8 medium honey crisp apples washed,peeled cored, & sliced thinly
2 1/2 Tbsp lemon juice
3/4 c granulated sugar
1/2 tsp ground nutmeg
1 1/2 tsp ground cinnamon
3 Tbsp all purpose flour
2 refrigerated pie crust,room temprature or use homemade
3 Tbsp evaported milk
1 1/2 Tbsp white decorator sugar crystals or use regular sugar

Steps:

  • 1. Preheat oven to 425 degrees F. Wash peel core and slice apples into thin slices. This is basice Apple Pie recipe. I did a bit of research to learn about these delicious tasting apples, and found they are considered an all purpose apple, so they worked great in my pie, and are great in cakes as well.
  • 2. Add apples to a large bowl. Then combine sugar and spices with flour in a separate bowl and stir to blend together.
  • 3. Pour sugar mixture over apples, and stir to blend in then sprinkle with the lemon juice and stir till thoroughly mixed together.
  • 4. Unroll pie crust and position into a 9 inch glass pie plate. Press down to conform to pie dish.
  • 5. Fill pie crust with sliced apple mixture. Then top with second crust. Tuck the edge of top crust to the bottom edge of the base crust then crump together.
  • 6. Now brush top of crust with evaporated milk or an egg wash. Make 5 or 6 slits in top of crust so steam can escape during cooking. Then sprinkle top with decorators sugar.
  • 7. Place pie plate on a shallow baking sheet to catch any potential drips during baking. Then place in preheated 425 degree oven and bake for 20 minutes. After 20 minutes, you may want to cover the edge of pie with aluminum foil to prevent over browning of the edges. Then continue baking for an additional 30 minutes, or until top crust is golden brown.
  • 8. Remove pie from oven and allow pie to cool for at least a few hours before cutting. Serve plain as is or with your favorite ice cream.

4 ½ cups peeled, cored and sliced apples
2 teaspoons lemon juice
2 tablespoons water
½ cup honey
1 teaspoon ground cinnamon
¾ cup brown sugar
¾ cup all-purpose flour
¾ cup rolled oats
4 tablespoons butter

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium casserole dish.
  • Evenly spread the apple slices in the prepared dish. In a small bowl, mix the lemon juice and water, and pour over the apples. Drizzle apples with honey, and sprinkle with cinnamon.
  • In a bowl, mix the brown sugar, flour, oats, and butter until the mixture resembles coarse crumbs. Sprinkle over the apples.
  • Bake 25 minutes in the preheated oven, until apples are tender and topping is lightly browned.

My husband and I decided to make a lifestyle change which included eliminating sugar, white flour, processed foods etc., from our diet. I created this delicious and simple recipe to satisfy an occasional sweet tooth, also this dessert is ideal to serve to children as it is only sweetened with honey. If using organic apples you may choose to leave the peels on, also depending on the sweetness of the apples you use you may choose to decrease the amount of honey. To make a virtually fat free version, you can also eliminate the butter in the topping, I have tried this both ways and find that it turns out almost the same. I hope you enjoy!

2 apples
1 teaspoon lemon juice
1 teaspoon cinnamon
2 tablespoons liquid honey
1/2 cup rolled oats
2 teaspoons butter
2 teaspoons liquid honey

  • Preheat oven to 350.
  • Peel, core, and chop apples into small bit size pieces and place in mixing bowl.
  • Add lemon juice, cinnamon, and honey and stir until apples are well coated.
  • Place mixture into a small glass loaf pan or baking dish lined with parchment paper.

6 medium-large honey crisp apples peeled and cut into 1/4 inch slices
2 tablespoon(s) butter
5 tablespoon(s) cold water divided
1/2 cup(s) packed light brown sugar
2 teaspoon(s) cinnamon
1/2 teaspoon(s) allspice
1/2 teaspoon(s) nutmeg
1/4 cup(s) raisins optional
2 tablespoon(s) cornstarch
CRUMB TOPPING
3/4 cup(s) flour
1 teaspoon(s) cinnamon
1/2 cup(s) light brown sugar
1/4 teaspoon(s) salt
6 tablespoon(s) butter
PIE CRUST
11/4 cup(s) flour
1/2 cup(s) plus 2 tb butter
1/4 teaspoon(s) salt
1/2 cup(s) ice water

Steps:

