GRILLED BANANA, PEANUT BUTTER AND HONEY ON TOAST (DIABETIC)

Steps:
- NOTE - to split banana three ways, peel and gently place thumb on the tip of the banana and push down through the middle of the banana, it will split into three.
- Preheat griller/broiler to medium.
- Cut the banana in half crossways (creating 6 pieces).
- Place the bread slices on a baking tray, place under the griller/broiler and cook for 1 to 2 minutes or until one side is toasted.
- Spread the peanut butter on the untoasted side of each slice.
- Top with the banana (3 pieces per slice) and brush pieces with the honey.
- Place back under the griller/broiler for 2 minutes or until banana is lightly browned.
- Sprinkle with cinnamon and drizzle with extra honey if desired.
- Serve.

Steps:
- Simmer the honey, cinnamon and ground cardamom in a pan and swirl until golden. Add the bananas and toss.
- Beat the egg with the milk in a dish, add the bread and soak for 1 min, turning once.
- Fry in the butter over a medium heat for 4 mins, flip and cook for 4 mins more, until golden on both sides. Top with the bananas and the whipped cream, if you like.

I am an idiot. Last year I GLUED all my weight watchers recipes out of weight watchers magazines into an exercise book. Come this year when I am given not one but two recipe folders to hold snippets out of magazine I have to try and unglue them. The result is not successful. So I am putting them on recipezaar to print them out to organise them. I'm not sure what issue they are from but this is definitely from weight watchers magazine.

- Beat the egg in shallow bowl with milk and salt.
- Add 2 slices of Weight Watchers bread and turn to coat in eggy mixture.
- Heat a frying pan and coat with a low fat cooking spray and fry the bread for 2 minutes on the first side or until set and golden.
- Turn over and fry for another 1.5 - 2 minutes or until cooked.
- Place french toast on a warm plate and add pieces of 1 small banana between the two slices.
