20 vanilla sandwich cookies (such as Oreo Golden Original Sandwich Cookies®)
¼ cup margarine
24 ounces cream cheese, softened
⅔ cup white sugar
2 tablespoons cornstarch
3 eggs
¾ cup mashed bananas
½ cup heavy whipping cream
1 tablespoon vanilla extract
2 cups heavy whipping cream
¼ cup white sugar, or to taste
1 tablespoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place cookies in a food processor; pulse until finely crushed. Add margarine; pulse until well blended. Press the crumb mixture into the bottom of a 10-inch springform pan. Refrigerate crust until ready to use.
  • Beat cream cheese in a large bowl with electric mixer at medium speed until creamy. Add 2/3 cup sugar and cornstarch; beat until blended. Add eggs, 1 at a time, beating well after each addition. Beat in bananas, 1/2 cup cream, and 1 tablespoon vanilla extract until well combined. Pour cream cheese mixture into the crust. Lay the pan on a baking sheet.
  • Bake in the preheated oven for 15 minutes. Reduce oven temperature to 200 degrees F (95 degrees C); continue baking until center is almost set, about 1 hour 15 minutes.
  • Loosen edges of cheesecake from the pan. Refrigerate, uncovered, until completely chilled, 6 hours to overnight.
  • Beat 2 cups cream in a chilled glass or metal bowl with an electric mixer until frothy. Add 1/4 cup sugar and 1 tablespoon vanilla extract gradually, continuing to beat until soft peaks form. Top cheesecake with whipped cream.

3 cups whole milk
1 cup white sugar
⅓ cup all-purpose flour
¼ teaspoon kosher salt
4 large egg yolks
1 tablespoon unsalted butter
1 ½ teaspoons vanilla extract
1 (11 ounce) box vanilla wafers
4 large bananas, sliced
1 cup heavy whipping cream
¼ cup powdered sugar

Steps:

  • Whisk milk, sugar, flour, and salt together in a medium saucepan until well combined. Place over medium-low heat and cook, whisking frequently, until the mixture comes to a low simmer and begins to thicken, 5 to 10 minutes.
  • Beat egg yolks in a small bowl until smooth. Add about 3/4 cup of the hot milk mixture and stir it quickly into the egg yolks. Whisk the egg yolk mixture back into the hot milk mixture and continue to cook, stirring constantly, until thick and creamy, about 5 minutes. Turn off heat, add butter and vanilla, and stir until smooth. Let cool slightly, about 10 minutes.
  • Set aside 6 vanilla wafers for the top. Arrange a layer of vanilla wafers in the bottom of a deep, 8-inch square or 2-quart baking dish. Top with a single layer of sliced bananas. Add another single layer of vanilla wafers, then spread 1/2 of the pudding mixture over top. Top with another layer of sliced bananas and the remaining vanilla wafers. Spread the remaining pudding over top, letting it seep into any open spaces. Cover lightly with plastic wrap and refrigerate 4 hours to overnight.
  • When ready to serve, beat heavy cream with an electric mixer until soft peaks form, incorporating powdered sugar about halfway through.
  • Remove banana pudding from the refrigerator. Spread whipped cream over top. Crush reserved vanilla wafers and sprinkle over the whipped cream. Serve immediately.

I am posting this recipe for any cook that may have been intimidated by homemade whipped cream as I have been. It couldn't be easier and your mixer does all the work for you. Just put all the ingredients in the bowl, turn it on and walk away. Couldn't be easier and the result is delicious. Any leftovers can be refrigerated for a few days to make a mousse or top your favorite dessert. I'm not exactly sure about the yield, about 4 cups whipped cream.

Steps:

  • 1. Add the heavy whipping cream, powdered sugar and vanilla extract to a large mixer bowl and whip on high speed until soft peaks form. If making the chocolate version, also add the cocoa.
  • 2. Add the mascarpone cheese to the whipped cream and whip until stiff peaks form. It will happen fairly quickly.
  • The mascarpone whipped cream will stay stable in the fridge for several days, even for a week, though it won't remain as fresh. If you are going to use it to frosting something, I would suggest using it right away so that it maintains its texture well. Once it's piped or spread, etc, it'll stay put and nice and fluffy.
  • *I prefer to use the mascarpone cheese when still chilled, but soft, so that it'll in corporate well, without chunks. The warmer mascarpone cheese is, the more likely it is to soften to the point that it won't firm up well again and can make too soft of a frosting. I like to take it out of the fridge about 15 minutes before using so that it softens a bit, but is still cool.

