BELGIAN WAFFLES WITH HOMEMADE CINNAMON SUGAR BUTTER AND SAUTEED CIDER APPLES

- For the waffles: Preheat your waffle iron and brush the grate with butter. Whisk together the flour, baking powder, baking soda, sugar and salt in a medium bowl.
- Whisk together the eggs, melted butter and buttermilk in a small bowl. Add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix. Set the batter aside at room temperature for 20 minutes. Cook the waffles according the manufacturer's directions until golden brown. Remove to a baking rack. Cut or tear each waffle into quarters. Top each quarter with some of the cinnamon sugar butter and sauteed apples.
- For the sauteed apples: Combine the apple cider, light brown sugar, and cinnamon sticks in a large saute pan over high heat and boil until reduced by half and thickened to a syrup.
- Remove the cinnamon stick, whisk in the butter and add the apples and cook until soft and caramelized. Set aside.
- For the homemade cinnamon sugar butter: Combine the heavy cream and salt in a stand mixer fitted with the whisk attachment and beat until it becomes butter. Combine the sugar and cinnamon in a small bowl and fold into the butter. Scrape into a bowl. (Yield: 1 cup)

- Beat the egg whites and cream of tartar with a hand mixer until stiff peaks appear.
- In a bowl, whisk together the egg yolks, buttermilk, vanilla and 2 tablespoons melted butter.
- Into a large bowl stir together the flour, brown sugar, salt, baking soda, baking powder and cinnamon.
- Combine with the wet ingredients and mix until incorporated. Fold the whites into the batter, gently.
- Grease the waffle iron with a small amount of melted butter and heat the waffle iron according to the manufacturer's instructions.
- Ladle batter onto the waffle iron and cook until golden brown, about 3 1/2 to 5 minutes. Repeat with the remaining batter.
- For the strawberry sauce:
- In a small pot over medium heat, combine the strawberries, sugar, water, lemon zest, lemon juice and cornstarch. Bring to a simmer and whisk gently until mixture thickens slightly.
- Serve waffles with powdered sugar and strawberry sauce.

- Grease waffle iron with a small amount of melted butter, and heat. In a large bowl, sift together the flour, sugar, baking soda, baking powder, cinnamon, and salt.
- In a separate bowl, whisk together egg yolks, buttermilk, melted butter, and vanilla-bean scrapings. Pour into dry mixture, and combine.
- In a medium bowl, beat egg whites until stiff but not dry. Fold whites into batter.
- Ladle about 1/3 cup batter onto each section of the waffle grid; spread batter almost to the edges. Close lid, and bake 3 to 5 minutes, until no steam emerges from waffle iron.
- Transfer cooked waffles to a baking sheet; place in an oven set to low heat, about 200 degrees, while using remaining batter.

- Preheat a waffle iron according to manufacturer's instructions.
- Whisk eggs together in a large bowl until fluffy. Mix in 2 cups milk, vegetable oil, and vanilla extract until combined.
- Combine 2 cups flour, sugar, cinnamon, nutmeg, baking powder, and salt in a separate bowl. Slowly pour flour mixture into egg mixture, stirring as you pour. These delicious All-Bran Waffles are a healthy alternative to ALL-BRAN muffins. I started making them in 1975, and still have the original recipe pamphlet from the Kellog Co. Instead of the usual butter and syrup on the top, I only use my homemade strawberry, rhubarb freezer jam. Naturally I freeze quite a few to enjoy at another time. - Gather all the cooking ingredients. Separate the eggs, and beat the yolks slightly. Add the milk and ALL-BRAN to the egg yolks. Let this soak while you sift together all the dry ingredients.
- Add the sifted dry ingredients into the liquid mixture. Beat the egg whites till stiff.
- Fold in the soft butter, then gently fold in the beaten egg whites. You might have to add a little milk, if the batter is to thick. to get the rig Start heating the waffle maker. Bake in the hot waffle maker until no steam is visible. This recipe makes 6-8 waffles.

BLUEBERRY WAFFLES AND HOMEMADE BLUEBERRY SAUCE

- SAUCE: In a saucepan over medium heat, combine the blueberries, ¼ cup water, orange juice, and sugar. Stir gently and bring to a boil.
- In a cup or small bowl, mix together the cornstarch and ¼ cup cold water. Gently stir the cornstarch mixture into the blueberries. Simmer gently until thick enough to coat the back of the metal spoon. This should take 1 to 3 minutes.
- Remove from heat and stir in almond extract and cinnamon. Thin sauce with water if it is too thick for your liking. Serve over hot waffles.
