HOMINY SQUASH SKILLET

This original recipe from my mother captures the flavors of the South. I make it for family dinners and barbecues and even Thanksgiving.

Number Of Ingredients 11

4 cups sliced yellow summer squash
1 egg, lightly beaten
1 cup cornmeal
1/2 cup plus 1 tablespoon butter, divided
3/4 cup chopped onion
1/3 cup chopped sweet red pepper
1/3 cup chopped green pepper
1 can (15 ounces) white hominy, rinsed and drained
1 can (15 ounces) yellow hominy, rinsed and drained
3/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • In a large bowl, toss squash with egg. Place the cornmeal in a large resealable plastic bag. Add squash slices, a few at a time, and shake to coat. Let stand for 10 minutes., In a large skillet, melt 1/4 cup butter. Add half of the squash. Cook over medium heat until browned on both sides, about 5 minutes. Remove to paper towels to drain. Repeat with remaining squash and 1/4 cup butter; set aside and keep warm. , In another skillet, saute the onion and peppers in remaining butter until tender. Add the hominy, salt and pepper; cook and stir until heated through and golden brown. Stir in the reserved squash. Serve immediately.

My husband came up with this unique combination and the family fell in love. We use this as a filling for burritos. You can pre-make and freeze the burritos for an easy and instant meal. To make a breakfast-style burrito, substitute scrambled eggs for 1/2 of the ground beef or pork. Serve with warm flour tortillas.

2 pounds lean ground beef
2 green bell peppers, chopped
1 (29 ounce) can hominy, drained
2 (14.5 ounce) cans chopped tomatoes, undrained
2 cups medium salsa
2 teaspoons salt, or to taste
1 teaspoon ground cumin
ΒΌ teaspoon ground black pepper

Steps:

  • Cook and stir beef and green bell peppers in a large skillet over medium heat until beef is well browned and reduced to small pieces, about 10 minutes. Drain excess grease.
  • Stir hominy, tomatoes, salsa, salt, cumin, and pepper into the skillet. Reduce heat to medium-low and simmer hominy mixture until flavors combine, 10 to 15 minutes.

-3 Tablespoon butter
-1 teaspoon Cumin seed
-1 teaspoon+ Chili pepper flakes
-2 teaspoon dried oregano
-1 Red Onion Chopped
-1 Can gold or white hominy, drained
-1 Slice Ham chopped into 1/4"dice - a couple of slices of cooked bacon or fully cooked sausage would work too
-1 Roasted Red Pepper sliced (the olive bar at the grocery store is a cheap place to buy just one)
-Malt Vinegar - long splash or maybe 3+ Tablespoons
-also dash of hot sauce if you didn't get enough heat from the chili flakes in the first round
-Salt

Steps:

  • Place 10" skillet over low heat. Melt butter and add spices, ingredients 2 thru 4, more chili flakes if you want it hotter. As soon as butter is completely melted and spices are added toss in chopped onion and stir occasionally until onion is soft and brown but not completely cooked down. Put in hominy, meat, and roasted red pepper, turn up heat to medium and stir frequently for 10 minutes. When the mix starts to sizzle and the seeds start to pop, splash with malt vinegar, stir, scrape, salt to taste and serve.

Number Of Ingredients 6

2 lb ground meat
1-2 cans yellow corn
1-2 cans hominy
2 Tbsp chili powder
1 1/2 cups catsup
1 bag shredded cheese (about 2-4 cups worth)

Steps:

  • Brown and drain meat. Even though it says skillet in the name, use a large pot to make it in.
  • Then on medium heat, add your corn to taste using either 1 or 2 cans of corn. Add hominy the same way and mix all other ingredients to taste. Keep on med heat for about 5 min to make sure it all heats up.
  • Then spread cheese evenly on top, turn to low heat and cover and let simmer till cheese is melted.