3 large eggs, beaten
1 1/2 c pecan halves
1 c brown sugar
3/4 c dark corn syrup
1/4 c semi sweet chocolate chips
1/4 c milk chocolate chips
3 Tbsp butter, melted
2 Tbsp flour
1 tsp vanilla
HOMEMADE WHIPPED CREAM
2 c heavy whipping cream
8 Tbsp powdered sugar
3 tsp vanilla

Steps:

  • 1. Preheat oven to 350°.
  • 2. While oven preheats, melt butter in a small sauce pan on the stove or in the microwave. While butter is melting, add beaten eggs to a medium sized bowl.
  • 3. Stir in brown sugar, flour, vanilla and corn syrup until combined. Add butter when just melted.
  • 4. Mix in pecans and chocolate chips. Stir all together. Pour mixture into unbaked pie shell.
  • 5. Place a sheet tray or a piece of foil on bottom rack below where the pie will sit to bake. Place pie on top rack in the center of the oven and bake for 50-60 minutes.
  • 6. Shield your pie crust for first 30 minutes or so of baking OR shield your pie crust for at least the second half of baking to avoid crust over browning.
  • 7. Let pie cool AT LEAST an hour before cutting. When ready to eat, serve with a HUGE dollop of homemade whipped cream. ENJOY!
  • 8. ~~HOMEMADE WHIPPED CREAM~~ Place a metal or glass bowl in the freezer at least 15 minutes prior to making. With a mixer, beat cream until it begins to thicken. Add powdered sugar. Beat until stiff peaks form. Fold in vanilla. ***TIP*** Using powder sugar instead of regular sugar will keep your cream from separating.

1 1/2 cups graham cracker crumbs
1/2 stick butter, melted and cooled
1/4 cup granulated sugar
Filling:
1/2 quart fresh strawberries, stems removed and hulled
1 14-ounce can sweetened condensed milk
4 large egg yolks
2 tablespoons orange juice (fresh-squeezed or store bought)
Topping:
2 cups cold whipping cream
3 tablespoons granulated sugar
1/4 teaspoon vanilla extract

  • Preheat oven to 375°F. Mix graham cracker crumbs, melted butter, and sugar until well blended. Press into a 9-inch pie plate. Bake at 375°F for 10 to 15 minutes, until lightly browned. Cool completely. Lower oven temperature to 325°F. Place strawberries and orange juice in a blender or food processor and blend until mixture reaches a smooth consistency. Run mixture through a sieve into a 1/2 cup measure, scraping the seeds from the bottom to allow the juice to run through. In a medium bowl, mix the condensed milk, egg yolks, and strawberry mixture together until combined. Pour mixture into prepared graham-cracker crust. Place in oven and bake at 325°F for 18 to 20 minutes, until set but center still jiggles when pie is jostled. Allow to cool completely. Meanwhile, chill a bowl of a stand-mixer by either placing in the freezer or filling with ice water for a few minutes. Attach whisk attachment to mixer. Clean out bowl and add 2 cups chilled whipping cream, 3 tablespoon sugar, and vanilla. Beat mixture at high speed until it thickens and soft peaks form, about 1 to 3 minutes. Using a large spreader, spread whipped cream onto the top of the cooled pie to desired thickness.

Steps:

  • BEFORE STARTING: I think it is best to chill your mixing bowl in the freezer, as well as your whisk attachment. The colder everything is to start out, the better. I usually leave mine in for a few hours or overnight.
  • Pour the heavy cream into the mixing bowl, and begin whisking on high. Add the vanilla (you can add a little more if you'd like, to ensure you really taste vanilla), then gradually add the powdered sugar. Stop your mixer every once in a while to see if it's sweet enough. Start with small amounts, you can always add more, but you can't take it away if there's too much.
  • After you have figured out how sweet you want it, whisk on high until your cream starts to thicken. I don't know for sure how long I usually whisk it, but I know it's at least a couple minutes. Keep an eye on it, because you can overmix. Overmixing will cause a strange, almost sticky consistency.
  • After whipping it up nice and fluffy, store it in the fridge. It will keep for a few days, and it makes a good amount, so you have some time to finish it or bake more things to put it on. :)
