CHOCOLATE CHIP OATMEAL COOKIES

3/4 cup Butter (softened)
1/2 cup Sugar
1/2 cup Brown Sugar
1 Egg
2 teaspoons Vanilla
1 1/4 cup Old-Fashioned Rolled Oats (ground in a food processor)
1 cup Flour
1/2 teaspoon Baking Powder
1/2 teaspoon Baking Soda
1/2 teaspoon Salt
1 cup Semisweet Chocolate Chunks or Chips
1 cup Semisweet Chocolate Shavings

Steps:

  • Preheat oven to 350 degrees.
  • In a large mixing bowl, cream the butter for 3 minutes to get it light and fluffy. Add the sugars and beat for 2 minutes longer to make it smooth and creamy.
  • Add egg. Using a spatula, scrape down the sides of the bowl often to ensure even mixing. Stir in the vanilla.
  • Place the oats in a and process until finely ground. This is what helps to create that chewy hearty texture.
  • Stir in ground oats, flour, baking powder, baking soda, and salt and make sure not to overmix. Since we want tender cookies, it is important to not overwork the flour (which can create gluten and make tough cookies). Mix just until combined.
  • Stir in chocolate chunks, chips, and shavings. Use both chunks and chips, if possible. By chopping up a block of chocolate or a chocolate bar, it creates ribbons of chocolate throughout the cookie. The chips give it structure and are meant to hold their shape while chocolate bars melt more easily.
  • If possible, chill the cookie dough for at least 30 minutes, preferably 24-48 hours.
  • Roll dough into balls or use small ice cream scoop or cookie scooper.
  • Bake for 12-15 minutes. Let cool on cookie sheet for several minutes before removing to wire racks to cool.

I'm always on the lookout for "natural" recipes that don't use refined sugars. My daughter and I made these last night and snuck some this morning. They are good right out of the oven, but taste even better the next day. They have a somewhat cakelike texture and are soft and moist. Enjoy!

2 1/2 cups whole wheat pastry flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon cinnamon
1 cup butter, softenend
1 1/4 cups honey
2 -3 eggs, beaten
1 teaspoon vanilla
1 ounce unsweetened chocolate, melted
1 1/2 cups rolled oats
1 cup chopped walnuts (or half of each, optional) (optional) or 1 cup shredded coconut (or half of each) (optional)
1 cup chocolate chips (or to taste!)

Steps:

  • Cream together butter and honey.
  • Add beaten eggs, vanilla, and melted chocolate. Mix well.
  • In a separate container, mix together all dry ingredients except the oatmeal, coconut, and nuts. (You may wish to sift the flour.).
  • Add the dry ingredients to the wet ingredients and mix well.
  • Add the coconut, nuts, and chocolate chips.
  • The mixture will probably be a bit more gooey than your standard cookie recipe -- don't worry.
  • Place dough in the fridge while you preheat the oven to 350 degrees.
  • Drop by spoonfuls onto a greased cookie sheet.
  • Bake for about 14 minutes.
  • Let cool and enjoy!

My grandmother would send a huge box of cookies and candies to us every Christmas when I was a child. She always included these cookies because they were my dad's favorite (mine too). I am allergic to walnuts so if I decide to add nuts I use almonds. Now my daughter and I enjoy making them together.

½ cup shortening
½ cup honey
2 tablespoons brown sugar
1 egg, beaten
½ teaspoon vanilla extract
1 ¼ cups all-purpose flour
½ teaspoon baking soda

½ cup chopped almonds

Steps:

  • Preheat oven to 300 degrees F (150 degrees C). Grease a baking sheet.

1 ¼ cups quick oats
1 cup white whole wheat flour
1 ½ teaspoons baking powder
1 ½ teaspoons ground cinnamon
½ teaspoon kosher salt
½ cup honey
¼ cup unsweetened applesauce
4 tablespoons unsalted butter, melted and cooled
1 large egg
1 teaspoon vanilla extract
⅓ cup dark chocolate chips
¼ cup chopped walnuts

Steps:

  • Whisk oats, flour, baking powder, cinnamon, and kosher salt together in a large bowl.
  • Combine honey, applesauce, butter, egg, and vanilla extract in a medium bowl. Whisk until blended. Pour into the bowl with the flour mixture; stir until just combined. Fold chocolate chips and walnuts into the batter.
  • Place batter in the refrigerator and let chill at least 30 minutes or up to 3 days.
  • When ready to bake, preheat the oven to 350 degrees F (175 degrees C) and place a rack in the center. Line a large, rimmed baking sheet with parchment paper or a silicone baking sheet.
  • Remove chilled dough from the refrigerator. Let sit for 5 to 10 minutes if very stiff.
