batter.
  • Place batter in the refrigerator and let chill at least 30 minutes or up to 3 days.
  • When ready to bake, preheat the oven to 350 degrees F (175 degrees C) and place a rack in the center. Line a large, rimmed baking sheet with parchment paper or a silicone baking sheet.
  • Remove chilled dough from the refrigerator. Let sit for 5 to 10 minutes if very stiff.
  • Drop dough onto the prepared baking sheet in 1 1/2-inch balls using a cookie scoop or spoon, leaving 1 inch of space around each. Gently flatten each cookie with your fingers to 3/4-inch thick.
  • Bake in the preheated oven until golden, firm around the edges, and set on top, 9 to 10 minutes.
  • Place the baking sheet on a wire rack. Let cool on the baking sheet for 2 minutes before transferring cookies to the wire rack to cool completely.

1 cup whole wheat flour
1 1/2 cups rolled oats
1/2 teaspoon baking soda
1/2 teaspoon baking powder

1 tablespoon cinnamon (or more as desired)
1/2 teaspoon nutmeg (optional)
1/2 cup honey
1/2 cup oil (corn, grapeseed or olive)
1 tablespoon molasses
1 egg (beat with 1 Tbsp Water)

  • 1.In a large bowl, mix all the dry ingredients together.
  • 2.In a medium bowl, mix all the wet ingredients together. Hint: when measuring out the honey, spray the measuring cup with oil or baking spray--your honey won't stick).
  • 3.Mix the wet stuff with the dry stuff. Add the raisins and walnuts and mix. If the mixture seems too wet, add a bit of flour. If it isn't binding together very well, you may wish to add an egg white.
  • 4.COOL the mix for 20 minutes in the fridge.
  • 5.Preheat the oven to 335 degrees (lower temperature due to the honey in the recipe which will burn more easily).
  • 6.Drop by teaspoonfuls onto your baking sheet (I recommend lining the baking sheet with parchment paper). Press down with a fork to ensure even cooking.

BROWN BUTTER HONEY COOKIES

1 cup light brown sugar
1 cup granulated sugar
1/4 cup honey
2 large eggs, at room temperature
2 teaspoons vanilla extract
3 1/4 cups all-purpose flour
1 1/2 teaspoons baking soda
Flakey sea salt, for topping
Creamy Honey Dip, recipe follows
Sprinkles, for topping cookies
1 cup whole milk Greek yogurt
2 tablespoons honey, plus additional for drizzling
1/2 teaspoon pumpkin pie spice

Steps:

  • Place the butter in a pot over medium heat. Once melted, reduce the heat to low and allow the butter to just barely simmer. Cook until the milk solids that sink are golden brown, about 6 minutes. Set aside to cool until the butter is still liquid, but not hot.
  • Preheat the oven to 350 degrees F. Line 2 baking sheets with parchment paper.
  • Combine the brown butter, sugars and honey in a stand mixer fitted with the paddle attachment. Beat on low speed until combined and a homogenous mixture is formed, about 2 minutes. (The mixture will look grainy.) Add the eggs one at a time, beating after each addition, until incorporated. Add the vanilla.
  • Whisk together the flour and baking soda in a small mixing bowl. Add the flour mixture to the sugar mixture and beat just until incorporated, scraping down the sides and bottom of the bowl as needed.
  • Using a small scooper, scoop 1 1/2-tablespoon mounds onto the prepared baking sheets, being sure to leave distance in between the cookies. Sprinkle with flakey salt.
  • Bake until deeply golden brown, about 15 minutes. Allow the cookies to rest on the baking sheets for 3 minutes. Move to a cooling rack to cool completely. Dip cookies in Creamy Honey Dip, then top with sprinkles.
  • Whisk together the yogurt, honey and spice in a small mixing bowl. Scrape into a serving ramekin. Drizzle with more honey. Serve alongside the cookies.

LEBKUCHEN (GERMAN CHRISTMAS HONEY COOKIES)

This recipe is from an OLD betty crocker cookbook and is my absolute favorite Christmas cookie. My MIL sends a batch every year and is one of my favorite things of the season. DO NOT overbake these or they will become so hard that you might need to have dental work done (lol) If the cookies are too hard she suggests placing them in an airtight container with an apple slice. I did not include chilling time in the recipe.

1/2 cup honey
1/2 cup molasses
3/4 cup brown sugar
1 egg
1 tablespoon lemon juice
1 teaspoon lemon rind, grated
2 3/4 cups flour, sifted
1/2 teaspoon baking soda
1 teaspoon cinnamon
1 teaspoon clove
1 teaspoon allspice
1 teaspoon nutmeg
1/3 cup citron, chopped
1/3 cup nuts, chopped
whole blanched almond
1 cup sugar
1/2 cup water
1/4 cup confectioners' sugar

Steps:

  • Mix honey and molasses and bring to a boil. Remove from heat and cool completely.
  • Stir in brown sugar, egg, lemon juice and lemon rind.
  • Sift together flour, baking soda and spices, then stir into the honey-molasses mix.
  • Mix in the citron and chopped nuts, place the dough in the refrigerator and chill overnight.
  • Roll out a small amount of dough at a time to 1/4 inch thick, keeping the rest in the fridge. You can either cut out oblong shapes about 1 1/2" x 2 1/2" or just cut out circle shapes about 2" in diameter.
  • Place on a GREASED baking sheet about 1" apart.
  • Place 3 almonds on top of each cookie in a flower shape, and place in a 400 deg oven for 10-12 min or until no imprint remains when touched lightly.
  • While cookies bake, make glaze by boiling the water and sugar to 230 degrees - until it just barely begins to thread.
  • Remove from heat and stir in confectioners sugar.
  • Brush the hot glaze lightly over the cookies (if it gets grainy reheat slightly with a little water to thin again).