  • Peel apples and cut into 1/4 inch slices
  • Place in large kettle with butter and 2TBs of water. Cook until butter is melted.
  • Add sugar, Spices and raisins if desired. Stir well. Cook on medium heat covered for 10 minutes.
  • Mix 3 tablespoons of cold water with the 2 tablespoons of cornstarch.
  • Slowly add cornstarch mixture to apples and stir well until thickened. Remove from heat to cool. Make sure filling is cool before filling crust.
  • In a bowl mix all ingredients together for crumb topping. It will look slightly crumbly. Place in refrigerator.
  • Pie crust: I a food processor or blender. Add the flour and salt. Pulse together until combined.
  • Cut cold butter up. Add to flour mixture and pulse together.
  • Add a TB of cold ice water and pulse. Add another tablespoon of ice water and pulse again. Pulse until it forms a ball. Add 1 tablespoon of water at a time as needed. Usually, you only need 2 to 3 tablespoons.
  • Remove dough. Place on plastic wrap snd flatten with hand into a circle. Refrigerate until needed.
  • Roll on floured surface using wax paper to cover dough. Roll about a 12" circle. Lift and place in pie pan. Make sure edges are covered.
  • Preheat oven to 350°. Bake piecrust for 10 minutes at 350 degree's. Remove from oven and set aside.
  • Put the filling inside the crust and sprinkle with crumb mixture.
  • Bake at 350 degree's on sheet pan about 50-60 minutes or until crumb topping is nicely browned and apples are tender. Note:: if crumb topping browns to quickly. Lay a piece of foil over top of pie so that crumbs do not get overly browned.
  • Remove from oven to cool on rack.

3 large eggs
3/4 c skim milk
1/4 c heavy whipping cream
10 Tbsp butter
1 Tbsp vanilla extract
2/3 c all-purpose flour
2 c sugar
4 honey crisp apples, peeled & sliced
4 Tbsp brandy or brandy extract
1-2 Tbsp cinnamon
1 Tbsp cinnamon sugar, to taste
clover honey, to taste

Steps:

  • 1. Preheat oven to 350 for glass (& 375 for other pan types). Very important: Put the following ingredients into a blender OR use a large, very deep mixing bowl (if you don't, this recipe splatters all over---especially if using a hand-held mixer!): eggs, milk, whipping cream, 6 TB of the butter, vanilla, cinnamon, flour, & 1 1/4 cups of the sugar. Mix until smooth (blender or mixer) & set aside.
  • 2. Grease with butter or spray with olive oil a 10-inch pie plate or a 11 x 7 rectangular pan ( I use glass, & it works great & looks pretty!) Place it on a cookie sheet in the oven to heat.
  • 3. Meanwhile, melt 4 TB butter in a large skillet over medium-high heat. Add the sliced, peeled Honey Crisp apples, 3/4 cup sugar, & 4 TB brandy (or brandy extract; if you are concerned about using brandy, the liquor will cook out), stirring often & cooking for 5-7 minutes. The aroma is wonderful, & the apples will produce the best juice, which will be used later :) The sugar, butter, & brandy will glaze the apples beautifully.
  • 4. Remove the pie plate or rectangular pan from the oven carefully to a flat surface. Immediately pour half of the batter into it. Using a slotted spoon or fork (or both!), place the apple slices into the batter, working carefully to place them (to avoid splatters). As the slices sink into the batter, it's OK to add more right over the top, until most of the apple slices are sitting in or on the batter :) Save any leftover apple slices & the pan juices---you will use it later. Immediately pour the other half of the batter over the apple slices. Sprinkle the cinnamon sugar over the top, & feel free to add a few extra pats of butter, too, if you wish.
  • 5. Bake until the clafouti is golden & set in the center (insert a toothpick; it should emerge clean), about 35-40 minutes or so if using a glass pan at 350, or 25-30 minutes if using a metal pan, etc. It will resemble a moist bread pudding in texture. For high altitude baking (I live at about 6000 feet), there is no need to add extra flour, but if you wish, you can add 2-3 extra TB.
  • 6. Remember those wonderful remaining apple slices & that heavenly-smelling juice in the skillet? Place a few extra apple slices over the top of each piece, & drizzle the apple juice over that, followed by a drizzle of clover honey---& maybe a dollop of whipped cream! Enjoy :)
  • 7. This recipe is also very good made with peaches (fresh, canned, or frozen) or Granny Smith apples.

5 Granny Smith Apples, peeled,
cored and cut into 1 inch
cubes
1 bag of Craisens
1/3 cup Florida Crystals
1/4 cup orange juice
Crisp:
1 cup oatmeal
1/3 cup dark brown sugar
1 tsp. cinnamon
1/2 tsp. nutmeg
2 1/2 cups unbleached white
flour
3/4 cup cold Earth Balance
margarine, cut into cubes
1/2 cup Just-Like-Honey (available at www.suzannes-specialties.com) or Agave nectar

Steps:

  • Preheat the oven to 375 degrees F. Lighly oil a 11 x 7 baking dish. Combine all of the filling ingredients in a bowl. Spoon into the prepared baking dish. In a seperate bowl combine the oatmeal, brown sugar, cinnamon, nutmeg and flour. Cut in the Earth Balance until coarse crumbs form. Add the Just-Like-Honey and gently mix to just incorporate. Spread the topping over the apples. Bake for 30 - 40 minutes or until the topping is browned and the fruit bubbles. Serve warm with a scoop of vanilla soy ice cream.