Steps:

  • Combine the butter, honey, and brown sugar in a small saucepan, over medium heat, and cook, stirring frequently, until the mixture is bubbly and smooth, about 5 minutes. Stir in the almonds, salt, and vanilla and cook 1 minute more.
  • Remove the pan from the heat and stir in the flour until smooth. Let cool slightly. Refrigerate until the batter sets up, at least 1 hour.

  • Place half of the oats, and half of the triticale into a blender or food processor, and grind into a fine powder. Transfer to a medium bowl, and combine with the remaining oats, triticale, all-purpose flour, whole wheat flour, ginger, cinnamon, baking soda and salt. Set aside.
  • In a large bowl, mix together the fat substitute, honey, and sucrolose sweetener until smooth. Mix in the vanilla and orange zest. Add the dry ingredients, and mix until well blended. Finally, stir in the chopped candied ginger and cranberries. Drop by heaping teaspoonfuls onto the prepared baking sheets. Cookies should be spaced at least 2 inches apart.
  • Bake for 11 to 13 minutes in the preheated oven, or until the edges are golden. Cool on baking sheets for at least 5 minutes before removing to wire racks to cool completely.

In Ancient temples, they offered 'Honey Cakes' to the goddess. I Imagine that they were something like this! I adapted the rice flour for modern tastes, although you can try barley flour if you wish. Gluten-free! Sugar-free!

½ cup butter, softened
½ cup honey
2 eggs, slightly beaten
2 cups rice flour
¼ teaspoon baking powder
¼ teaspoon ground cardamom
2 teaspoons hemp seeds

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a baking sheet.
  • Beat butter and honey together in a bowl using an electric mixer until smooth and creamy; add eggs and mix well. Mix rice flour, baking powder, and cardamom into creamed butter mixture until dough is just mixed. Roll dough into small balls, about 1 heaping teaspoon each.
  • Pour hemp seeds into a bowl and press each dough ball into the seeds, coating half of each ball. Transfer dough balls to the baking sheet, gently pressing to 1/4-inch thickness.
  • Bake in the preheated oven until edges are golden, about 20 minutes.

These are a delicious, creamy, and chocolate-free version of a no-bake cookie. My husband is NOT a chocolate fan and has been so thrilled that I came up with this simple but yummy recipe for him!

½ cup butter
⅓ cup whole milk
½ cup white sugar
½ cup brown sugar
½ cup honey
1 pinch salt
1 cup crunchy peanut butter
3 ½ cups instant oatmeal, or more as needed

Steps:

  • Combine the butter, milk, white sugar, brown sugar, and honey in a large pot over medium-high heat; bring to a rapid boil for 90 seconds. Stir the salt and peanut butter into the mixture and remove immediately from the heat. Add the oatmeal quickly and mix to combine. Make sure the texture is thick with a little bit of sauce, but not too much sauce. If needed add extra oatmeal.
  • Drop rounded spoonfuls of the dough 2 inches apart onto aluminum foil or waxed paper; allow to sit 1 to 2 hours before serving.

FLAX SEED HONEY COOKIES

I came up with this recipe when I wanted my 17 month old daughter to start taking flax. They are simple tasting, chewy and fairly easy to make. I flatten them down twice during baking with a spatula; once after 5 minutes of baking and then about a minute before they come out of the oven. DO NOT USE FLAX OIL in this recipe or any baking recipe for that matter as it breaks down into a substance that is not safe for ingestion. Only use flax seeds for baking or flax meal. Prep time doesn't include chill time.

3/4 cup butter or 3/4 cup oil
3/4 cup brown sugar, packed
1 egg
1/2 cup honey (molasses can also be used)
2 cups whole wheat flour
1/2 cup white flour
1 teaspoon fine sea salt (reg salt can be used)
2 teaspoons baking soda
1 teaspoon cinnamon
1 teaspoon nutmeg
2 tablespoons flax seeds
1/3 cup oats

Steps:

  • Cream together butter (or oil) and brown sugar.
  • Stir in egg and honey and mix well.
  • Fold in your dry ingredients (including the flax) and mix.
  • Cover with a towel and chill for about 2 hours.
  • Preheat oven to 350°.
  • Make dough into small balls (you can roll in additional flax seeds if you want).
  • Place on lightly greased cookie sheet.
  • Bake for about 9 minutes.
  • Remove and let cool on flat surface or wire rack.
